Biofilms in milk cooling tanks compromise product quality even on farms. Due to the lack of studies of this topic, this study evaluated the microbiological conditions of raw milk cooling tanks on farms and characterized the microorganisms isolated from these tanks. Samples were wiped off with sterile swabs from seven milk cooling tanks in three different points in each tank. Mesophiles and psychrotrophic counts were performed in all samples. The isolation of Pseudomonas spp., Bacillus cereus and atypical colonies formed on selective media were also performed, totalizing 297 isolates. Endophytes are being considered for use in biological control, and the enzymes they secrete might facilitate their initial colonization of internal plant tissues and direct interactions with microbial pathogens. Microbial proteases are also biotechnologically important products employed in bioremediation processes, cosmetics, and the pharmaceutical, photographic and food industries. A importância das bactérias conhecidas como rizóbia no estabelecimento de leguminosas tem sido amplamente reconhecida. Porém, poucas são as informações referentes ao perfil enzimático dessas bactérias benéficas. O estudo objetivou investigar a influência do pH do meio sólido sobre a atividade enzimática de rizóbios nativos da Amazônia Central. Essa triagem constitui o primeiro passo no processo de seleção de microorganismos benéficos, como produtores de enzimas de aplicação biotecnológica. O objetivo deste trabalho foi avaliar o efeito da natação sustentada sobre a atividade digestiva proteolítica e o crescimento de juvenis de matrinxã (Brycon amazonicus), alimentados com dois níveis de proteína. Foram utilizados 240 peixes, tratados com 28 ou 38% de proteína bruta (PB), durante 60 dias, em duas situações distintas: em natação sustentada à velocidade de uma vez e meia o comprimento corporal por segundo, e em sistema convencional de cultivo, sem movimento forçado. Os peixes em natação sustentada e alimentados com 28% de PB apresentaram melhor desempenho, expresso como maior crescimento, alta taxa de crescimento específico, maior ganho de peso e melhor eficiência alimentar. Abstract Metagenomics approaches have been of high relevance for providing enzymes used in diverse industrial applications. In the current study, we have focused on the prospection of protease and glycosyl hydrolase activities from a soil sample by using the lacZα -based plasmid pSEVA232. For this, we used a functional screen based on skimmed milk agar and a pH indicator dye for detection of both enzymes, as previously reported in literature. Post mortem tenderization is one of the most unfavourable quality changes in fish muscle and this contrasts with muscle of mammalian meats. The tenderization can be partly attributed to the acid lysosomal cathepsins and cytosolic neutral calcium-activated calpains. In this study, these proteases from fish and bovine muscles were quantified and compared. The cathepsin B and L activities were in more important amounts in sea bass white muscle than in bovine muscle. The characterization of entomopathogenic microorganisms is important for the selection of more effective strains for use in integrated pest-control programs. Five Nomuraea rileyi strains (SA86101, GU87401, SR86151, CG128 and VA9101) were characterized using random amplified polymorphic DNA (RAPD) analysis, virulence studies and assessment of chitinolytic and proteolytic activity. RAPD analysis divided the strains into two groups with a similarity coefficient of 0,76%, group 1 consisting of strains SA86101, GU87401 and SR86151 and group 2 of strains CG128 and VA9101. Abstract This study evaluated the chemical and volatile composition of jujube wines fermented with Saccharomyces cerevisiae A1.25 with and without pulp contact and protease treatment during fermentation. Yeast cell population, total reducing sugar and methanol contents had significant differences between nonextracted and extracted wine. The nonextracted wines had significantly higher concentrations of ethyl 9-hexadecenoate, ethyl palmitate and ethyl oleate than the extracted wines. Two metabolism assays were carried out to determine corn and soybean meal metabolizable energy when enzymes were added. In the first trial, 35 cockerels per studied feedstuff (corn and soybean meal) were distributed in a completely randomized experimental design with four treatments of seven replicates of one bird each. The evaluated treatments were: ingredient (corn and soybean meal) with no enzyme addition, with the addition of an enzyme complex (xylanase, amylase, protease - XAP), xylanase, or phytase. Litopenaeus vannamei, which is the most common shrimp species cultivated in the northeast of Brazil, is very susceptible to microbial diseases, and this consequently affects productivity. There are reports of bacteria, viruses and protozoa in these shrimp, but not fungi. This study aims to isolate and identify fungi present in shrimp Litopenaeus vannamei, and in their nursery waters, at two breeding farms in Brazil. Fish sauces are traditionally used in most Asian countries. Whatever the process, the principle is the same i.e. a fish autolysis in saline media followed by a fermentation step. Not less than 18 months are needed to obtain a brown liquid rich in salt and amino acids. Two psychrophilic bacterial samples were isolated from King George Island soil, in Antarctica. The phylogenetic analysis based on the 16S rRNA (rrs) gene led to the correlation with the closest related isolates as Sporosarcina aquimarina (99%) and Algoriphagus antarcticus(99%), with query coverage of 99% and 98%, respectively.The spent culture media from both isolates displayed proteolytic activities detected by sodium dodecyl sulfate polyacrylamide gel electrophoresis containing gelatin as protein substrate. Avaliaram-se os efeitos da protease sobre o coeficiente de metabolizabilidade dos nutrientes em dietas contendo farinha de penas (2,0% na fase inicial e 3,0% na fase de crescimento) para frangos de corte machos, Cobb(r), de um a 32 dias de idade. Com o objetivo de conhecer as alterações metabólicas promovidas pelo Soil-borne wheat mosaic virus (SBWMV), um dos vírus economicamente mais importantes da cultura do trigo (Triticum aestivum), foram analisados os níveis de proteínas solúveis e determinadas as atividades da peroxidase e da protease em quatro cultivares (BRS Guabiju, BRS 194, BRS 179, BR 23) e uma linhagem (PF 980524) de trigo com diferentes níveis de resistência ao vírus.
