A DISCRETE STOCHASTIC MODEL TO DETERMINE FOOD QUALITY BY USING SIMULATION: A STRAWBERRY CASE STUDY REA
González-Hernández,Isidro J.; Granillo-Macías,Rafael; Rondero-Guerrero,Carlos; Martínez-Flores,José L..
ABSTRACT The agri-food supply chain (AFSC) sets a series of challenges in the production, storage, distribution, and transportation processes, as the market's requirements for fresh food combine food quality and safety attributes. This research suggests a discrete event modeling to study the behavior of food quality in all supply chains (SCs) in terms of temperature and time variables in a stochastic manner. The ProModel software was used to simulate strawberry quality in the SC, considering a distribution route to export the fruit from Mexico to the United States. The suggested model together with a computer simulation analyzes the fruit quality from two perspectives: with and without a cold chain (CC). The obtained results revealed that in the case of CC...

Agronomic biofortification of common bean grain with zinc PAB
Cambraia,Thaís Lopes Leal; Fontes,Renildes Lúcio Ferreira; Vergütz,Leonardus; Vieira,Rogério Faria; Neves,Júlio César Lima; Corrêa Netto,Pedro Silva; Dias,Raphael Felipe Nascimento.
Abstract: The objective of this work was to evaluate the effects of the split and combinated application of foliar zinc (ZnF) + soil Zn (ZnS) on Zn concentration in the grains (ZnCG) of common bean (Phaseolus vulgaris). Two experiments were carried out in a greenhouse during two seasons. In the first experiment, two common bean cultivars received six ZnF rates (0, 120, 240, 480, 720, or 1,200 g ha-1), with split applications at the R5, R7, and R8, or R7 and R8, or R8 plant stages. In the second experiment, one cultivar received three ZnS rates (0, 5, or 10 kg ha-1) combined with ZnF rates (0, 1, 1.5, 3, 6, or 10 kg ha-1). In the first experiment, with the ZnF increment, ZnCG increased linearly from 15.3 to 20.7 mg kg-1. ZnF splitting did not affect ZnCG....

Alimentation expérimentale de l'huître Crassostrea gigas à l'aide de navicules bleus Haslea ostrearia (Simonsen) de différentes tailles ArchiMer
Barille, Laurent; Bougrier, Serge; Geairon, Philippe; Robert, Jean-michel.
The influence on the feeding physiology (clearance, filtration, ingestion, absorption) of the Japanese oyster Crassostrea gigas of low concentrations of suspended particulate matter (SPM ranging from 2 to 20 mg.l-l) and high food quality (mean organic fraction =54 %) was studied in the laboratory. Experimental diets were made up with three strains of the "blue diatom" Haslea ostrearia, which is responsible of the greening of oyster-ponds. The strains were characterized by different sizes (48, 65 and 98 µm respectively) but possessed the same density and biochemical composition. Clearance rate was found constant at 2.2 1.h(-l).g-l dry weight and therefore was not influenced by increasing seston load. Pseudofaeces production was observed for SPM...

An Incentive System for Salmonella Control in the Pork Supply Chain AgEcon
Backus, Ge B.C.; King, Robert P..
This paper presents a dynamic principal-agent analysis of an incentive system for Salmonella control in the pork supply chain. The incentive system determines quality premiums to the producer, testing frequencies for hogs delivered, as well as charges to the producer for testing and penalties. Using cost estimates and technical parameters, we evaluate the cost effectiveness of plant and farm control measures and trade-offs between prevalence reduction and related costs and gains. We also assess the impact of ownership structure on incentive system parameters and performance for a wide range of prevalence threshold levels. Differences in control actions, bacteriological prevalence and the overall welfare gain for the chain are very small across ownership...

Analyse des verbraucherorientierten Qualitätsurteils mittels assoziativer Verfahren am Beispiel von Schweinefleisch und Kartoffeln AgEcon
Bruhn, Maike; Grebitus, Carola.
Consumers’ quality judgement depends on their knowledge concerning certain quality attributes. Against this background this paper presents the results of a consumer survey conducted in 2004. We focus on measuring consumers’ cognitive structures regarding pork and potatoes. On this account we apply a free-association technique and a variation of concept mapping. Our analysis shows that consumers’ cognitive structures are quite complex and heterogeneous. Product characteristics such as ‘taste’ and ‘fat content’ dominate consumers’ knowledge. To predict the eating quality of pork consumers prefer intrinsic quality cues. In contrast to that extrinsic quality cues are used to predict the origin of the given product. With regard to potatoes the intrinsic quality...

Competing conventions: The Big Branders’ struggle to incorporate new quality conceptions in the Norwegian food market AgEcon
Borgen, Svein Ole.
The paper addresses recent changes in the Norwegian agrifood industry from the analytical perspective of quality conventions. Storper and Salais’ “worlds of production” plus Boltanski and Thévenots’ “orders of worth” are used as a basis for the empirical study. First, the paper discusses how the largest Norwegian branders try to strategically adapt to “novel” quality attributes like health-enhancing food, origin/terroir, environmental sustainability and ethics. Second, the paper investigates the companies’ quality signalling strategy: How are these “novel” qualities communicated to consumers? Multiple options are available: Do they attempt to systematically incorporate “novel qualities” into their private brand equity (“conventionalizing qualities”)? Do...

Consumer Attitudes Behind Organic Foods Perception: An Illustration in a Spanish Area. AgEcon
Robles, Rita Robles; Vannini, Luigi; de la Puente, Telesforo; Fernandez-Revuelta, Jose J..
The notable growth experienced by organic agriculture in Spain, has not been accompanied by a similar development in the consumption of organic foods, with most of the organic agricultural output being exported. This study focuses in analyzing Spanish consumer's attitude versus organic foods, in order to identify the factors that influence the demand. For this purpose, 130 surveys are conducted among consumers in a medium-sized city in Spain and processed using different statistical analysis, determining the level of knowledge about these products, consumer's shopping habits, and criteria, which support or dissuade the consumption of these products.

Consumer Demand for Quality: Major Determinant for Agricultural and Food Trade in the Future? AgEcon
Caswell, Julie A.; Joseph, Siny.
The impact of consumer demand for quality on the agricultural and food system is an increased emphasis on quality differentiation but not all in the direction of upgrading quality. The more elite market segments are thriving and reaching growing numbers of consumers but the basic price/quality markets remain strong. Most recent economic studies find that consumers are willing to pay for food safety and other quality attributes, and for information about them. The magnitude of the valuations varies by food product, attribute, country, and study design. This literature and a case study of genetically modified foods suggest that consumer demand has a strong effect on agricultural and food trade.

Consumer health protection and Information and Communication Technology AgEcon
Misso, Rosa.
The environmental emergencies, the alimentary crisis, the increase of chronic illnesses, pushes the consumers to seek informative channels often also "virtual" as a reassurance for their own health, for the salubriousness of food and above all as a direct channel with the enterprises. For these last, then, it becomes fundamental to look at the information, to the virtual nets, and to the Information and Communication Technologies (ICTs) especially as powerful means of communication. Therefore, the work analyzes the role that the ICTs develop in the productive sector of ‘Mozzarella di Bufala Campana’, a particularly important product for the economy of the Region but in crisis because installed in a context of environmental emergencies that have seriously...

Consumers' Demand for Pork Quality: Applying Semantic Network Analysis AgEcon
Grebitus, Carola; Bruhn, Maike.
Consideration of consumers' demand for food quality entails several aspects. Quality itself is a complex and dynamic concept, and constantly evolving technical progress may cause changes in consumers' judgment of quality. To improve our understanding of the factors influencing the demand for quality, food quality must be defined and measured from the consumer's perspective (Cardello, 1995). The present analysis addresses the issue of food quality, focusing on pork-the food that respondents were concerned about. To gain insight into consumers' demand, we analyzed their perception and evaluation and focused on their cognitive structures concerning pork quality. In order to more fully account for consumers' concerns about the origin of pork, in 2004 we...

Development of a quality index scheme and shelf-life study for whole tambaqui (Colossoma macropomum) Acta Amazonica
SILVA,Márcio Luís Bernardo Pontes da; LOPES,Jane Mello; VIEIRA,Sidely Gil Araújo; ARAUJO,Thaís Danyelle Santos; CALVET,Rodrigo Maciel; PEREIRA,Alitiene Moura Lemos; FOGAÇA,Fabiola Helena dos Santos.
ABSTRACT The study developed a sensory scheme based on the Quality Index (QI) and estimated the shelf-life for whole tambaqui, Colossoma macropomum (Cuvier, 1818), stored in ice, assessing and determining the most appropriate chemical, physical, bacteriological and quality sensory parameters and their changes during storage time. Ninety six fish were evaluated at 1, 3, 5, 8, 10, 12, 15, 17, 19 and 22 days of ice-storage. The developed quality index (QI) showed four main quality attributes with a total of 29 demerit scores. The skin mucus and odor, as well as general appearance and ventral elasticity had a great importance for the statistical model applied, while eyes, gill mucus and dorsal elasticity showed lower significance for tambaqui QI. The pH showed...

Diet-induced developmental plasticity in life histories and energy metabolism in a beetle RChHN
URREJOLA,SERGIO; NESPOLO,ROBERTO; LARDIES,MARCO A.
Adaptive phenotypic plasticity, has been recognized as an important strategy by which organisms maximize fitness in variable environments, which vary through development. A disassociation among stages should represent a null effect of the environment experienced during early ontogeny in the expression of adult traits. Food quality greatly influences survival, development and reproduction in many arthropod herbivores. We examined the effects of diet protein in physiological and life-history traits in the yellow mealworm beetle Tenebrio molitor through ontogeny. We established four experimental treatments: Low Protein (LP), Low Protein Control (LPC), High Protein (HP), and High Protein Control (HPC) with recently eclosioned larvae each. Individuals were...

European Food Quality Policy: The Importance of Geographical Indications, Organic Certification and Food Quality Assurance Schemes in European Countries AgEcon
Becker, Tilman C..
In the early 1990s reform of the EU’s Common Agricultural Policy led to a change in emphasis away from price into policies to promote rural development, in part through improvements to food quality. Geographic indicators are only one of a range of EU policies designed to foster these goals. Geographic indicators are put within the context of the wider quality enhancement policies that include quality assurance schemes and organic production. There appears to be considerable regional differences within the EU when it comes to the use of the various quality-enhancing policies available. The member states of the EU can be grouped into four different clusters, each characterized by a different quality policy strategy.

SCHUH,Vanessa; SCHUH,Janaína; FRONZA,Nei; FORALOSSO,Fabiana Bortolini; VERRUCK,Silvani; VARGAS JUNIOR,Alvaro; SILVEIRA,Sheila Mello da.
Abstract The aim of this study was to evaluate the hygienic-sanitary quality of minimally processed vegetables commercialized in the city of Concórdia, Santa Catarina State, Brazil. Eight distinct products, sold in 3 different supermarkets, totalizing 24 samples were evaluated. Of the analyzed samples, just one was in discordance with the microbiological parameters established by the Brazilian legislation (210 MPN/g of coliforms at 45 °C for Kale 2). Beyond the absence of Salmonella sp. indicated in legislation, all samples also indicated the absence of positive coagulase staphylococci and Listeria monocytogenes. The most expressive microbial counts were obtained when evaluating the aerobic mesophilic microorganisms (ranging from 2.8×102 to 2.7×107), and...
