This research aims to study the training needs on food processing and marketing of community enterprise groups in Khon Kaen province. The subject matters of training were divided into 49 topics on plant processing, 41 topics on meat processing and 23 topics on marketing. Data were collection by interviewing 196 members during January - March 2012. The collected data were analyzed by computer program for frequency, percentage, minimum, maximum, standard deviation, t-test and F-test. The levels of need for training were assigned into three values, high equal 3, low equal 2 and none equal 1. The results showed that, 112 group members who had main food processing activity on plant products had a high level of training need on the topic making rice cracker and 84 group members who had main food processing activity on meat products had a high level of training need on making pickled fish. For marketing aspect, all group members had a high level of training need on identifying market place, standards of Food and Drug Agency, storage of processed products, and standards of community products. The comparison of training need levels by age, number of training participation and duration of membership of group members showed statistically significant differences in some topics
การวิจัยเรื่องนี้มีวัตถุประสงค์เพื่อศึกษาความต้องการฝึกอบรมด้านการแปรรูปอาหารและการตลาดของสมาชิกกลุ่มวิสาหกิจชุมชนแปรรูปอาหารในจังหวัดขอนแก่น แบ่งเป็น ความต้องการฝึกอบรมด้านการแปรรูปอาหาร แยกเป็น เกี่ยวกับพืช จำนวน 49 หัวข้อ เกี่ยวกับสัตว์ จำนวน 41 หัวข้อ และด้านการตลาด จำนวน 23 หัวข้อ เก็บรวบรวมข้อมูลโดยการสัมภาษณ์สมาชิกกลุ่ม จำนวน 196 ราย ในเดือนมกราคม - มีนาคม พ.ศ.2555 วิเคราะห์ข้อมูลด้วยโปรแกรมคอมพิวเตอร์ เพื่อหาค่าความถี่ ค่าร้อยละ ค่าต่ำสุด ค่าสูงสุด ค่าเบี่ยงเบนมาตรฐาน ค่า t-test และค่า F-test โดยกำหนดค่าคะแนนความต้องการฝึกอบรมเป็น 3 ระดับ ได้แก่ ต้องการมากเท่ากับ 3 ต้องการน้อยเท่ากับ 2 ไม่ต้องการเท่ากับ 1 ผลการศึกษา พบว่า ในด้านการแปรรูปอาหารสมาชิกกลุ่มที่แปรรูปผลิตภัณฑ์จากพืชเป็นหลักซึ่งมีจำนวน 112 คน มีความต้องการฝึกอบรมระดับมากในหัวข้อการแปรรูปข้าวแต๋น สมาชิกกลุ่มที่แปรรูปผลิตภัณฑ์จากเนื้อสัตว์เป็นหลักซึ่งมีจำนวน 84 คน มีความต้องการฝึกอบรมระดับมากในหัวข้อการแปรรูปปลาส้ม ส่วนในด้านด้านการตลาด ทั้งสมาชิกกลุ่มที่แปรรูปผลิตภัณฑ์จากพืชและจากเนื้อสัตว์มีความต้องการมาก เรื่อง การหาแหล่งจำหน่าย มาตรฐานองค์การอาหารและยา การเก็บรักษาผลิตภัณฑ์ และมาตรฐานผลิตภัณฑ์ชุมชน ผลการเปรียบเทียบความต้องการฝึกอบรมจำแนกตาม อายุ จำนวนครั้งของการเข้าฝึกอบรม และระยะเวลาการเป็นสมาชิกกลุ่ม พบว่า สมาชิกกลุ่มมีระดับความต้องการฝึกอบรมแตกต่างกันอย่างมีนัยสำคัญทางสถิติในบางหัวข้อ
