Abstract Aspergillus and Fusarium are the fungi genera most frequently isolated from cereal grains and other commodities. They are capable of producing mycotoxins, which can affect the human and animal health. Synthetic fungicides have been used to control these fungi, nevertheless, they have acquired resistance and other alternatives are necessary since they now need higher amounts. Therefore, the aim of this study was to evaluate the efficacy of cinnamon, clove and thyme essential oils (EOs) alone and encapsulated in chitosan on the radial growth, spore germination and mycotoxin production by Fusarium verticillioides and Aspergillus parasiticus. Corn flour, "canjica" (corn grits), corn flakes and popcorn for human consumption, commercialized in Santa Catarina (n=82), were analyzed in order to detect the presence of fumonisins B1 (FB1) and B2 (FB2). From the samples, 92.68% showed detectable levels of Fumonisins (FBs). Corn flour showed the highest level of contamination (91.5%) with average levels of 3.811 and 5.737 mg/g for the home-processed and industrialized products, respectively. The next most contaminated product was popcorn with a average of 2.872 mg/g and an occurrence in 91.6% of the samples. All samples of corn flakes were contaminated with an average of 1.307 mg/g. Natural fungal and fumonisin contamination were evaluated in 109 freshly harvested corn samples from Paraná State and correlated to damaged kernels (%). In addition, healthy and damaged kernels of 24 corn samples were selected in order to compare the mycoflora profile and fumonisin levels. The correlation among protein/lipid content and fumonisin levels was also analyzed in the 15 most frequently cultivated corn hybrids. Total fungal colony count in 109 freshly harvested corn samples ranged from 1.9x10(4) to 3.5x10(6) CFU/g, Fusarium sp. count from 1.0x10³ to 2.2x10(6) CFU/g, and fumonisin levels from 0.13 to 20.38 µg/g. Twenty three samples, belonging to 19 corn cultivars with distinct types of germoplasms, endosperm and length of vegetative cycle, were analyzed for fumonisins B1 and B2. The cultivars were grown in experimental fields in three locations (Votuporanga, Ribeirão Preto and Capão Bonito) within the State of São Paulo, Brazil, during the 97/98 crop. All samples were contaminated with fumonisins with concentrations ranging from 1.63 µg/g to 25.69 µg/g with an average of 5.61 µg/g for FB1 and from 0.38 µg/g to 8.60 µg/g with an average of 1.86 µg/g for FB2. In terms of fumonisins, these high levels put the corn cultivated in São Paulo among the most contaminated in the world reported to date. |

Ear rots caused by Fusarium spp. are among the main fungal diseases that contribute to poor quality and the contamination of maize grains with mycotoxins. This study aimed to determine the visual incidence of fungal-damaged kernels (FDKs), the incidence of two main Gibberella (a teleomorph of Fusarium) complexes (G. fujikuroi and G. zeae) associated with maize using a seed health blotter test, and the fumonisin levels, using high performance liquid chromatography, in samples of maize grains grown across 23 municipalities during the 2008/09 and 2009/10 growing seasons. The mycoflora of 3 hybrids of freshly harvested corn grains collected from three regions of the state of São Paulo, Brazil (Assis, Capão Bonito and Ribeirão Preto) was investigated. A total of 66 samples were analyzed focusing on the influence of abiotic factors (moisture content, water activity, temperature and rainfall) on both the prevalence of Aspergillus flavus and Fusarium moniliforme, and the ability of these genera isolates to produce aflatoxins and fumonisins, respectively. Fusarium moniliforme (FM) incidence and fumonisins (FUM) content were determined in white kernel samples of maize hybrids, harvested in farms of Guárico and Portuguesa states, Venezuela. FM incidence was estimated in subsamples placed on a malt-salt-agar medium. Values in the range of 0-15 % were considered low, from 15-30% intermediate, and more than 30% high. Production of fumonisins B1 (FB1) and B2 (FB2) by two Brasilian strains (LAMIC 2999/96 and 113F) and one American strain (NRRL 13616) of Fusarium moniliforme were evaluated in laboratory cultures subjected to different temperatures (20, 25, and 30ºC), and moisture contents (25, 34, and 42%) on corn substrate.
