Bagaço de uva é uma boa fonte de compostos fenólicos, desempenhando capacidade antimicrobiana, sendo considerado um aditivo natural. Entretanto, compostos fenólicos são facilmente deteriorados, portanto o emprego da microencapsulação torna-se vantajoso, aumentando a estabilidade desses compostos. O trabalho avaliou o conteúdo de compostos fenólicos, antocianinas totais e monoméricas e a capacidade antioxidante do extrato de bagaço de uva concentrado (EBC) e microencapsulado (EBM), além do efeito desse pó como antimicrobiano em salsichas de pescado. The consumption of berries has become a trend with confirmed health properties; however, fruit peels have been wasted despite their high concentrations of bioactive compounds. Tea made from jaboticaba (Myrciaria jaboticaba) peel (JP) could be an alternative to make use of this byproduct and contribute to increased intake of polyphenols. For this reason, this study investigated the JP chemical omposition and bioactive profile, as well as the antioxidant capacity of its aqueous extract (JPT e 25 g L1). There is little knowledge about the phenolic compounds of hybrids grape cultivars reported in literature. This work aimed to characterize the bioactive and volatile compounds from new hybrids grape cultivars (Sweet sapphire-SS and Sweet surprise-SU). Abstract: Modelling studies on climate change predict continuous increases in atmospheric carbon dioxide concentration [CO2] and increase in temperature. This may alter carbon-based phytochemicals such phenolics and modify plant interactions with herbivorous. The objective of this work was to evaluate the effect of phosphites in the protection of common bean (Phaseolus vulgaris) against anthracnose. Different phosphite formulations were evaluated by quantifying peroxidase and polyphenol oxidase activity, total phenols, and lignin content. The treatments consisted of sprayings, in the V4, R5, and R7 stages, with: the K, Zn, Mn, K+Mn, K+salicyclic acid, and Cu phosphites; salicylic acid; acibenzolar-S-methyl; and the fungicide azoxystrobin; besides a control, without sprayings. The grape pomace and wheat bran is rich in bioactive compounds that may be conjugated to the plant cell wall, making it difficult to recover. The objective of this study was to produce an enzymatic complex concomitant to the release of phenolics from grape pomace and wheat bran, by solid-state fermentation (SSF), using the mutant strain Aspergillus niger 3T5B8. Both substrates showed potential for the production of hydrolytic enzymes, mainly for xylanase and ?-glucosidase enzymes with grape pomace and wheat bran, respectively. Myrciaria dubia, or camu-camu, is a perennial species that produces fruits of great nutritional interest because they have high levels of antioxidant compounds. The species occurs spontaneously on Amazonian river margins and requires a low amount of nutritional resources. Further, Myrciaria dubia fruits are collected via extractivism and managing this process is still at an incipient stage.
