A UTILIZAÇÃO DO CONTROLE DE QUALIDADE DE ACORDO COM O SISTEMA DE ANÁLISE DE PERIGOS E PONTOS CRÍTICOS DE CONTROLE (APPCC) NA INDÚSTRIA PESQUEIRA BRASILEIRA: O CASO DA NETUNO PESCADOS NO ESTADO DE PERNAMBUCO AgEcon
Carlini Junior, Reginaldo Jose; Barreto, Claudemir Farias; Lisboa Filho, Waldeck.
Consuming market increasingly requires that companies assure higher quality products. These companies in turn are in search of solutions to meet such requirements, and thus consolidate their image and credibility with consumers. Such initiatives lead to gains and make these companies more competitive so as to figure prominently in the markets they operate. This article aims to understand how Netuno Pescados uses HACCP - HAZARD ANALYSIS AND CRITICAL CONTROL POINT system, in order to assure a high safety level to products delivered to markets it serves. This system is based on the principle that biological, chemical and physical dangers may exist in several points of the industry. However, preventive measures can be taken to control them and remove potential...

INTEGRAÇÃO DAS ATIVIDADES PRODUTIVAS EM UMA AGROINDÚSTRIA DE PEIXE: UMA APLICAÇÃO DA TEORIA DE FILIÉRE AgEcon
Dutra, Alberto Silva; Barros de Azevedo, Denise; Al-Alam Elias, Sandro.
This work has the objective of identify the fish operational flows in a rural establishment based on the theory of agribusiness productive chains (APC) and using as analysis tool one of the applications of the Filière concept. The fish farm worked with fingerlings fattening, firstly, and further it developed the activity of fingerlings production, fish rearing and fish industrialization processing. It was observed that the producer search, a lower dependence of the links in this chain allowed better capacity of activities coordination developed inside of the the farm and in the relationship with partners for fish production. However, there are some deficiencies such as in the purchase of fish for complement the supply for industrial processing, and also in...

Mixing models and stable isotopes as tools for research on feeding aquatic organisms Ciência Rural
Moraes,Cyntia Rafaela Ferreira de; Henry-Silva,Gustavo Gonzaga.
ABSTRACT: Implementation of mixture models in isotopic analysis has been increasing due to the need to analyze sources and understand their variations in relation to consumers, which requires an accurate determination of their discriminant rate and fractioning. In this context, we presented the main concepts related to the application of stable isotopes and mixing models, with the aim to analyze the benefits and problems of these tools in surveys on nutrition of aquatic organisms. The predominant methods identified included application of the models IsoSource, MixSIR, SIBER and SIAR, with the use of C and N isotopes in research with aquatic organisms. Studies in both freshwater and marine environments were evaluated to determine the relative contribution...

Processing yield and chemical composition of rainbow trout (Oncorhynchus mykiss) with regard to body weight Animal Sciences
Souza, Maria Luiza Rodrigues de; Macedo-Viegas, Elisabete Maria; Zuanon, Jener Alexandre Sampaio; Carvalho, Maria Regina Barbieri de; Goes, Elenice Souza dos Reis.
The influence of weight (W) category of the rainbow trout on processing yield and chemical composition of the entire eviscerated fish and fish fillet was analyzed. A completely randomized design was employed for processing variables (W1 = 300 to 370 g and W2 = 371 to 440) coupled to a 2 x 2 factorial scheme for the chemical composition (W1 and W2 and forms of presentation: fillet and whole eviscerated fish). W1 showed higher yield for entire eviscerated fish (83.00%) and head (13.27%), but a lower yield for the viscera (17.00%), when compared to W2. We did not affect abdominal muscle yield, fillet with or without skin, skin percentage and residues. There were significant differences between W for moisture (W1 = 72.30% and W2 = 71.15%) and lipids (CP1 =...
