A 2006–2009 közötti időszakban a tej fogyasztói ára Magyarországon volt a legmagasabb. A fogyasztói árak közötti árkülönbségek mögött számos tényező húzódik meg: az áfatartalom, a kereskedelmi láncok árpolitikája, a feldolgozói ár és végül a termelőknek fizetett felvásárlási ár. The use of lactic acid bacteria (LAB) as bioprotective cultures can be an alternative to chemical preservatives or antibiotic to prevent fungal spoilage in dairy products. Among antifungal LAB, Lactobacillus harbinensis K.V9.3.1Np showed a remarkable antifungal activity for the bioprotection of fermented milk without modifying their organoleptic properties (Delavenne et al., 2015). Aflatoxin M1 contamination in grated parmesan cheese marketed in Rio de Janeiro - Brazil BABT

This study aimed to determine the occurrence of AFM1 contamination in the samples of grated parmesan cheese marketed in the Metropolitan Region of Rio de Janeiro -Brazil. Thirty samples representing 10 major brands marketed in the region were analyzed by High Performance Liquid Chromatography with fluorescence detection (HPLC-FLD) after purification with immunoaffinity column. The method showed recovery values within the range of 70-90%, with RSD lower than 15% and limits of detection and quantification below the maximum level allowed by the European Commission for the presence of AFM1 in cheeses. ABSTRACT The development of different products that confer health benefits on the population is a challenge for those who work with food. The aim of this study was to elaborate two formulations of kefir cheese (C1 and C2) and whey (W1, W2), and to evaluate their in situ antibacterial activity against microorganisms of interest in food. Pasteurized milk, powdered milk and kefir grains were used in preparing the products and their percentage composition was determined. This report documents data and other information gathered from a survey of urban households in Beijing, Shanghai, and Guangzhou, China. The survey was conducted as part of a research project aimed at understanding the evolution of dairy markets in Asia and the implications for dairy product trade. The survey data provide insights into the purchasing behavior and attitudes of urban consumers in China with respect to dairy products. The report describes the survey and collection process, summarizes selected data from the survey, and provides anecdotal information about the development of dairy production, processing, and product marketing in China.

Abstract Real-time PCR (qPCR) has been used for rapid identification of Salmonella Typhimurium and Staphylococcus aureus in dairy foods, but is unable to differentiate viable and unviable pathogens. Ethidium bromide monoazide (EMA), a DNA-intercalating agent, can detect only viable cells because selectively enter cells considered unviable and bind to their DNA, inhibiting its amplification during qPCR. The objective was to establish a protocol for detection of viable Salmonella Typhimurium and S. aureus, experimentally inoculated in coalho cheese, by the use of EMA combined with qPCR. The advancement of investor-owned firms (IOF), mainly multinational ones, and the reduced participation of cooperatives in dairy production and processing in Brazil along the past few decades has been calling the attention of researchers. With the participation of 59 productive units, distributed over 9 states of the Brazilian territory, the objective of this work was to analyze the efficiency of the cooperatives in the dairy industry using the Data Envelopment Analysis (DEA). The results show that, in general, the cooperatives presented better performance in terms of scale rather than in terms of productive efficiency. This stimulates sectorial politicies that promote improvements in the use of the resources to obtain greater efficiency in milk processing.

Enterotoxigenicity of Staphylococcus aureus isolated from traditional and commercial dairy products marketed in Iran BJM

This study was conducted to determine the prevalence rate, enterotoxigenecity, and antimicrobial resistance of S. aureus isolated from dairy products in Iran. From September 2010 to July 2011, a total of 347 samples from various dairy products, traditional and commercial, were collected from randomly selected retail stores. Overall, 20 samples (5.8%) were found to be contaminated with S. aureus. The highest prevalence of S. aureus was found in traditional cheese (11.1%), followed by traditional ice-cream (5.9%), cream (5.6%), and butter (5.3%). The ability to synthesize classical staphylococcal enterotoxins (SEA-E) was determined in 7 of 20 (35%) isolates by using ELISA. ABSTRACT Cheeses are dairy products prepared from coagulated milk, and which, under Brazilian legislation, can be classified according to their fat and moisture content. Cheeses such as Minas Frescal and Ricotta have a high moisture content and are highly perishable. As such, chemical changes can occur and interfere with the shelf life of these products. Abstract Dulce de leche is an evaporated dairy product that can be manufactured in different types of pots or pans. The manufacturing endpoint for dulce de leche can be determined by measuring the soluble solids content. We investigated the evaporation rates and the evaporative capacity of atmospheric pressure evaporators (pans) during the manufacture of dulce de leche. During manufacturing, four different formulations were subjected to soluble solids content determination by refractometry. Increasing demand for dairy products in Malaysia is driving government initiatives and structural change in the domestic dairy industry in order to increase competitiveness and self-sufficiency. This study endeavours to investigate the drivers of increasing dairy demand by examining the factors influencing Malaysian consumers‟ consumption and perceptions of various types of dairy products. A survey of 435 respondents was conducted and the data were analysed using logit models. Family farming in agroecological transition: a look at the marketing of milk and dairy products in municipalities of the Zona da Mata of Minas Gerais State, Brazil Ciência Rural

ABSTRACT: This study evaluated the limits and possibilities of the marketing of milk and dairy products in the context of family farming. We used semi-structured interviews, document analysis, and content analysis as methodological options. We conducted 12 interviews with family farmers who had milk production and the processing and marketing of this raw material in common. Despite changes and reformulations, federal and state legislation still does not consider small family farmers. Even when referring to these protagonists, the legislation address production in a technical manner that is inadequate for the reality of most family farmers, thus favouring dairy industries.

Several reasons justify the expectation of increasingly price elastic demand for dairy products. Using weekly scanner data, we find support for this hypotheses, but with wide variation in elasticity estimates across model specifications. The results demonstrate the need for more routine specification testing before basing recommendations on potentially fragile inferences.

Bacillus cereusis an ubiquitous, spore-forming bacteria that can survive pasteurization and the majority of the heating processes used in the dairy industry. Besides, it is a pathogen responsible for different types of food poisoning. One type of foodborne disease caused by B.cereusis the diarrheal syndrome, which is caused by the ingestion of vegetative cells producing toxins in the small intestine. One virulence factor for the diarrheal syndrome is the toxin hemolysin BL (HBL), a three-component protein formed by the L1, L2 and B components. ABSTRACT The current pricing process of raw milk in Brazil discourages producers from improving milk composition, which affects both yield and quality of dairy products. Furthermore, small and medium-sized dairies face great difficulties when it comes to planning production. Thus, a linear programming model was developed to price the raw milk and determine the optimal mix (combination of quantities) of dairy products that maximizes total contribution margin (TCM) under daily scenarios of high (January) and low (July) raw milk supplies (summer and winter, respectively) by comparing optimal solutions with actual results. Mathematical modeling of microbial growth in milk Ciênc. Tecnol. Aliment.

A mathematical model to predict microbial growth in milk was developed and analyzed. The model consists of a system of two differential equations of first order. The equations are based on physical hypotheses of population growth. The model was applied to five different sets of data of microbial growth in dairy products selected from Combase, which is the most important database in the area with thousands of datasets from around the world, and the results showed a good fit. In addition, the model provides equations for the evaluation of the maximum specific growth rate and the duration of the lag phase which may provide useful information about microbial growth.
