Este trabalho teve por objetivo avaliar as características da qualidade da carne de matrizes pesadas de descarte. Para isto, foram coletadas 40 amostras de filés de peito (Pectoralis major) de matrizes da linhagem Ross com 68 e 69 semanas de idade. As coletas foram divididas em duas, com 20 amostras coletadas em cada uma delas. No tempo zero (após o resfriamento) foi medido o pH e coletados fragmentos para a avaliação do valor R. Nos tempos 4 e 24 horas post-mortem, foram feitas as seguintes análises: pH, valor R, cor objetiva, perda por exsudação (drip loss), capacidade de retenção de água (CRA), capacidade de absorção de água (CAA), perdas de peso por cozimento (PPC) e força de cisalhamento (FC). The expression of MuRF1 and MAFbx in a denervated muscle has previously been studied. However, the expression of MuRF1 and MAFbx in the recipient and donor muscles after muscle transfer for reconstruction of joint function has not been sufficiently investigated. Forty-two adult Sprague-Dawley rats were divided into 7 groups: normal, 1 w post-, 2 w post-, and 4 w post-musculocutaneous nerve transection; and 1 w post-, 2 w post-, and 4 w post-reconstruction of elbow flexion. The goals of this research were to estimate the phenotypic correlations among various meat quality traits from a male broiler line and to describe the relation among these variables. Phenotypical correlations were determined among quality traits, isolating the effects of slaughter date, the age of the mother and sex. The evaluated traits were pH measurements taken at time 0 and at 6 and 24 hours after slaughtering, color parameters, water loss due to exudation, thawing and cooking of the meat, and shear force. This study aimed at estimating the incidence of spaghetti breast myopathyin broilers from three commercial genetic strains (Ross, Cobb, Hubbard) reared in two different housing systems (DH, Dark house, and TS, Tunnel system), presenting different controlled ventilation systems and light availability. This work aimed to evaluate female lineage broilers for halothane sensitivity and for their susceptibility to the subsequent development of PSE meat. The halothane test was carried out in an anesthetic chamber with 3.0% halothane. The unconscious birds were examined for leg muscle rigidity. If one or both legs became extended and rigid, the birds were classified as halothane sensitive (HAL+), while unresponsive birds were classified as halothane negative (HAL-). The results showed that of 298 birds aged 42 days old, 95.6% were HAL- and 4.4% were HAL+. A sample of pectoralis major muscle was collected from HAL- (n=105) and HAL+ (n=13) birds. Qualitative characteristics of breast meat of broilers fed diets supplemented with different concentrations (0; 0.3 and 0.5mg kg-1) of selenium in the form of selenomethionine and sodium selenite were analyzed. O total de 402 frangos foi processado em abatedouro comercial e submetido a seis tratamentos de resfriamento. Inicialmente as carcaças foram pré-resfriadas (PR) por imersão em água e gelo, seguido de resfriamento (R) a -35°C e estocagem a 4°C por 20 horas. Os tratamentos foram: a (0°C/30min, -35°C/3h e 15min), b (10°C/30min, 0°C/30min, -35°C/2h e 45 min), c (10°C/30min, -35°C/3h e 15min), d (20°C/30min, 0°C/30min, -35°C/2h e 45min), e (20°C/30min, -35°C/3h e 15min) e F (20°C/30min, 0°C/3h e 15min).
