This paper shows that general trust in the organic label as well as perceived positive health effects of eating organic products have positive causal effects on actual organic consumption. The data used is panel data for 830 households reporting actual purchases together with responding to a comprehensive concerning questionnaire attitudes in 2002 and 2007. The paper also shows that perceived positive environmental effects and perceived better animal welfare related to organic production have no significant effect on actual behaviour, whereas concern for artificial additives and low price sensitivity increases the organic budget share. Surprisingly enough, households who worry about GMO or pesticides do not seem to have a higher propensity to purchase... |

Many papers on the taxonomy of fossil crustaceans are often based upon poorly preserved material and/or specimens that have been insufficiently prepared. The purpose of the present note is to outline some preparation methods that are applied in our (J.S.H. Collins and S.L.J.) ongoing studies of anomuran and brachyuran decapods from the Middle Danian limestones at Fakse quarry (Denmark), which have greatly enhanced the quality of our material. The techniques briefly outlined here involve: 1 – staining method; 2 – water blasting (as a cleaning tool in preparation of fossils); and 3 – negative preparation (with acid). Some of these techniques will have wide applications in other fields of paleontological research. |

During the past few years, organic dairy farming has grown dramatically in Denmark. Consequently, an increasing number of people are encountering this method of production for the first time. Amongst these, many veterinarians have suddenly had to deal with organic herds in their home district, and, meeting examples of poor animal welfare, they have recently started to express some concerns. Against this background, a so-called “Synthesis of Knowledge” project was initiated to examine the health and welfare of dairy cattle and the use of medication in the transition to organic production. The aim of the project was to investigate associated problems from the point of view of the dairy herd. Based on qualitative research interviews with vets and... |

Marginal willingness to pay for eggs carrying labels indicating different productions methods is estimated using Danish purchase data on individual level. Among other things the labels indicate environmental features and different levels of animal welfare for the hens that produce the eggs. Results show that consumers are generally willing to pay for labels indicating animal friendly production methods. It also appears that consumers living in urban areas are willing to pay more for animal welfare than people in rural areas and that people who perceive the level of animal welfare in organic eggs as higher are willing to pay more not only for organic eggs but also for other labels indicating increased animal welfare. The age of the main buyer has no... |

Almost two out of three organic consumers state that mitigating climate change is an important reason for buying organic products. This finding may constitute a challenge for the organic market, considering the conflicting scientific evidence that underlies the belief that organic production is better for the climate than conventional production. However, several studies indicate that consumers of organic food in Denmark and other northern European countries purchase less meat than other consumers, and meat production has been identified as a major contributor to greenhouse gas emissions. Inspired by these findings, we ask whether anthropogenic climate change could be mitigated by patterns of organic food consumption. Using unique Danish data on stated... |

This paper presents the findings of an assessment aimed to evaluate, in terms of cost and energy consumption, the introduction of living mulches in different organic vegetable systems producing cauliflower. The study was carried out in three European countries (IT, SLO and DK) in the frame of the InterVeg project (Core Organic II). The achievements demonstrated that, in economic terms, farmers’ choice of a specific technique, like living mulch instead of sole cropping, can be influenced by two key elements: human labor and fossil fuel consumption. Different organic systems have a different proportion in using the two inputs depending on the specific farm strategy. |

In warm-blooded animals such as humans and pigs the intestinal microbial composition is dependent on the type of ingested diet. It is known that it also influences the immune system and prevent colonization of pathogenic bacteria. The question is if the gut microbiota has the same impact in lower vertebrates such as fish? To examine this rainbow trout fry were fed two different diets of either a marine or vegetable origin. At a size of about four gram a subset of the fish was bath challenged by Yersinia ruckeri serotype O1 and intestines were then sampled 5 days post challenge from challenged fish (n = 40) and non-challenged control fish (n = 40). Subsequent metagenomic examination based on the 16S rDNA gene was then performed using the Illumina HiSeq... |

The introduction and communication of new technologies in the food industries has given rise in the past to some scientific uncertainty that hampers informed choice. Here we draw upon the case of Genetically Modified (GM) technology and, in particular, on different types of GM food, to investigate consumers’ behavioural reactions to GM food as well as their willingness to pay for avoiding GM food in three EU countries, Denmark, GB and Spain in 2007. Our unique contribution lies in that our empirical analysis concerns two food products containing different characteristics. In particular, we compare consumers’ reactions to cornflakes (to represent a processed food) and tomatoes (to represent a 'fresh' food) juxtaposed with GM and conventionally produced... |

The health of weaned pigs should be described using several information sources to get an overall assessment of the health state in the herd. In this case study four organic pig herds each fattening between 800 and 3500 pigs per year provided data from clinical examination of a sample of animals, pathological findings at slaughter, post weaning mortality and medicine usage in the herd. Clinical symptoms were present in 8 – 18 % of the pigs, and 2 – 6 % of the pigs showed more serious symptoms of disease. At slaughter 10 – 17 % of the pigs got remarks for pathological lesions, primarily liver spots, abscesses and chronic pericarditis. The post weaning mortality varied between herds, while the usage of medicine was rather low in the herds. The herd health... |

Now, more than ever, there are serious health concerns for the growing prevalence of obese and overweight children. Schools are well suited setting for the learning of children and young people, and this influence has the potential to play an important role in preventing children from becoming obese and overweight. The school at the same time is the focus of public organic food supply strategies as well as the focus of innovation strategies that can increase the availability of healthier food options. These strategies in some cases go hand in hand. The purpose of this research was to examine whether organic food intervention strategies in school meal system could support the development of healthier eating patterns among children and adolescents. An... |

Trust’ is considered an important driving factor for the development of ‘green growth’ strategies. An understanding of how ‘trust’ is created and maintained is crucial for those strategies. However, b& m research does neither offer consistent nor conclusive definitions of ‘trust’. Based on the review, a tentative suggestion is that the development of promising practices for the creation and maintenance of ‘trust’ is to be related to the organic complexities located in Denmark that characterize the transformation of the social space of organic agribusiness. Organic complexities are amongst others characterized by the highly fragmented meaning and current restructuring of the content of ‘organic’, diverse sale challenges, interdependences in the... |

Abstract: Because of its high saturated fatty acid (FA) content milk fat is considered hypercholesterolemic (Ulbricht and Southgate, 1991). Intake of unsaturated FA (UFA) reduces the plasma cholesterol concentrations (Fernandez and West, 2005). Especially conjugated linoleic acids (CLA) have shown positive effects on cardiovascular diseases (Valeille et al., 2004), prevention of cancer (Ip et al., 1994) and obesity (Park et al., 1997). The aim of our project was to investigate how grazing could enhance the content of these beneficiary FA in milk from Holstein and Jersey cows. For both types of cow races we observed no direct effect of increased grazing in the diet on the short chain FA (SCFA) content in milk, implying that the de novo synthesis of these... |
