One of the fastest growing sectors in food service industries is that of frozen foods. Beside the volume, the effective management of interdependent operations regarding the production, storage, distribution and retailing of frozen foods ("the cold chain") is a key factor of success and a must for preserving the safety and quality of frozen foods. Nicht nur spezialisierte unverpackt-Läden, sondern auch Bio-Supermärkte bieten inzwischen lose und unverpackte Ware an. Eine explorative Kundenbefragung analysiert die Akzeptanz, Nutzung und Bewertung von unverpackt-Abteilungen in zwei Filialen zweier Biosupermarktketten in Berlin. For various reasons fruits and vegetables are particularly susceptible to quality losses after harvest and do not satisfy the quality demands of the consumers at purchase. The aim of the project is the optimisation of freshness-preserving provisions along the supply chain such that organic vegetables of regional cultivation reach for the consumer a surplus value through the perceived freshness. However the oxidative stability and consequently the shelf-life of milk products are inversely correlated with their PUFA and CLA content. Among consumers there is a growing demand for food products with a natural nutritional-physiological advantage over comparable conventional products. As part of an EU funded project, ALP is examining the possible impact of processing on nutritionally valuable milk components, using the example of conjugated linoleic acids (CLA).
