ABSTRACT A study was conducted to evaluate the effect of chlorogenic acid (ChA) added pre-cooling and its combination with caffeine added during warming on cooled-stored boar semen parameters. Ten ejaculates were diluted in commercial extender with or without 4.5mg/ml ChA and stored at 15°C. After 0, 24 and 72 hours of storage, aliquots of these doses were taken and incubated at 37°C in the presence or absence of 8.0mM caffeine. Semen quality was evaluated after 10 and 120 minutes of incubation. In Brazil, the cassava leaf meal (CLM) has been used to strive against undernourishment because it is a high source of vitamins and minerals. However, the wide variation in the chemical composition of the different cultivars, as well as their antinutritional substances may be a restriction to their uses. The levels of some antinutrients in CLM from five cultivars at three ages of the plant (TAP) were investigated, in order to select the cultivars and plant ages that would be more appropriate for human consumption. Abstract: The objective of this work was to evaluate the effect of the Y-trellis (YT) and vertical shoot-positioned (VSP) training systems on the incidence and severity of Botrytis cinerea, on cluster compactness, and total polyphenol (TP) contents of 'Sauvignon Blanc' grapevine in the municipality of São Joaquim, in the state of Santa Catarina, Brazil. The fermented herbal juices are capable of curing and preventing diseases and reducing the aging progress. The present study was performed to investigate the fermentation of Phyllanthus emblica fruit by Lactobacillus paracasei HII01 with respect to carbon sources, polyphenols, and antioxidant properties. The physical changes, for instance, color, odor, taste, turbidity and gas formation, throughout the fermentation process was manually monitored. Abstract This study investigated the in vitro and in vivo antioxidant activities of polyphenol extracted from black garlic. Black garlic polyphenol (BGP) was extracted from black garlic. The in vitro antioxidant activities of BGP were determined using DPPH·, OH and O2– radical scavenging assays. The in vivo antioxidant activities were determined by detecting the malondialdehyde (MDA) content and superoxide dismutase (SOD) and glutathione peroxidase (GSH-Px) activities in mice. Results showed that, the DPPH· radical inhibition rate of 200 and 250 μg/mL BGP was equivalent with Vc (P > 0.05). In México, banana (Musa sp.) varieties ate used for human consumption as well as for traditional medicine, but the literature lacks information on local diversity and functional justification for their use. Three varieties of dessert bananas (Valery, Morado, and Enano) and one cooking banana (Macho) were collected in a commercial farm in Tuxtepec, Oaxaca, México, at the agronomic maturity stage, and they were physically and chemically evaluated. 30種の種子に含まれるポリフェノール含量と1,1-dipheny-2-picrylhydrazyl(DPPH) 消去活性、 還元力および百粒重、種皮色との関連性について検討した。30種の種子のポリフェノール含量とDPPH 消去活性および還元力との間には、それぞれ高い正の相関関係のあることを明らかにした。 また、赤色系種子のみ明度(L*値)、赤味度(a*値)、黄味度(b*値)、彩度(C*値) とポリフェノール含量との間にそれぞれ高い正の相関性のあること、茶、黄色系種子ではL*値とポリフェノール含量との間に高い負の相関性のあることを明らかにした。調査した種子の中でレンゲ、アカクローバ(メジウム)、ダッタンソバ、ナタネはポリフェノール含量が高いが、百粒重は小さい。 手亡、黒金時、白小豆、アカネ大納言、ユキシズカ、ヘアリーベッチ、アワ、ヒエ、蕎麦、黒ゴマのポリフェノール含量と百粒重はともに低い値であった。 Thirty kinds of seeds, we concerning the correlation of polyphenol content and DPPH radical scavenging, reducing power, weight of hundred seeds, coat color. ワイルドライス(Zizania palustris L.、K2 品種)は、炭水化物(68%)が主要成分のデンプン性種子で、他にタンパク質14%、灰分2%、脂質1.4%などを含有していた。また、種実に含まれる脂質は、中性脂質が75%で、リン脂質15%と糖脂質10%から成り、中性脂質の主要クラスはトリアシルグリセロール(TG)で、全脂質の68%を占めていた。品種間における脂質成分と組成割合には、ほとんど差異は認められなかった。TG の主要分子種は、パルミトイルジリノレン(PLL)、パルミトイルリノレオイルリノレニン(PLLn)、ジリノレオイルリノレニン(LLLn)、トリリノレン(LLL)、オレオイルリノレオイルリノレニン(OLLn)などで60%を占め、他に少なくとも11 種類の分子種が認められた。また、TG の構成脂肪酸位置分析により、sn-1、3 位には16:0、18:2および18:3 が、sn-2 位には18:2、18:3、18:1 および16:0 が認められた。また、4 種類のステロール脂質;遊離ステロール(FS)、ステロールエステル(SE)、ステリルグリコシド(SG)、アシルステリルグリコシド(ASG)の構成デスメチルステロール(DeMS)は、全てシトステロール>カンペステロール>スチグマステロールの順であったが、SE の構成デスメチルステロールであるスチグマステロールの割合は、他クラスのそれに比べて約10%程度低い値を示した。また、種実のポリフェノール含量は0.04%-0.06%、種皮のそれは0.18%-0.28%であり、品種により含量が顕著に異なっていた。しかし、種実ポリフェノール組成は、品種間では同様で、分子量が534 及び564の2 種類の構造未知のポリフェノールであった。 |

The pH, polyphenol content and polyphenol oxidase (PPO) activity in stem end, middle, and bud end of Norin No. 1 potatoes, one of processing varieties in Japan, were measured to investigate their respective distributions. The stem end area had a higher pH and PPO activity in the three areas. This result points out that careful harvesting and postharvest handling are needed especially at the stem end area of potatoes because of its high PPO activity. |

Abstract: The objective of this work was to validate a fast method with low-solvent use, for the analysis of trans-resveratrol and quercetin in red wines. The wines were prepared, using a classical method, from the grape (Vitis vinifera) cultivars Cabernet Franc, Cabernet Sauvignon, Malbec, Merlot, Petit Verdot, Pinot Noir, Ruby Cabernet, Syrah, Tannat, and Tempranillo.
