Abstract The 5º Simpósio de Segurança Alimentar (5th Food Safety and Security Symposium) was held in May, 2015, in Bento Gonçalves, RS, Brazil with the objective of discussing the interrelation between food and health, in various perspectives. This paper reviews the state of the art regarding all the issues discussed during the Symposium, connecting them with the lectures presented at the conference. As final remarks, it was perceived that the interrelation between food and health is growing stronger and cannot be discussed without involving the different areas involved. |

Consumers' attitudes to trust and risk are key issues in food safety research and attention needs to be focused on clearly defining a framework for analysing consumer behaviour in these terms. By creating a platform, or benchmark, it is hoped that more succinct policy programmes may be initiated to better communicate relevant issues to consumers. In order to achieve this, a detailed review of the recent literature surrounding risk, trust and, the relationship between the two must be conducted. The purpose of this paper is to examine, using choice experiments, the Japanese consumers’ valuation of domestic Wagyu beef, domestic dairy beef, Australian beef, and US beef when considering their bovine spongiform encephalopathy (BSE) test status. Some Japanese consumers give high priority to food safety while purchasing beef; this is expected to cause a non-compensatory valuation of food safety. As compared to the results derived from a compensatory utility model, a random parameters logit (RPL) with a non-compensatory utility model provides estimation results that are fitter for the respondents’ decision-making rules and also provides more valid willingness to pay (WTP) for each type of beef. The goal of this paper is to assess the effect of regulatory burdens in the European dairy industry on its competitiveness. A theoretical foundation is provided by transaction cost economics and total quality management insights. In the months following the reopening of the Japanese market to imports of U.S. beef on July 26, 2006, Japanese importers were unable to procure adequate supplies. This paper discusses reasons for early supply shortages and some of the policy and trade issues that will affect demand for U.S. beef in the short to medium term. The paper also discusses current marketing efforts for domestic and imported beef, new marketing technologies, and general consumer trends. The information presented in this paper includes on-site observations and data from meetings with Japanese importers and retailers and industry experts during market research in Tokyo and Osaka in November 2006. |

The term traceability refers to recording of flow of products along the food chain from production to consumption with inclusion of all intermediate applications involved in processing/packaging stages. The aim for establishing traceability in the food chain is to provide the timely identification and recall of batches of product from the market when a risk threatens the health of consumers.
