Chemical and Fatty acid composition of different cuts cooked or uncooked from yearling bulls fed oil sources Animal Sciences
Oliveira, Emanuel Almeida de; Sampaio, Alexandre Amstalden Moraes; Henrique, Wignez; Pivaro, Thiago Martins; Rosa, Bruna Laurindo; Fernandes, Alexandre Rodrigo Mendes.
This study evaluated the chemical and lipid composition of uncooked or cooked loin (Longissimus thoracis) and rump (Biceps femoris) in samples of 2.54 cm thick from 35 carcasses of Nellore young bulls finished in feedlot for 96 days and slaughtered at an average weight of 532.17 ± 30.25 kg and 24 months of age. The rump had the lowest level of protein and ash (18.57 and 0.90%, respectively) and the highest level of ether extract compared to loin (3.37 and 1.90%, respectively). Higher levels of cholesterol were found in rump compared to loin (40.91 e 30.93 mg 100 g-1, respectively). The uncooked loin showed lower content of saturated fatty acids and higher content of polyunsaturated fatty acids. The best values for the omega-6: omega-3 ratio was observed in...

In vitro degradation and gas production of brachiaria grass with levels of biodiesel byproducts Animal Sciences
Freire, Juliana Marques; Silva, Aderbal Marcos de Azevedo; Carneiro, Heloisa; Pereira Filho, José Morais; Bezerra, Leilson; Bidler, Denise Cristiane.
This study aimed to evaluate the in vitro degradability and gas production in diets containing byproducts from the national biodiesel industry (castor bean, canola, forage radish and black sunflower) replacing Brachiaria grass in four levels (0, 30, 50 and 70%). The inoculum for in vitro incubation was obtained from three fistulated Holstein cows. The experimental design was 4 x 4 factorial completely randomized experimental design consisting of four byproducts and four levels. All byproducts studied had a significant effect (p < 0.05) on in vitro digestibility. The castor bean byproducts promoted the lowest cumulative gas production at the end of 48 hours incubation. Regarding digestibility, the byproducts of canola and radish at 70% level did not...

Relationship of total bacterial and somatic cell counts with milk production and composition – multivariate analysis Animal Sciences
Botton, Fernanda Scolari; Alessio, Dileta Regina Moro; Busanello, Marcos; Schneider, Catia Letícia Corrêa; Stroeher, Fernanda Hammes; Haygert-Velho, Ione Maria Pereira.
This study was realized to evaluate the monthly production, composition and quality of milk (total and defatted dry extract, lactose, fat and protein) and their relation to somatic cell count (SCC) and total bacterial count (TBC) using multivariate statistical analyses. The data are from a dairy farm for the period of two years (from January 2015 to December 2016). The SCC and TBC variables were transformed to somatic cell score (SCS) and log10 (LogTBC). Factor analysis, discriminant analysis and cluster analysis were used. Through factor analysis, it was found two factors that together explained 69.5% of the total data variation. The first factor represented the inverse relationship between lactose versus fat and protein content, while the second factor...
