Most American diets do not meet Federal Food Guide Pyramid dietary recommendations. On average, people consume too many servings of added fats and sugars and too few servings of fruits, vegetables, dairy products, lean meats, and foods made from whole grains compared with a reference set of Food Guide Pyramid serving recommendations appropriate to the age and gender composition of the U.S. population. In addition, while the healthfulness of diets has improved over time, the pace of improvement has been uneven. For example, while Americans consumed record amounts of fruits and vegetables in 1996, consumption of caloric sweeteners also reached a 27-year high. This report is the first dietary assessment to use ERSís time-series food supply data to compare... |

Immunostimulants in farmed fish diets has been considered an effective approach to health management. This study aimed to assess antioxidant effects and resistance against pathogens of Colossoma macropomum (tambaqui) fed essential oil (EO) of M. piperita at 0%, 0.5%, 1.0% and 1.5% kg−1 commercial feed during 30 days. Tambaqui were challenged with Aeromonas hydrophila and did not present clinical signs of alterations. Higher hepatic catalase activity was observed in fish fed 1.0% of M. piperita EO, compared with 1.5%. Renal superoxide dismutase and glutathione peroxidase decreased in the fish fed M. piperita EO. Hepatic and renal lipid hydroperoxide increased among fish fed diets with 1.0 and 1.5% of EO. Tambaqui fed 1.0% of M. piperita EO showed... |

Despite its well known nutritional attributes, seafood consumption can potentially represent human health hazards, as these species can often accumulate toxic elements namely as mercury, cadmium, lead and arsenic. In toxicological studies, the overall concentration of metals determined does not always reflect the amount that becomes available for absorption at the human intestinal epithelium during the digestive process, also defined as bioaccessibility. The inclusion of bioaccessibility in risk/benefit assessment provides more realistic estimates of metals ingestion through seafood consumption. |

Theoretical models suggest that decisions about diet, weight and health status are endogenous within a utility maximisation framework. In this paper, we model these behavioural relationships in a fixed-effect panel setting using a simultaneous equation system, with a view to determining whether economic variables can explain the trends in calorie consumption, obesity and health in OECD countries and the large differences among countries. The empirical model shows that progress in medical treatment and health expenditure mitigates mortality from diet-related diseases, despite rising obesity rates. While the model accounts for endogeneity and serial correlation, results are affected by data limitations. |

Food stamp recipients, like other Americans, struggle with nutrition problems associated with choice of foods, as well as amounts. This series of Economic Information Bulletins compiles evidence to help answer the question of whether the Food Stamp Program can do more to improve the food choices of participants. It examines the role of affordability and price of healthful foods in influencing food choices and the likely success of any policy targeted at changing food choices through food stamp bonuses or restrictions. It also examines other approaches to changing food choices, including nutrition education and potential strategies drawn from behavioral economics literature. Meaningful improvements in the diets of food stamp recipients will likely depend on... |
