Abstract Jabuticaba skin flour (JSF), rich in antioxidants and fibre, was used in order to develop four restructured hams in different combinations with meat: 0% control – without the addition of JSF, with the addition of 0.5% JSF, 1.0% JSF and 1.5% JSF, meeting, therefore, the growing demand for meat products with functional appeal. Physicochemical characterizations and sensory analysis were performed, evaluating the impact of information on possible health benefits and the effect on storage. Restructured hams with JSF had higher contents of phenolic compounds; greater weight loss; a darker shade; texture profile with smaller parameters of stiffness, cohesiveness, adhesiveness, flexibility and chewiness (except the restructured ham with 0.5% JSF).... |

Abstract The amount of nutrients accumulated and distributed in young jabuticaba trees are not yet well known. The aim of this work was to verify biomass production, nutrient accumulation and distribution in ‘Paulista’ and ‘Sabará’ jabuticaba seedlings. The experiment was conducted in greenhouse and seedlings were propagated by seeds and transplanted after 150 days into pots containing perlite and cultivated for 450 days in nutrient solution. Nutrient accumulation and distribution in the different plant organs (root, stem and leaves) were evaluated every 90 days. The aim of this work was to determine the sugar, organic acid and mineral compositions of the whole fruit and fractions (skin, pulp and seed) of the Paulista (Plinia cauliflora) and Sabará (Plinia jaboticaba) jabuticaba tree genotypes, as well as the oil compositions of their skin and seeds. High levels of sugar, especially fructose, followed by glucose and sucrose, were encountered in the fruit. In the Paulista genotype, higher levels of total and reducing sugars were found in the pulp and skin, which was not observed when comparing the whole fruit of both genotypes.
