A carne caprina pode ser consumida na forma in natura ou como produto processado, isto é: embutidos, carne salgada e seca, e outros. No caso das carnes, o aproveitamento racional faz-se necessário, uma vez que direciona os cortes nobres para consumo e o restante para o processamento. Define-se mortadela como um produto cárneo industrializado, obtido de uma emulsão das carnes de animais de açougue, acrescido ou não de toucinho, adicionado de ingredientes, embutido em envoltório natural ou artificial, em diferentes formas, e submetido ao tratamento térmico adequado. Effects of packaging and temperature on postharvest of atemoya Rev. Bras. Frutic.

Effects of refrigerated storage and different packages on postharvest behaviour of fruits of atemoya (Annona cherimola x A. squamosa) cv. PR3 were investigated. Fruits were individually sealed in copolymer (PD-955) and low-density polyethylene (LDPE) bags and stored for 21 days at 15°C or 25°C. Then they were unwrapped and maintained at 25°C, for ripening. Weight loss and firmness of fruits were both affected by storage time, temperature and packaging. Weight loss in packaged atemoyas was lower than in the control, non-wrapped fruits. A non-trained panel scored the atemoyas for overall eating quality and appearance. Fruits sealed in LDPE did not ripen, probably due to an injurious atmosphere developed inside the package. Evaluation of culture media for counts of Bifidobacterium animalis subsp. lactis Bb 12in yoghurt after refrigerated storage BJM

The agar RCPB pH5 has been considered a good alternative for counts of Bifidobacterium in yoghurt. However, during the refrigerated storage of yoghurt it is extremely difficult to count this microorganism due to the size of the colonies, which are so small they require the aid of a stereoscope to count them. Another agar, MRS-LP, has been also recommended for counts of Bifidobacterium in the presence of yoghurt bacteria. Abstract The camu-camu tree (Myrciaria dubia (Kunth) Mc Vaugh) is fruit-bearing tree belonging to the family Myrtaceae. This work was conducted with the purpose of evaluating the type of storage temperature and package which allow better conservation of the quality attributes of camu-camu. The experimental design utilized was the completely randomized with three replications in a factorial arrangement (3x3x8), constituted of three different storage temperatures (laboratory ambiente or 25 ± 2 °C, 15 °C and 20 °C), three types of packages (no package, PET and PVC) and fourteen days’ storage, the fruits being analyzed every two days. Considerando a importância comercial do caqui ‘Fuyu’, a pesquisa teve como objetivos avaliar o efeito da promalina aplicada durante o cultivo do caqui ‘Fuyu’ bem como o uso de diferentes temperaturas de armazenamento na qualidade pós-colheita dos frutos. A utilização da câmara fria (4ºC, uso comercial) manteve a boa firmeza dos frutos para a comercialização acima de 16 dias, para os frutos, sem e com a aplicação de promalina no pomar, enquanto que, na temperatura ambiente (20-26ºC), os tempos foram de 16 e oito dias, respectivamente. A promalina contribuiu para a melhoria da firmeza dos frutos armazenados em câmara fria, mas não produziu o mesmo efeito em frutos armazenados em temperatura ambiente. The aim of this study was to investigate the impact of superchilling (-2 degrees C) on the evolution of Listeria monocytogenes and organoleptic characteristics of cold-smoked salmon samples. An Hadamard matrix experimental design was carried out on artificially inoculated samples stored at +4 degrees C for 10 d and at +8 degrees C for 18 d to know the influence of four factors: salt content, strain, cold stiffening and superchilling time, on the level of L.monocytogenes in cold-smoked salmon.
