A falta de maciez da carne brasileira tem reflexos negativos sobre a qualidade do produto final, fazendo com que os grandes mercados mantenham-se fechados para comercialização. Dessa forma, objetivou-se avaliar as características qualidade da carcaça de 68 bovinos machos da raça Nelore Mocho (marca OB), inteiros, oriundos de uma população segregante para maciez da carne. Os animais foram abatidos ao apresentarem 5 mm de espessura de gordura e/ou 500 kg de peso vivo. Após 24 horas em câmara fria foi realizada a mensuração do pH pelo frigorífico. Carcass and meat characteristics of crossbred steers submitted to different nutritional strategies at growing and finishing phases Ciência Rural

This study was carried out to evaluate the effects of different nutritional strategies at growing and finishing phases on carcass and meat characteristics from 24 crossbred steers predominatly Holstein, slaughtered at 15 months of age and with 395.00kg of body weight. At the growing phase, the animals were maintained on Brachiaria brizantha pasture with two levels of supplementation in amounts equivalent to 0.5 or 1.0% of body weight. Subsequently, the animals were finished in feedlot with diets composed of 50 or 80% of concentrate. The high level of the concentrate at the finishing phase increased significantly (P<0.05) the hot carcass yield (50.16 vs. 48.62%). ABSTRACT The objective of this experimental study was to evaluate the effects of different dietary energy sources on the carcass and meat traits of feedlot Nellore bulls. A total of 48 Nellore bulls at 32 months of age with 354.35±19.56 kg body weight were studied for 85 days. The bulls were allotted to four groups of 12 individuals: Whole corn grain - diet based on whole corn grain; Ground corn - diet based on ground corn grain; Citrus pulp - diet based on citrus pulp; and Steam-flaked corn - diet based on steam-flaked corn. For several decades, beef carcass evaluation for grading or research purposes has relied upon subjective visual scores, and manually taken measurements, but in recent times there has been a growing interest in new technologies capable of improving accuracy of estimates. Equations to predict weight and yield of beef pistol subprimal cuts were developed in this work using digital image analysis (VIA) of the 12th rib steak. Effect of diet and genotype on carcass characteristics of feedlot hair sheep R. Bras. Zootec.

Itwas evaluated qualitative characteristics of confined hair sheep submitted to diets with two energy levels. Eighteen lambs from each genotype were used: Morada Nova, Santa Inez and Dorpper x Santa Inez crossbreds. The rations with the lowest and the highest energy level were made up with 2.5 and 2.94 Mcal EM/kg DM, respectively. It was evaluated conformation and finishing carcass, in addition to leg tissue composition. The score for conformation was significantly higher for animals kept in diet with the highest energy level and for Dorpper x Santa Inês crossbreds. ABSTRACT Aiming at breeding heifers with 14-15 months of age, 100 Hereford calves were subjected to different feeding systems. Heifers grazed on a natural pasture in early winter, fed or not a supplement (14% crude protein; 72% total digestible nutrients), were transferred to a ryegrass pasture for 73 days, and then returned to a natural pasture for 15 days until the beginning of the breeding season.
