Unusual exopolysaccharides (EPS) produced by heterotrophic aerobic and mesophilic bacteria originating from hydrothermal vent, were reviewed as a new source of polysaccharidic structures endowed with innovative biological properties. The first step of this study was the structure determination of the EPS GY785, synthesized by Alteromonas infernus. A highly branched nonasaccharidic repetitive unit was identified using chemical modifications and nuclear magnetic resonance spectroscopy. This 106 g/mol polysaccharide is composed of glucose, galactose, glucuronic acid, galacturonic acid, and contains a single branched ramification and one sulphate group. New Sulfur-Containing Polyarsenicals from the New Caledonian Sponge Echinochalina bargibanti 5

Arsenicin A (C3H6As4O3) was isolated from the New Caledonian poecilosclerid sponge Echinochalina bargibanti, and described as the first natural organic polyarsenic compound. Further bioguided fractionation of the extracts of this sponge led us to isolate the first sulfur-containing organic polyarsenicals ever found in Nature. These metabolites, called arsenicin B and arsenicin C, are built on a noradamantane-type framework that is characterized by an unusual As-As bonding. Structural data on a bacterial exopolysaccharide produced by a deep-sea Alteromonas macleodii strain 5

Some marine bacteria collected around deep-sea hydrothermal vents are able to produce, in laboratory conditions, complex and innovative exopolysaccharides. In a previous study, the mesophilic strain Alteromonas macleodii subsp. fijiensis biovar deepsane was collected on the East Pacific Rise at 2600m depth. It was isolated from a polychaete annelid Alvinella pompejana and is able to synthesise and excrete the exopolysaccharide deepsane. Biological activities have been screened and some protective properties have been established. Deepsane is commercially available in cosmetics under the name of Abyssine (R) for soothing and reducing irritation of sensitive skin against chemical, mechanical and UVB aggression.
