This study analyzed the drying process and the seed quality of adzuki beans (Vigna angularis). Grains of adzuki beans, with moisture content of 1.14 (decimal dry basis) at harvest and dried until the moisture content of 0.11 (decimal dry basis.) were used. Drying was done in an experimental drier maintened at controlled temperatures of 30, 40, 50, 60, and 70 ºC and relative humidity of 52.0, 28.0, 19.1, 13.1, and 6.8%, respectively. Physiological and technological seed quality was evaluated using the germination test, Index of Germination Velocity (IGV), electrical conductivity, and water absorption, respectively. Maturity stage and drying method are the factors that most influence coffee seed quality. The objective of this study was to assess the physiological quality and investigate the electrophoretic patterns of catalase and endo-ß-mannanaseenzymes and heat resistant proteins in coffee seeds harvested at different phenological stages and dried under different conditions. Este estudo foi desnvolvido com o objetivo de verificar o comportamento das sementes de Ilex paraguariensis, submetidas a niveis crescentes de desidratacao e posterior avaliacao de viabilidade. Sementes de I. paraguariensis fora colhidas em Ivai, PR, em fevereiro de 1998. Em marco desse ano, as sementes foram acondicionadas em sacos de papel "kraft" e submetidas as condicoes de camara seca (14. C +- 1. C e 38% +- 3% UR), para secagem, por sete semanas, com avaliacoes semanais do teor de agua e da viabilidade pelo teste de tetrazolio. Parte das sementes provenientes de cada periodo de secagem foi estratificada em areia, em condicoes de casa de vegetacao, por 200 dias. Seed drying, reducing seed moisture content after harvesting and before seed storage is a key factor to maintain a long-shelf life. The viability of rice seeds can be maintained for 5-10 years at ambient temperature if they are stored in a moisture- and air-proof container with seed moisture content of 4-6%. The purpose of this research was to study the potential of zeolite drying beads to dry rice seeds to 6 % seed moisture content. Two experiments were carried out by blending the drying beads with rice seed var. Pitsanuloke 2at three different bead to seed ratios, three drying temperatures (30 o C, ambient temp. and 40 0C ) and four drying periods (12, 24, 36 and 48 hours). During high-temperature treatment, starch is gelatinized and amylose can simultaneously form with lipids present at the rice bran to be the amylose-lipid complexes. The extent of complex formation closely depends on the degree of starch gelatinization. The objectives of this work were therefore to study the effect of drying media, hot air (HA), humidified hot air (HHA) and superheated steam (SHS), and operating condition on drying kinetics and starch hydrolysis or the glycemic index (GI) of brown rice. The experimental results revealed that the degree of gelatinization and degree of crystallinity of amylose-lipid complexes of treated brown rice by HHA and SHS drying had higher degree than HA drying because of condensation.
