Characterization of starch from different non-traditional sources and its application as coating in ‘Palmer’ mango fruit Ciência e Agrotecnologia
Rodrigues,Antonio Augusto Marques; Santos,Luana Ferreira dos; Costa,Rayssa Ribeiro da; Félix,Débora Tamara; Nascimento,José Henrique Bernardino; Lima,Maria Auxiliadora Coêlho de.
ABSTRACT Yam, cassava, jackfruit seed and mango seed kernel have potential for the extraction and use as starch in the food industry of starch or for the formulation of biodegradable coatings. As a biodegradable coating, starch can be applied in fruits characterized by a fast maturation, such as mango, which requires technologies to increase its shelf life. The aim of this study was to characterize starch from four non-traditional sources and to evaluate their potential as coating for ‘Palmer’ mango fruit. Starches used were extracted from cassava, mango seed kernel, jackfruit seed, and yam, and had their physical, optical, and chemical properties characterized for later use as coatings of ‘Palmer’ mango fruit. Fruits were coated with 3% cassava starch,...

Effect of prestorage curing on storage life, internal and external qualities of sweet orange (Citrus sinensis) Rev. Bras. Frutic.
Aborisade,Abiola Titilola; Ajibade,Ayodeji Adeyeye.
Orange fruits from two seasons, in April and August 2006 representing late 2005 and early 2006 harvests respectively were cured in hot air at 36-37(0)C to 1%, 3%, 5% and 7% weight loss before storage at 28(0)C and 86% relative humidity (RH). The fruits were observed for incidence of decay, further weight loss, juice content, firmness or softening of the peel, total soluble solids (TSS), pH, titratable acidity, and colour during storage. Curing reduced the incidence of decay. All control fruits were rotten by day 21 in August harvest while 22.5% of the control was rotten by day 56 in the April harvest. Storage life was extended beyond 56 days in fruits cured with 1, 3, 5 and 7% in April harvest as there was no decay throughout, while decay incidence in...

Effects of diet and exercise training on neurovascular control during mental stress in obese women BJMBR
Tonacio,A.C.; Trombetta,I.C.; Rondon,M.U.P.B.; Batalha,L.T.; Kuniyoshi,F.H.S.; Laterza,M.C.; Suzuki,P.H.; Gowdak,M.M.G.; Barretto,A.C.P.; Halpern,A.; Villares,S.M.F.; Negrão,C.E..
Since neurovascular control is altered in obese subjects, we hypothesized that weight loss by diet (D) or diet plus exercise training (D + ET) would improve neurovascular control during mental stress in obese women. In a study with a dietary reduction of 600 kcal/day with or without exercise training for 4 months, 53 obese women were subdivided in D (N = 22, 33 ± 1 years, BMI 34 ± 1 kg/m²), D + ET (N = 22, 33 ± 1 years, BMI 33 ± 1 kg/m²), and nonadherent (NA, N = 9, 35 ± 2 years, BMI 33 ± 1 kg/m²) groups. Muscle sympathetic nerve activity (MSNA) was measured by microneurography and forearm blood flow by venous occlusion plethysmography. Mental stress was elicited by a 3-min Stroop color word test. Weight loss was similar between D and D + ET groups (87 ± 2...

Egg quality assessment at different storage conditions, seasons and laying hen strains Ciência e Agrotecnologia
Feddern,Vivian; Prá,Marina Celant De; Mores,Rúbia; Nicoloso,Rodrigo da Silveira; Coldebella,Arlei; Abreu,Paulo Giovanni de.
ABSTRACT Eggs are one of nearly perfect protein foods, offering nutrients of great biological value. However, during storage, egg albumen and yolk components may alter and deteriorate egg quality. Therefore, the aim of this work was to assess egg quality during 9-week storage. Parameters such as Haugh unit, weight loss, egg width and length, specific gravity, yolk and albumen dimensions and their pH were evaluated weekly. A total of 270 eggs (n=5) collected from two different hen strains were evaluated under room (20 to 35 °C in summer; 11.2 to 29.7 °C in autumn) and refrigerated (0 to 5 °C in summer; -3.1 to 6.5 °C in autumn) temperatures. For storage time, an unfolding analysis was accomplished by regression analysis using orthogonal polynomials. As a...

Electric paralyzation and reduction of weight loss in the processing of round-cooked spiny lobsters Ciênc. Tecnol. Aliment.
Ogawa,Masayoshi; Itó,Lauro Satoru; Melo,Francisco Erivan de Abreu.
This study proposes alternatives to the current methods of processing round-cooked lobster. The paralyzation of lobsters with direct electric shock consumes 10.526 x 10-3 kWh, which is significantly less than the 11 kWh required by the traditional thermal-shock method (based on 60 kg of lobsters). A better weight gain was obtained by immersion of paralyzed lobsters in brine before cooking. Systematic trials combining 3, 6, or 9% brine concentrations with immersion periods of 15, 30, or 45 minutes were performed in order to determine the best combinations. A mathematical model was designed to predict the weight gain of lobsters of different sizes in any combination of treatments. For small lobsters, a 45 minutes immersion in 6% brine gave the best response...

Forced-air, vacuum, and hydro precooling of cauliflower (Brassica oleracea L. var. botrytis cv. Freemont): part I. determination of precooling parameters Ciênc. Tecnol. Aliment.
Alibas,Ilknur; Koksal,Nezihe.
The aim of the present study was to precool cauliflower using forced-air, vacuum and high and low flow hydro cooling methods. The weight of the precooled cauliflower heads (5000±5 g) was measured before they were placed in standard plastic crates. Cauliflower heads, whose initial temperature was 23.5 ± 0.5 ºC, were cooled until the temperature reached at 1 ºC. During the precooling process, time-dependent temperature and energy consumption were measured, and during vacuum precooling, the decreasing pressure values were recorded, and a curve of time-dependent pressure decrease (vacuum) was built. The most suitable cooling method to precool cauliflower in terms of cooling time and energy consumption was vacuum, followed by the high and low flow hydro and...

Fruit quality attributes of low chilling requirement ‘Snowchaser’ blueberry cultivated in Brazil Rev. Bras. Frutic.
Jimenes,Isabela Maria; Silva,Simone Rodrigues da; Tezotto-Uliana,Jaqueline Visioni; Cantuarias-Avilés,Tatiana.
Abstract In Brazil there are still few studies on the post-harvest quality of low-chill blueberry cultivars, which have been recently introduced in the country. ‘Snowchaser’ blueberries were evaluated during a six-day storage period regarding fruit physical and chemical properties, and its antioxidant capacity. During fruit storage there was an increased weight loss and maintenance of some skin color properties such as luminosity (L*) and b*, whereas the values of parameter a* decreased and chroma (C) values increased. The levels of anthocyanins and flavonoids in the pulp increased, as well as the antioxidant activity. Maximum fruit shelf life at room temperature was six days without reduction on the antioxidant activity along the period, which is...

GLUT4 protein expression in obese and lean 12-month-old rats: insights from different types of data analysis BJMBR
Seraphim,P.M.; Nunes,M.T.; Machado,U.F..
GLUT4 protein expression in white adipose tissue (WAT) and skeletal muscle (SM) was investigated in 2-month-old, 12-month-old spontaneously obese or 12-month-old calorie-restricted lean Wistar rats, by considering different parameters of analysis, such as tissue and body weight, and total protein yield of the tissue. In WAT, a ~70% decrease was observed in plasma membrane and microsomal GLUT4 protein, expressed as µg protein or g tissue, in both 12-month-old obese and 12-month-old lean rats compared to 2-month-old rats. However, when plasma membrane and microsomal GLUT4 tissue contents were expressed as g body weight, they were the same. In SM, GLUT4 protein content, expressed as µg protein, was similar in 2-month-old and 12-month-old obese rats, whereas...

Internal quality of eggs coated with whey protein concentrate Scientia Agricola
Alleoni,Ana Cláudia Carraro; Antunes,Aloísio José.
The functional properties of foods can be preserved when they are coated with edible films, since both the loss of moisture and the transport of O2 and CO2 are reduced. The objectives of this work were: to compare weight loss, Haugh units, and albumen pH between fresh eggs and eggs coated with whey protein concentrate (WPC), under six storage periods (3, 7, 10, 14, 21 and 28 days), at 25°C. During the entire storage period, regardless of whether the eggs were coated or not, the Haugh unit values and the weight loss decreased, and differences between values from the first to the last period were lower for coated eggs. Albumen pH increased. The Haugh unit values for coated eggs were similar to those found in literature references when the same storage period...

Martínez G,Ingrid; Zagal V,Erick; Ovalle M,Carlos; Coûteaux,Marie-Madeleine; Stolpe,Neal B; Valderrama V,Natalia.
The ecosystems of the Mediterranean interior dryland of Chile, dominated by an espinal agroecosystem of Acacia caven (Molina) Molina, show low productivity as a result of soil degradation. The objective of this study was to evaluate litter decomposition of A. caven and Lolium multiflorum Lam. in espinal ecosystems: well preserved (Wp) 50 to 80%, typical (Pd) 25 to 50%, and degraded (De) with 10 to 25% cover. During 420 d and starting in April 2004 until August 2005, weight loss in litter bags and chemical composition (hemicellulose, cellulose, lignin, non-structural components, ash, N, C, C/N ratio, and P) were determined by using near infrared reflectance spectroscopy (NIRS) and the Van Soest protocol. Weight loss ranged from 31 to 52% in L. multiflorum...

Obesity-related gene ADRB2, ADRB3 and GHRL polymorphisms and the response to a weight loss diet intervention in adult women Genet. Mol. Biol.
Saliba,Louise F.; Reis,Rodrigo S.; Brownson,Ross C.; Hino,Adriano A.; Tureck,Luciane V.; Valko,Cheryl; Souza,Ricardo L.R. de; Furtado-Alle,Lupe.
The individual response to diet may be influenced by gene polymorphisms. This study hypothesized that ADRB2 (Gln27Glu, rs1042714 and Arg16Gly, rs1042713), ADRB3 (Trp64Arg, rs4994) and GHRL (Leu72Met, rs696217) polymorphisms moderate weight loss. The study was a seven weeks dietary weight loss intervention with Brazilian adult obese women (n = 109). The body mass index (BMI) was calculated and polymorphisms in these genes were assessed by real-time PCR assays. Two-way repeated-measures ANOVA (2 x 2) were used to analyze the intervention effect between polymorphisms and BMI over the period and after stratification for age and socioeconomic status (SES). The weight loss intervention resulted in decreased BMI over the seven-week period (p < 0.001), for high...

Post-harvest quality model of pineapple guava fruit according to storage and weather conditions of cultivation AGRIAMBI
Parra-Coronado,Alfonso; Fischer,Gerhard; Camacho-Tamayo,Jesús H..
ABSTRACT The post-harvest quality of pineapple guava fruit is determined by the storage and prevailing weather conditions during growth and development. This study proposes a model for post-harvest fruit quality according to the storage and weather conditions in the pineapple guava growing region. Physiologically ripe fruit were collected during two harvests from two locations within the Department of Cundinamarca (Colombia): Tenjo and San Francisco de Sales. The fruits were stored at 18 ± 1 °C (76 ± 5% relative humidity (RH), over 11 days) and at 5 ± 1 °C (87 ± 5% RH, over 31 days), and the quality attributes were evaluated every two days. Models of the most significant physio-chemical quality characteristics of the post-harvest fruit were developed by...

Quality of pitaya fruit (Hylocereus undatus) as influenced by storage temperature and packaging Scientia Agricola
Freitas,Sérgio Tonetto de; Mitcham,Elizabeth Jeanne.
Pitaya (Hylocereus undatus) is an exotic non-climacteric fruit that reaches its best eating quality when harvested ripe, decreasing thereafter during storage. Our objectives were to determine the best combination of storage temperature and use of perforated plastic bags to maintain the postharvest quality of the fruit. Fruits were stored at 5, 7, or 10 ºC with and without a perforated plastic bag for 20 days, followed by five days at 20 ºC without the bag for shelf-life determination. Storage at 5 ºC, followed by 7 ºC maintained better visual appearance of the pitaya fruit after 20 days, by reducing decay incidence and severity, and maintaining greener bracts compared with fruit stored at 10 ºC. Pitaya fruit stored at 5 ºC without a perforated plastic bag...
