Characterization of quinolone resistance in Salmonella spp. isolates from food products and human samples in Brazil BJM
Pribul,Bruno Rocha; Festivo,Marcia Lima; Souza,Miliane Moreira Soares de; Rodrigues,Dalia dos Prazeres.
Abstract Non-typhoidal salmonellosis is an important zoonotic disease caused by Salmonella enterica. The aim of this study was to investigate the prevalence of plasmid-mediated quinolone resistance in Salmonella spp. and its association with fluoroquinolone susceptibility in Brazil. A total of 129 NTS isolates (samples from human origin, food from animal origin, environmental, and animal) grouped as from animal (n = 62) and human (n = 67) food were evaluated between 2009 and 2013. These isolates were investigated through serotyping, antimicrobial susceptibility testing, and the presence of plasmid-mediated quinolone resistance (PMQR) genes (qnr, aac(6')-Ib) and associated integron genes (integrase, and conserved integron region). Resistance to quinolones...

Abstract Real-time PCR (qPCR) has been used for rapid identification of Salmonella Typhimurium and Staphylococcus aureus in dairy foods, but is unable to differentiate viable and unviable pathogens. Ethidium bromide monoazide (EMA), a DNA-intercalating agent, can detect only viable cells because selectively enter cells considered unviable and bind to their DNA, inhibiting its amplification during qPCR. The objective was to establish a protocol for detection of viable Salmonella Typhimurium and S. aureus, experimentally inoculated in coalho cheese, by the use of EMA combined with qPCR. The protocol was effective for the identification of viable Salmonella Typhimurium in coalho cheese but not for the S. aureus cells. Concentrations of viable Salmonella...

SILVA,ALESSANDRA S.; DUARTE,ELIZABETH A.A.; OLIVEIRA,THIAGO A.S. DE; EVANGELISTA-BARRETO,NORMA S..
Abstract In Brazil and in other countries of the world, studies have been conducted to identify Listeria monocytogenes in cattle meat that is preferably consumed undercooked and, when marketed without meeting strict phytosanitary requirements, may cause outbreaks of listeriosis. In the such, foodborne outbreaks, the methods used for the detection of the pathogen and the efficiency associated with them are crucial for the proper assessment. In this study, we used the techniques biochemical and molecular for identification of the L. monocytogenes isolated from 30 samples of the fresh beef, marketed in ten butchers’ shop of the free-fair from a municipality from the Bahia, Brazil. The results obtained from biochemical tests (catalase, motility, β-hemolysis...

Livestock Production and Foodborne Diseases from Food Animals in Thailand OAK
PADUNGTOD, Pawin; KADOHIRA, Mutsuyo; HILL, Glen; 門平, 睦代; ヒル, グレン.
Thailand is a developing nation dependent on agriculture. Due to lack of modern public health practices, she suffers from the consequences of foodborne illnesses. The number of foodborne infection cases has nearly doubled in the past 10 years. Salmonella and Campylobacter pose the greatest risk of bacterial contaminants, mostly from pigs and chickens, and this paper will review livestock production systems and foodborne diseases from cases stemming from these sources. Due to the complexity of the livestock production systems, collection of data to date has been sporadic, but it is clear that controls are needed in slaughterhouse processing methods, and more communication between agencies and surrounding regions is paramount for proper surveillance to have...

Microbiology of organic and conventionally grown fresh produce BJM
Maffei,Daniele F.; Batalha,Erika Y.; Landgraf,Mariza; Schaffner,Donald W.; Franco,Bernadette D.G.M..
ABSTRACT Fresh produce is a generalized term for a group of farm-produced crops, including fruits and vegetables. Organic agriculture has been on the rise and attracting the attention of the food production sector, since it uses eco-agricultural principles that are ostensibly environmentally-friendly and provides products potentially free from the residues of agrochemicals. Organic farming practices such as the use of animal manure can however increase the risk of contamination by enteric pathogenic microorganisms and may consequently pose health risks. A number of scientific studies conducted in different countries have compared the microbiological quality of produce samples from organic and conventional production and results are contradictory. While...

Silveira,Débora Rodrigues da; Lopes,Nathalie Almeida; Gonzalez,Helenice de Lima; Timm,Cláudio Dias.
Dulce de leche is a food obtained by concentration and heating of milk with the addition of sucrose. The common practice of opening the dulce de leche containers in retail markets can lead to food contamination by Salmonella. The objective of this study was to evaluate the survivability of Salmonellaenterica subsp. enterica serotypes Typhimurium, Enteritidis, Infantis and Derby in pasty dulce de leche. Aliquots of this sweet were experimentally contaminated with these microorganisms and later analyzed to evaluate microorganism viability after storage for 0, 1, 2, 3, 5, 10, and 20 days. Salmonella was recovered up to the 20th day. These results are a warning about the need to adopt proper sanitary-hygienic measures for handling and packaging this food...
