The development of innovative functional food products is a major trend in today's food industry. The growth of this industry is driven by increased consumer awareness of their own health deficiencies, increased understanding of the possible health benefits of functional foods, development in formulation technologies, a positive regulatory environment and changing consumer demographics and lifestyles. While there has been a proliferation of omega-3 products such as milk, eggs, yogurt, and margarine in the Canadian food market, very little is known about consumers of omega-3 products. This study sought to determine the attitude of consumers in the city of Viçosa-MG, Brazil in relation to products containing probiotics using a validated questionnaire. A total of 352 individuals responded to questionnaires which, in addition to the items of attitude, also assessed the health of consumers and acceptance and frequency of consumption of these products. Internal validation utilized the Cronbach coefficient to measure the reliability of the attitude scale. To analyze the profile of these consumers, descriptive statistics was utilized. Iron deficiency is a widespread nutritional problem in developing countries, causing impaired physical activity and cognitive development, as well as maternal mortality. Although food fortification and supplementation programmes have been effective in some countries, their overall success remains limited. Biofortification, that is, breeding crops for higher micronutrient content, is a relatively new approach. We propose a methodology for ex-ante impact assessment of iron biofortification, which builds on disability-adjusted life years (DALYs) and a large household data set. Mercury contamination of the Chesapeake Bay is a concern to health authorities in the region. We evaluate the economic and health effects of postulated recreational and commercial fishing advisories for striped bass on the Maryland portion of the bay. Awareness of and response to the advisory is estimated using a meta-analysis of the literature. Three values are estimated: welfare losses to recreational anglers, welfare losses in the commercial striped bass fishery, and health benefits. An estimate of percentage of consumer surplus loss is applied to the value of all fishing days in the bay to estimate recreational welfare loss.
