A review on biogenic amines in food and feed: toxicological aspects, impact on health and control measures. Repositório Alice
FEDDERN, V.; MAZZUCO, H.; FONSECA, F. M. da; LIMA, G. J. M. M. de.
Abstract: Biogenic amines (BAs) represent a considerable toxicological risk in some food and feed products. They are formed under unhygienic conditions during storage and processing; therefore, an increase in the concentrations of those metabolites is related to putrefaction. Because BAs are thermostable, they remain in food and feed that have undergone heat treatment. There are several toxicological effects, especially caused by histamine, when high concentrations of BAs are ingested by humans, depending on the food itself and also on individual susceptibility and individual health status. The present paper reviews the main BAs in meat products, their use as spoilage indicators, the risk on human health and also the contamination of by-product meals....

Antimicrobial effect of copper surfaces on bacteria isolated from poultry meat BJM
Parra,Angel; Toro,Magaly; Jacob,Ricardo; Navarrete,Paola; Troncoso,Miriam; Figueroa,Guillermo; Reyes-Jara,Angélica.
Abstract Poultry meat is a food product that usually carries high rates of microbial contamination, including foodborne pathogens. The poultry industry has established different systems to minimize these hazards. In recent years, extensive literature has demonstrated the antimicrobial activity of different contact surfaces made of copper to effectively reduce microbial loads. The aim of the present study was to evaluate the antibacterial effect of copper surfaces on the transmission of two foodborne pathogens – Salmonella enterica and Listeria monocytogenes – and a poultry native microbiota bacterial species – Enterobacter cloacae. We also evaluated the impact of the poultry meat matrix on the antimicrobial activity of a copper surface. Our results...

Antimicrobial Susceptibility and Biofilm Production by Salmonella sp. Strains Isolated from Frozen Poultry Carcasses Rev. Bras. Ciênc. Avic.
Sereno,MJ; Ziech,RE; Druziani,JT; Pereira,JG; Bersot,LS.
ABSTRACT The objectives of this study were to evaluate the antimicrobial resistance and the biofilm-producing ability of Salmonella sp. strains isolated from frozen poultry carcasses. Antimicrobial susceptibility was tested by the disk-diffusion method. Biofilm-producing ability was determined in 96-well polystyrene microplates stained with crystal violet at 1%. Out of the 22 strains tested, all were multiresistant, that is, resistant to more than three antimicrobial classes, and 72.7% were able to form biofilms. The highest resistance rates obtained were against sulfonamides, tetracycline, and quinolones. On the other hand, 100% of the strains were sensitive to chloramphenicol. According to the rate of biofilm formation, 3 (13.6%) and 13 (59.1%) strains...

Konell,K.; Gelinsk,M.A.; Benetti,T.M.; Abrahão,W.M..
The aim of this study was the detection of Campylobacter sp. in raw chicken sausages using the methods ISO 10272-1 and ISO 10272-2. The overall prevalence of Campylobacter sp. in the samples tested was 16.67%, representing a serious risk to the health of consumers, particularly if measures guaranteeing proper cooking of foods and prevention of cross-contamination are not adopted. Furthermore, the majority of campylobacteriosis cases in humans are caused by consumption or improper handling of contaminated raw or undercooked poultry meat, which constitute the main vehicle of this infection.

Evaluating two systems of poultry production: conventional and free-range Rev. Bras. Ciênc. Avic.
Lima,AMC; Nääs,IA.
The improvement in production technology was the major factor that lead Brazil to become the third largest poultry producer. The improvement was world´s based on the careful control of several aspects, including which nutrition and management (environment, health and rearing systems). Nowadays, the search for good welfare conditions is a global tendency in animal production. Concomitantly, an extensive production system of free-range broilers has been increasing in Brazil. This study evaluated in situ production indexes of two different commercial broiler productions, an intensive and conventional (farm A) and a semi-extensive free-range production (farm B), in order to assess the relationship between productivity and management. It was observed that the...

Impact of Sanitary and Technical Measures on Brazilian Exports of Poultry Meat AgEcon
Fassarella, Luiza Meneguelli; Souza, Mauricio Jorge Pinto de; Burnquist, Heloisa Lee.
The major objective of this work is to evaluate the effects of technical and sanitary measures introduced by the main world importers upon Brazilian poultry meat in the international market. The impact of the measures is estimated using a gravity model constructed with disaggregated data about bilateral poultry meat between Brazil and its major trade partners for the period from 1996 to 2009. The gravity model is estimated with a fixed effects model and the results indicate that the impact of TBT and SPS measures upon Brazilian poultry meat exports is ambiguous. The results indicated that the existence of technical and sanitary regulations related to labelling might be stimulating trade of this product, while the presence regulations related to compliance...

Microbiological quality of poultry meat: a review Rev. Bras. Ciênc. Avic.
Mead,GC.
Poultry meat can be contaminated with a variety of microorganisms, including those capable of spoiling the product during chill storage, and certain foodborne pathogens. Human illness may follow from handling of raw meat, undercooking or mishandling of the cooked product. While Salmonella and Campylobacter spp. remain the organisms of greatest global concern in this respect, others present include the more recently reported Arcobacter and Helicobacter spp. and, occasionally, verotoxigenic Escherichia coli. Also considered here is the growing problem of antimicrobial resistance among poultry-associated pathogens. Because of the need for a systematic and universally applicable approach to food safety control, the Hazard Analysis Critical Control Point...

Mortadella sausage formulations with mechanically separated layer hen meat preblended with antioxidants Scientia Agricola
Trindade,Marco Antonio; Castillo,Carmen Josefina Contreras; Felício,Pedro Eduardo de.
At the end of the laying cycle, layer hens can be used for production of mechanically separated meat (MSML) for sausage manufacture. However, mechanically separated meats are susceptible to lipid and pigment oxidation during storage, problems that could be prevented by the use of antioxidants present in curing additives traditionally used in meat processing. The objective of this work was to evaluate the quality and stability of Mortadella produced with MSML added of sodium erythorbate (1000 ppm) and sodium nitrite (150 ppm) through preblending or during chopper processing (control treatment), after long term frozen storage of raw meat ingredient. The products were stored for 40 days at 7ºC and evaluated in regard to the oxidative stability of lipids...

Options, challenges and potentials of poultry meat: an empirical investigation on european consumers Rev. Bras. Ciênc. Avic.
Vukasović,T.
Agricultural market developments have attracted considerable attention recently, due to increasing consumer food prices and sharp short term price fluctuations of agricultural commodity prices. This medium term outlook provides a projection for major EU agricultural commodity markets and agricultural income until the year 2022, based on a set of coherent assumptions. Under these assumptions, agricultural commodity prices are expected to stay firm over the medium term, supported by factors such as the growth in global food demand, the development of the biofuel sector and a prolongation of the long-term decline in food crop productivity growth. EU commodity markets are projected to remain balanced on average over the outlook period, without the need for...
