BMSナンバーと牛ロース芯内脂肪面積比との関連性におよぼす品種の効果 OAK

画像解析により算出された牛ロース芯面積に占める脂肪交雑の面積割合(脂肪面積比)と格付員によるBMSナンパーとの関連性におよぼす品種の効果を検討した。材料は黒毛和種32頭(以下,JB),アパディン・アンガス種5頭(AA),JB x ホルスタイン種7頭(BH),JB x AA11頭(BA)およびJB x マリーグレー種3頭(BM)である. 粒子面積階層別に脂肪交雑粒子の平均面積とその標準偏差および粒子数を算出した. さらに脂肪交雑の配置バランスを数値化した. 同ーのBMSナンパーにおいて, JBの脂肪面積比は,他に比較し低い値を示した(Pく0.05). 粒子の平均面積は,すべての粒子面積階層においてJB,AAならびにBMが, BAおよびBHに比較し小さい傾向にあった. JBの脂肪交雑粒子数は,すべての粒子面積階層において少ない傾向にあった.また,JBおよびBMの脂肪交雑は,他の品種に比較し,均一に配置していた. Carcass and meat characteristics of crossbred steers submitted to different nutritional strategies at growing and finishing phases Ciência Rural

This study was carried out to evaluate the effects of different nutritional strategies at growing and finishing phases on carcass and meat characteristics from 24 crossbred steers predominatly Holstein, slaughtered at 15 months of age and with 395.00kg of body weight. At the growing phase, the animals were maintained on Brachiaria brizantha pasture with two levels of supplementation in amounts equivalent to 0.5 or 1.0% of body weight. Subsequently, the animals were finished in feedlot with diets composed of 50 or 80% of concentrate. The high level of the concentrate at the finishing phase increased significantly (P<0.05) the hot carcass yield (50.16 vs. 48.62%). The aim was to evaluate the feeding behavior, carcass characteristics and meat quality of Nelore heifers fed sunflower pie replacing cottonseed meal. They were used 30 heifers with average initial weight of 274 kg ± 28 kg and average age of 24 months, confined for 76 days. The design was completely randomized with five treatments (0, 150, 300, 450 and 600 g kg-1 DM) and six replicates per treatment. Carcass characteristics of feedlot-finished Nellore heifers slaughtered at different weights Animal Sciences

Carcass and meat characteristics of 48 Nellore heifers at 24 to 30 months of age, with an initial weight of 263.4 ± 13.9 kg, were evaluated. The experiment was set up as a completely randomized design with four treatments, which consisted of four slaughter-weight classes, namely <340, 340-370, 370-400, or >400 kg. Back fat thickness was not influenced (p > 0.05) by slaughter weight in any of the forms it was expressed (mm or %), averaging 5.3 mm. Loin eye area in cm2 increased (p < 0.05) with the increase in slaughter weight. The objective of this experiment was to evaluate the physical carcass composition and meat quality characteristics of Holstein calves in feedlot or pasture with supplementation, slaughtered at 140, 180, 220 or 260 kg body weight. Changes of marbling characteristics of the rib eye during fattening period and the effects of sire for them in Japanese Black cattle OAK

黒毛和種ロース芯内における脂肪交雑の量,形状および分布均一性の月齢変化と,それに対する種雄牛の影響を調査するために,北海道内の枝肉市場に25~33ヵ月齢で出荷された黒毛和種4,130頭(去勢3,087頭,雌1,043頭)を用いた.第6-7胸椎切開面のロース芯画像を4領域に分割した.ロース芯全体と各領域について,脂肪面積割合,あらさ指数および細かさ指数を算出し,出荷月齢による推移を調査した.去勢において,脂肪面積割合の見かけ上のピークは一つの領域を除いて30ヵ月齢にあったが,31ヵ月齢以降において脂肪交雑の細かさが増大した.雌はすべての領域において脂肪面積割合の見かけ上のピークが30または32ヵ月齢にあり,脂肪交雑の細かさは去勢牛と異なり上昇しなかった.領域によって脂肪面積割合の月齢推移は異なり,去勢では25ヵ月齢で最も脂肪面積割合の低い領域が大きな増加を見せた.また,脂肪面積割合とBMSが見かけ上ピークになる出荷時期は,種雄牛によって異なっていた.

Several methods such as PCR-RFLP, OLA, DNA sequencing, PCR-SSCP and ARMS-PCR have been developed to detect the allelic variation at substitutions K232A of DGAT1, GH6.1 of GH, F279Y of GHR, R4C of LEP, I74V of FABP4, and at the transition in the TG 5´ leader sequence. Most of these methods are manual processes and therefore increase the time spent on the assay and limit the number of animals analyzed. Benefits generated by the use of crossbreeding in beef cattle are related to heterosis and complementary effects, not only in the productive aspect, but also in the qualitative aspect of the carcass, mainly in tropical conditions. The aim of this study was to evaluate the effect of sire breed on beef quality of crossbred cattle. Steers (n=89) and heifers (n=104) were produced along two years from mating ½ Nellore + ½ Angus and ½ Nellore + ½ Caracu and Nellore dams with Guzerá, Caracu and Senepol.

The objective of this study was to evaluate the performance, the carcass and meat characteristics of ewes supplemented with magnesium oxide. Eighteen 6-year-old Santa Ines ewes were used in a completely randomized experimental design, where three levels of supplementation (0.0, 0.1 and 0.2% magnesium oxide in the concentrate) were tested, with six replicates. Final weight, weight gain, feed intake and feed conversion were not affected by levels of magnesium supplementation. Intramuscular fat (IMF) influences important quality characteristics of meat, such as flavor, juiciness, palatability, odor and tenderness. Thus, the objective of this study was to apply the following image processing techniques to quantify the IMF in beef: palette; sampling, interval of coordinates; black and white threshold; and discriminant function of colors. Thirty-five samples of beef, with a wide range of IMF, were used. Color images were taken of the meat samples from different muscles, with variability in the IMF content. U.S. Consumers' Willingness to Pay for Flavor and Tenderness in Steaks as Determined with an Experimental Auction AgEcon

In a study of beef quality, consumers tasted steak samples and participated in an experimental auction to determine their willingness to pay. Steaks differed in marbling, tenderness, country of origin, and aging method. Marbling and tenderness had statistically significant impacts on consumers' palatability ratings for steaks. Tenderness significantly impacted consumers' willingness-to pay values. There appear to be threshold levels of marbling and tenderness, below which consumers discount steaks. Steaks from Australia were rated lower for overall acceptability, and bids were lower than for the U.S. steak samples. Dry-aging methods negatively impacted taste panel ratings and bids.

北海道産黒毛和種ロース芯における脂肪酸組成と画像解析形質との関連性 OAK

黒毛和種572頭のロース芯から得た脂肪交雑の脂肪酸組成をガスクロマトグラフィーにより分析した.ロース芯を画像解析した値と,各脂肪酸との関連性を調査した.モノ不飽和脂肪酸(MUFA)割合の平均値は57.0%(去勢 : 56.4%,メス : 58.3%),ロース芯脂肪割合の平均値は44.4%(去勢 : 45.6%,メス : 41.6%)であった.MUFA%は出荷月齢およびBFSナンバーと正の相関を示した(それぞれ0.27,0.25 : P < 0.01).BMSナンバーと有意な相関を示した脂肪酸はステアリン酸(-0.11 : P < 0.01)のみであった.MUFA%はあらさ指数(0.16)および最大あらさ指数(0.11)と正の,細かさ指数(-0.17)と負の相関係数を示した(P < 0.01)が,ロース脂肪割合(0.04)とはほぼ無関係であった.脂肪交雑の平均階調値はMUFA%と負(-0.38)の,パルミチン酸と正(0.43)の相関係数を示した(P < 0.01).

枝肉形質および画像解析形質が牛枝肉価格に与える影響 OAK

北海道内の枝肉市場に上場された黒毛和種去勢牛(1,543頭)および交雑種去勢牛(532頭)の枝肉横断面の画像に対し,脂肪面積比,全体の粒子のあらさ,最大粒子のあらさ,ロース芯の短径・長径比およびロース芯形状の複雑さを画像解析形質として分析に用いた.格付形質としては,枝肉重量,ロース芯面積,バラの厚さ,皮下脂肪厚,BMSナンバー,BCS等級およびBFS等級を用いた.これらの形質が牛枝肉価格にどのような影響があるかを検討した.取り上げた14種類のモデルのうち,格付形質のみおよび画像解析形質を含む2種類の,計3モデルについて詳細に検討した.3種類のモデルの決定係数は,黒毛和種で0.799~0.825,交雑種で0.784~0.792の範囲にあった.価格に最も影響を与えた形質は,格付形質のみを含むモデルにおいては,黒毛和種および交雑種ともBMSナンバーであり,それぞれの標準偏回帰係数は0.570および0.407が推定された.また,画像解析形質を加えたモデルでは,脂肪面積比において最も高い標準偏回帰係数が推定された.全体の粒子のあらさと最大粒子のあらさの標準偏回帰係数は,黒毛和種でそれぞれ-0.079および-0.040,交雑種でそれぞれ-0.090および-0.079を示し,ロース芯内の脂肪交雑粒子があらいと,枝肉価格に負の影響を与える結果を示した.同様にロース芯形状の複雑さのそれも黒毛和種で-0.033,交雑種で-0.045と負の値を示した. 同一のロース芯断面について,異なる撮影装置を利用した際の,算出さ れる脂肪面積比の差異を検討した.22頭の黒毛和種去勢牛のロース芯断面を3種類の デジタルビデオカメラで,ほぼ同時に撮影し,得られた画像からの脂肪面積比を比 較した.また,平成11年4月から平成12年3月までに撮影された2,216頭の黒毛和種肥 育牛のロース芯断面について,脂肪面積比と脂肪交雑ナンバー(Beef marbling Standard, BMS)との関連性に対する季節の影響を調査した.3種類のビデオカメラのうち1種類 からの脂肪面積比は,他のそれと比較し有意に高い値が算出された.しかしながら ,回帰式を用いることで,脂肪面積比に対する撮影装置の影響を除去することが可 能であった.脂肪面積比のBMSに対する季節1(4-6月),2(7-9月),3(10-12 月)および4(2-3月)の偏回帰係数は,それぞれ0.245,0.244,0.243および0.238 とほぼ同様の値が推定された.同様に,季節1,2,3および4の切片は,それぞれ-2. 59,-2.27,-2.09および-2.23であった.
