Resumo O objetivo desta revisão de literatura foi descrever os procedimentos relacionados ao manejo pré-abate que permitem um eficiente abate humanitário para os suínos. O manejo pré-abate é definido como o conjunto de práticas com os animais desde a propriedade até o frigorifico. Esses procedimentos receberam maior atenção a partir do momento em que o estresse foi diagnosticado entre os principais responsáveis por perdas relacionadas à qualidade de carne e economia de todo o sistema. Os eventos que ocorrem nas 24 horas que antecedem o abate dos suínos promovem perdas quantitativas e qualitativas na produção animal. Os procedimentos de embarque, transporte, desembarque e período de descanso são fatores que podem promover estresse nos animais. Estes podem causar distúrbios na homeostase dos suínos, influenciando no bem-estar e nos aspectos qualitativos da carne. Para melhorar o bem-estar dos suínos e a qualidade do produto final, alguns pontos devem ser considerados no manejo pré-abate, tais como a forma como os suínos são manejados e as condições de transporte. |

Two experiments were carried out to evaluate the influence of genetic group, pregnancy and animal age on the carcass traits and commercial cut patterns of sheep carcasses. In the first experiment, the effect of pregnancy and genetic group were evaluated on 61 eleven month old Santa Inês ewes and their crosses with Texel, Dorper and Ile de France. Experiment 2 was carried out with 132 Santa Inês nulliparous or lambed ewes slaughtered with ages ranging from 6 to 48 months to evaluate the influence of age on carcass traits. The objective was to characterize cattle slaughtered from the region of Lavras - MG. In the public abattoir 720 bovines were identified and slaughtered from September 20th through November 20th of 2004. Variables such as: genetic origin, live weight, body condition, age, and sex were studied. At arrival, animals were weighed and classified according to their genetic origin. Before slaughter, their body condition (BC) was determined on a 1 - 9 scale. The effects of body condition recovery (BC), carcass electrical stimulation (ES), aging time (AT 7 - 14 days), and calcium chloride injection on the meat characteristics of Santa Inês ewes (±5 years old) slaughtered immediately after weaning or after the body condition recovery period were studied. The carcass temperature, pH, shear force (SF), cooking loss (CL), meat color (L*, a*, b*), and meat tenderness were evaluated. A completely randomized design in a 2 × 2 × 2 × 3 (BC × ES × CaCl2 × AT) factorial arrangement was used, and the sensory tenderness data were analyzed using the table of Minimum Number of Correct Answers for the Duo-Trio test. Our objective was to estimate the energy and protein requirements of Holstein young calves up to 87 days old. Forty-two Holstein calves aged 4 days were used. From these, ten were randomly selected and slaughtered to compose the baseline slaughter (BS) group. The remaining calves were randomly assigned to eight treatments in a 4 × 2 factorial using a completely randomized design. The treatments were 2, 4, 6, and 8 kg/day of milk (297 g/kg CP; 319 g/kg of fat) fed twice daily, and then harvested at 59 or 87 days of age.
