A magyar, német, lengyel és szlovák tejtermékek fázisárainak összehasonlítása AgEcon
Aliczki, Katalin; Mandi-Nagy, Daniel; Nyars, Levente; Papp, Gergely.

Action mechanisms involved in the bioprotective effect of Lactobacillus harbinensis K.V9.3.1.Np against Yarrowia lipolytica in fermented milk ArchiMer
Mieszkin, Sophie; Hymery, Nolwenn; Debaets, Stella; Coton, Emmanuel; Le Blay, Gwenaelle; Valence, Florence; Mounier, Jerome.
The use of lactic acid bacteria (LAB) as bioprotective cultures can be an alternative to chemical preservatives or antibiotic to prevent fungal spoilage in dairy products. Among antifungal LAB, Lactobacillus harbinensis K.V9.3.1Np showed a remarkable antifungal activity for the bioprotection of fermented milk without modifying their organoleptic properties (Delavenne et al., 2015). The aim of the present study was to elucidate the action mechanism of this bioprotective strain against the spoilage yeast Yarrowia lipolytica. To do so, yeast viability, membrane potential, intracellular pH (pHi) and reactive oxygen species (ROS) production were assessed using flow cytometry analyses after 3, 6 and 10 days incubation in cell-free supernatants. The tested...

Abstract Real-time PCR (qPCR) has been used for rapid identification of Salmonella Typhimurium and Staphylococcus aureus in dairy foods, but is unable to differentiate viable and unviable pathogens. Ethidium bromide monoazide (EMA), a DNA-intercalating agent, can detect only viable cells because selectively enter cells considered unviable and bind to their DNA, inhibiting its amplification during qPCR. The objective was to establish a protocol for detection of viable Salmonella Typhimurium and S. aureus, experimentally inoculated in coalho cheese, by the use of EMA combined with qPCR. The protocol was effective for the identification of viable Salmonella Typhimurium in coalho cheese but not for the S. aureus cells. Concentrations of viable Salmonella...

Easy DNA extraction method and optimisation of PCR-temporal temperature gel electrophoresis to identify the predominant high and low GC-content bacteria from dairy products Inra
Parayre-Breton, S.; Falentin, H.; Madec, M.N.; Sivieri, K.; Le Dizes, A.S; Sohier, D.; Lortal, S..
Molecular fingerprinting of bacterial ecosystems has recently increased in food microbiology. The aim of this work was to develop a rapid and easy method to extract DNA from various cheeses, and to optimize the separation of low and high GC-content bacteria by PCR-Temporal Temperature Gel Electrophoresis (PCR-TTGE).Seventy six strains belonging to 50 of the most frequently encountered bacterial species in dairy products were used to construct a database. Specific PCR-TTGE ladders containing 17 species forming a regular scale were created. Amplicons of these species were sequenced and the GCcontent plotted against the migration distance: the correlation coefficients obtained were r2=0.97 and r2=0.99, respectively for high and low GCcontents. The extraction...

EFICIÊNCIA TÉCNICA E DE ESCALA DAS COOPERATIVAS NO SETOR LÁCTEO AgEcon
Ferreira, Marco Aurelio Marques; Jose Braga, Marcelo; Lima, Joao Eustaquio de.
The advancement of investor-owned firms (IOF), mainly multinational ones, and the reduced participation of cooperatives in dairy production and processing in Brazil along the past few decades has been calling the attention of researchers. With the participation of 59 productive units, distributed over 9 states of the Brazilian territory, the objective of this work was to analyze the efficiency of the cooperatives in the dairy industry using the Data Envelopment Analysis (DEA). The results show that, in general, the cooperatives presented better performance in terms of scale rather than in terms of productive efficiency. This stimulates sectorial politicies that promote improvements in the use of the resources to obtain greater efficiency in milk processing.

Evaluation of the physical and chemical parameters of Minas Frescal and Ricotta cheese marketed in Fortaleza, Ceará Rev. Ciênc. Agron.
Andrade,Ana Paula Colares de; Quirino,Michelle Fontinele; Silva,Talita Lima e; Carvalho,Juliane Doering Gasparin.
ABSTRACT Cheeses are dairy products prepared from coagulated milk, and which, under Brazilian legislation, can be classified according to their fat and moisture content. Cheeses such as Minas Frescal and Ricotta have a high moisture content and are highly perishable. As such, chemical changes can occur and interfere with the shelf life of these products. In order to evaluate the physical and chemical parameters of Minas Frescal and Ricotta cheeses marketed in Fortaleza, Ceará, 10 samples of the products were evaluated. The variables of weight, temperature, titratable acidity, pH, moisture and fat were measured in triplicate. It was checked that the results conformed to current Brazilian legislation, and it was found that 100% of the samples had high...

Evolution of soluble solid content and evaporation rate curves during the manufacture of dulce de leche (dl) Ciênc. Tecnol. Aliment.
FRANCISQUINI,Júlia d’Almeida; PEREIRA,João Pablo Fortes; PINTO,Michele da Silva; CARVALHO,Antônio Fernandes; PERRONE,Ítalo Tuler; SILVA,Paulo Henrique da Fonseca da.
Abstract Dulce de leche is an evaporated dairy product that can be manufactured in different types of pots or pans. The manufacturing endpoint for dulce de leche can be determined by measuring the soluble solids content. We investigated the evaporation rates and the evaporative capacity of atmospheric pressure evaporators (pans) during the manufacture of dulce de leche. During manufacturing, four different formulations were subjected to soluble solids content determination by refractometry. In addition, the mass balance was used to determine the yield and evaporation rate. A low coefficient of variation and amplitude was found for soluble solids content, indicating standardization and uniformity during fabrication. We also observed a gradual increase in...

Family farming in agroecological transition: a look at the marketing of milk and dairy products in municipalities of the Zona da Mata of Minas Gerais State, Brazil Ciência Rural
Santos,Priscila Alves dos; Bevilacqua,Paula Dias.
ABSTRACT: This study evaluated the limits and possibilities of the marketing of milk and dairy products in the context of family farming. We used semi-structured interviews, document analysis, and content analysis as methodological options. We conducted 12 interviews with family farmers who had milk production and the processing and marketing of this raw material in common. Despite changes and reformulations, federal and state legislation still does not consider small family farmers. Even when referring to these protagonists, the legislation address production in a technical manner that is inadequate for the reality of most family farmers, thus favouring dairy industries.

FRAGILITY IN DAIRY PRODUCT DEMAND ANALYSIS AgEcon
Maynard, Leigh J.; Liu, Deyu.
Several reasons justify the expectation of increasingly price elastic demand for dairy products. Using weekly scanner data, we find support for this hypotheses, but with wide variation in elasticity estimates across model specifications. The results demonstrate the need for more routine specification testing before basing recommendations on potentially fragile inferences.

Gene detection and toxin production evaluation of hemolysin BL of Bacillus cereus isolated from milk and dairy products marketed in Brazil BJM
Reis,Andre L.S.; Montanhini,Maike T.M.; Bittencourt,Juliana V.M.; Destro,Maria T.; Bersot,Luciano S..
Bacillus cereusis an ubiquitous, spore-forming bacteria that can survive pasteurization and the majority of the heating processes used in the dairy industry. Besides, it is a pathogen responsible for different types of food poisoning. One type of foodborne disease caused by B.cereusis the diarrheal syndrome, which is caused by the ingestion of vegetative cells producing toxins in the small intestine. One virulence factor for the diarrheal syndrome is the toxin hemolysin BL (HBL), a three-component protein formed by the L1, L2 and B components. In order to evaluate the presence of diarrheal strains isolated from milk and dairy products, 63 B. cereus isolates were obtained from 260 samples of UHT milk, pasteurized milk and powdered milk, sold in commercial...

How can dairies maximize their profits and properly remunerate their dairy farmers? Scientia Agricola
Meneghini,Rafael Cedric Möller; Cassoli,Laerte Dagher; Martines Filho,João Gomes; Xavier,Carlos Eduardo Osório; Santos,Marcos Veiga dos; Caixeta Filho,José Vicente; Natel,Andressa Santanna; Machado,Paulo Fernando.
ABSTRACT The current pricing process of raw milk in Brazil discourages producers from improving milk composition, which affects both yield and quality of dairy products. Furthermore, small and medium-sized dairies face great difficulties when it comes to planning production. Thus, a linear programming model was developed to price the raw milk and determine the optimal mix (combination of quantities) of dairy products that maximizes total contribution margin (TCM) under daily scenarios of high (January) and low (July) raw milk supplies (summer and winter, respectively) by comparing optimal solutions with actual results. The TCM of optimal and actual mixes were higher in January due to the greater availability of raw material. Packaging was a limiting factor...

International Trade In Dairy Products: Processors Market Power AgEcon
Seyoum, Emayenesh; Goddard, Ellen W.; MacLaren, Donald; Griffith, Garry R..
In the past two decades there has been a considerable amount of research conducted into the international price and trade effects of government intervention in the dairy industries of several countries. Recently, the conclusions of those studies have been questioned owing to the rising concentration in the processor sector. Since processors are increasingly multinational in nature and a few of them are operating around the globe, there is a possibility that the processors will influence both the farm and retail prices through their having market power.
