O objetivo deste trabalho foi estudar as alteracoes na composicao quimica e digestibilidade "in vitro" das amostras colhidas via fistula esofagiana. Quantidades variaveis (2 a 4 kg) de amostras de capim Coloniao (Panicum maximum), Soja Perene (Glycine wightii), Grama batatais (Paspalum notatum) e capim Angola (Brachiaria mutica), foram divididas em duas porcoes: uma oferecida a 2 animais fistulados no esofago e a outra serviu de controle durante 4 periodos de janeiro a maio de 1979 na ESALQ/USP, em Piracicaba,SP. Abstract The Brazilian Cerrado presents a wide variety of natural products, including the Pequi (Caryocar brasiliense). The important factor that determines the dietary and nutritional ideality of protein is degestitibility. This work aims to evaluate the protein digestibility of Pequi seeds and the presence of anti-nutritional factors. The protein Pequi almonds were extracted, toasted and untoasted. Evaluation digestibility was structurally characterized by SDS-PAGE 15%, which can be used to analyze simulated gastric fluid (SFG) and digestion in intestinal fluid (SFI) in the presence of pepsin and trypsin/chymotrypsin. The objective of this study was to evaluate the chemical composition and dry matter in vitro digestibility of stem, leaf, straw, cob and kernel fractions of eleven corn (Zea mays) cultivars, harvested at two cutting heights. The experiment was designed as randomized blocks, with three replicates, in a 2 × 11 factorial arrangement (eleven cultivars and two cutting heights). Foi conduzido um experimento em pastagem de capim Coloniao (Panicum maixmum), Soja Perene (Glycine withtii), Grama Batatais (Paspalum notatum) e Capim Angola (Brachiaria mutica) pertencente ao Departamento de Zootecnia da ESALQ/USP em Piracicaba, SP, com o objetivo de avaliar a composicao quimica e digestibilidade "in vitro" da materia organica da dieta e forragem disponivel em 4 periodos. Effect of chickpea (Cicer arietinum L.) germination on the major globulin content and in vitro digestibility Ciênc. Tecnol. Aliment.

Chickpea seed germination was carried out over a period of 6 days. Little variation in the nitrogen and total globulin content was observed. The major globulin (11 S type) showed higher variation after the 4th day of germination. The elution behaviour and distribution of the isolated major globulin fraction on Sepharose CL-6B chromatography showed little modification at the end of germination. On SDS-PAGE the peak eluted from Sepharose CL-6B showed changes in protein bands between 20 and 30 kDa and above 60 kDa, indicating protein degradation during the period. The research has investigated the hydrolysis of starch from five rice genotypes developed in Brazil with different amylose levels: low (BRS 358 and Empasc 104, lowland), intermediate (BRS Querência, lowland), and high (BRS Pampa, lowland and upland lineage, AB162641). The milled grains were cooked according to the optimum cooking time of each material and then analyzed for the in vitro starch digestibility (SD). Gastric enzymes activities were simulated at pH 1.2 for 30 minutes and intestinal amylaceous enzymes, at pH 6.8 for 90 minutes at 37 °C. The X-ray diffraction pattern and the relative crystallinity were also evaluated.

It was evaluated 11 cultivars (Dina 766, Dina 657, Dina 1000, P 3021, P 3041, C 805, C 333, AG 5011, FO 01, Dina co 9621 and BR 205) harvest 5 cm above ground (low) and 5 cm below the intersection of the first ear (high). Foram avaliados os padroes de fermentacao das silagens de seis genotipos de milho plantados na EMBRAPA Milho e Sorgo. Os silos experimentais foram abertos com um, tres, cinco, sete, 14 e 28 dias apos ensilagem. Foram analisados o pH e nitrogenio amoniacal (N-NH3/NT) no suco das silagens e materia seca (MS), proteina bruta (PB) e digestibilidade in vitro (DIVMS) nas amostras secas em estufa. A MS permaneceu estavel; pH declinou ate o quinto dia de fermentacao e estabilizou-se. A PB foi maior no hibrido AG5011 (8,57%); teores de DIVMS mantiveram-se estaveis durante a fermentacao, variando de 57,3 a 60,2%; concentracoes de N-NH3/NT aumentaram com o avanco da ferementacao.

ABSTRACT: Response surface methodology was used to determine optimum conditions for extraction of protein from pumpkin seed meal. A central composite rotational design (CCRD) including independent variables such, pH and sodium trimetaphosphate (STMP) content was used. Maximum yield was obtained at a central point of CCRD, with STMP content and pH of 4% and 4.5, respectively. These conditions resulted in protein yield of 50.04 g of soluble protein from extract/100 g pumpkin seed. This trial aimed at determining the dehydration curve at nine times (0, 3, 6, 9, 24, 27, 30, 33 and 46 hours after cuting of the plants); the leaf/stem ratio and number of leaves per stem in alfalfa submitted to four managements during the drying process. It was also evaluated the bromatologic composition and in vitro digestibility of the dry matter and cell wall of alfalfa hay before storage. Baru (Dipteryx alata Vog.) is an abundant legume in the Brazilian Savanna. Its nuts can be exploited sustainably using its protein and lipid fractions. This study aimed to analyze the proteins of the nuts present in the defatted flour and protein concentrate in terms of their functional properties, the profile of their fractions, and the in vitro digestibility. The flour was defatted with hexane and extracted at the pH of higher protein solubility to obtain the protein concentrate. The degree of hydrolysis (DH) was tested with acid and alkaline proteases using crustacean meals, squid meal, fish protein concentrate (FPC), fish meal, dried whey, as well as canola paste (w/or w/o phytase), soybean meal (w/or w/o phytase), soyprotein concentrate (SPC), and wheat gluten. SPC produced DH values between 3.6-4.1%, obtained from the three different parts of the digestive tract. Canola paste produced high DH in the stomach by adding phytase to 0.8 and 2% feed. Chenopodium quinoa seeds have high protein content. The nutritional value of quinoa is superior compared with traditional cereals. Its essential amino acid composition is considered next to the ideal, and its quality matches that of milk proteins. In this study, the seed storage proteins from Chenopodium quinoa were extracted, fractionated, partially purified, and characterized. The structural characterization was performed by Tricine-SDS-PAGE and two-dimensional electrophoresis, and it confirmed the presence of proteins of molecular weight of 30 and 7kDa, probably corresponding to lectins and trypsin inhibitors, respectively.
