U.S. agriculture is undergoing a tidal wave of change in its structure. A shift to supply chains and away from commodities and commodity markets is the hallmark of this new wave. The new agriculture of the 21st century will bring with it a new geography that may be nothing short of a revolution for rural America. Supply chains will tend to concentrate activity geographically and change the local economic dynamic where they do locate. Finally, the tide of change in agriculture's structure means a whole new slate of policy issues. Concentration, market access, and the delivery mechanism for government support all become bigger concerns with supply chains. The dominant pattern in U.S. non-alcoholic drink: consumption over the past 25 years has been a steady increase in per capita soft-drink: consumption, largely at the expense of coffee (and to a lesser extent) milk consumption. Our findings suggest that the major factor governing this pattern is structural change. Specifically, trend was found to be statistically significant in three of the four equations estimated in the Rotterdam system. Moreover, the estimated trend-related changes in per capita consumption (-1.0 percent per year for milk, 2. 1 percent for soft drinks, and 3.7 percent for coffee and tea) leave at most 28 percent ofthe observed quantity variation for 1990-1994 to be accounted for by changes in relative prices, income, and advertising.... |

This study focuses on estimating wholesale pork primal demand relationships in order to determine their own-quantity flexibilities, whether these flexibilities have changed over time, and seasonal price fluctuations. A set of equations for pork loin, rib, butt, ham, pork belly, and picnic primals was estimated. Monthly data over an 11-year period were used to determine that own-quantity flexibilities varied across months, that they increased in absolute value over time for some primal cuts, and cold-storage stocks were used as an inventory control measure to reduce price variation for some primal cuts. |

An inverse live-hog model was estimated to analyze whether there has been a recent increase in the magnitude of live-hog, own-quantity demand flexibility. Estimating the impact of processing capacity-utilization rate changes on live-hog prices was a second objective of this research. Results indicate that live hog prices have become more responsive to changes in hog slaughter, slaughter weight, cold storage stocks, and changes in the processing capacity-utilization rate. Finally, model results indicate that the sharp increase in processing capacity-utilization rates, the increase in average dressed weight, and the increase in hog slaughter all had a negative effect on the live-hog prices. |

In recent years, structural changes in the hog sector, including increasing farm size and regional shifts in production, have altered manure management practices. Over the same period, changes to the Clean Water Act, new state regulations, and increasing local conflicts over odor have influenced manure management decisions. This study uses data from two national surveys of hog farmers to examine how hog manure management practices vary with the scale of production and how these practices evolved between 1998 and 2004. The findings provide insights into the effects of structural changes and recent policies on manure management technologies and practices, the use of nutrient management plans, and manure application rates. |

Meatpacking consolidated rapidly in the last two decades: slaughter plants became much larger, and concentration increased as smaller firms left the industry. We use establishment-based data from the U.S. Census Bureau to describe consolidation and to identify the roles of scale economies and technological change in driving consolidation. Through the 1970's, larger plants paid higher wages, generating a pecuniary scale diseconomy that largely offset the cost advantages that technological scale economies offered large plants. Rapid change in the size and ownership structure of U.S. hog production has created new and varied challenges for the industry. This report describes an industry becoming increasingly concentrated among fewer and larger farms, and becoming more economically efficient. These changes have not come without problems. The increasing market control and power concentrated among packers and large hog operations, and the manure management problem posed by an increasing concentration of hog manure on fewer operations, are paramount concerns.
