The aim of this article is to analyse the processes which begins from raw material extraction to the consumption of mangaba, emphazising different actors, their relationships, marketing channels, and consumption characteristics. The research was carried out in the Northeast of Brazil (Brazilian states of Bahia, Alagoas, Sergipe and Pernambuco) using quantitative and qualitative approaches. The main results indicated weak domestication of mangaba trees to attend to an increasing market demand, and threats to extractivism by external factors. |

O objetivo do trabalho foi verificar a divergência genética entre 25 genótipos de mangaba da região de Iramaia-Chapada Diamantina-Bahia, utilizando os marcadores morfológicos e os marcadores RAPD. As seguintes aferições foram realizadas nos frutos maduros: diâmetro longitudinal (DL) e transversal (DT), massas do fruto (MF), da semente (MS) e da polpa (MP), rendimento de polpa (%P) e a contagem do número de sementes (NS). Os caracteres químicos avaliados no fruto maduro foram: pH, acidez (Ac), sólidos solúveis totais (SST), ácido ascórbico (AA), açúcar total (ACT) açúcar redutor (ACR), açúcar não redutor (ACNR) e relação sólidos solúveis totais: acidez (SST/Ac). ABSTRACT The state of Sergipe is the largest mangaba producer, which is a fruit native to Brazil, and has cultural, social and economic importance in its area of occurrence. It is an endangered species due to human actions, and despite its economic potential, there are still no commercial plantations. The study was carried out in order to characterize trees, fruits and the genetic diversity of natural populations of mangaba in Sergipe, Brazil. ABSTRACT The Mangaba, an exotic fruit of the Brazilian Cerrado, is very appreciated for its peculiar sensory characteristics. Here we aimed to evaluate the sensory profile of mangaba pulp subjected to three treatments (unpasteurized and pasteurized pulps; frozen by static air and forced air; stored frozen for zero, 4, 8 and 12 months). ABSTRACT Mangaba is a widely-consumed fruit in the Northeast of Brazil, which is usually exploited through extractivism. ABSTRACT This work examined the stability of lyophilized ‘mangaba’ pulp powder, rolled and packaged in plastic containers, with and without vacuum during 90 days of storage under room temperature, with evaluation of the parameters every 15 days. Analyses of ascorbic acid concentration, pH, color and water activity were carried out. It was found that ascorbic acid remained in accordance with the standards specified for daily consumption according to the Brazilian legislation in all analyzed packages, with preservation of stability in the laminated package with vacuum, which was also effective in maintaining water activity, which contributes to better stability of the product. |
