The root knot nematode (RKN), Meloidogyne incognita, is widespread worldwide and a major pathogen of several cultivated crops. The use of resistant genotypes is the most effective and environmentally sound way to manage RKN. In this study, we screened 16 selected sweet potato cultivars including Amanda, Bárbara, Beatriz, Beauregard, Brazlândia Branca, Brazlândia Rosada, Brazlândia Roxa, BRS Amélia, BRS Cuia, BRS Rubissol, Carolina Vitória, Duda, Júlia, Marcela, PA-26/2009, and Princesa obtained from Embrapa and Universidade Federal do Tocantins? germplasm bank. Oobjetivodesta pesquisa foi estudar a cinética de secagem de polpa de batata-doce biofortificadas emtemperaturas de 45, 55, 65e 75ºC;determinar o coeficiente de difusão efetivo durante a secagem;avaliar a composição proximal, pH, acidez, brix, compostos fenólicos, carotenoides, β-caroteno, capacidade antioxidante por ABT e DPPH, cor, microscopia eletrônica de varredura, ressonância magnética de alto campo e espectrometria de absorção de infravermelho, das farinhas de batata-doce biofortificada a diferentes temperatura de secagem 45,55,65 e 75°C. |

Beauregard sweet potato is an orange color crop rich in β-carotene, a precursor of vitamin A. β-carotene improve immunity and decrease of incidence of degenerative diseases. The objective of this work was to introduce sweet potato in the diet through of some food products, such as bread, cake and sweets. The effect of processing on the chemical composition, as well as the quantification of phenols and total carotenoids, antioxidant activity, and sensory acceptability were evaluated. Cakes and coconut sweets presented higher levels of carotenoids. Higher phenolic and antioxidant activity were verified in cocoa sweets.
