Actualmente los productores mexicanos de papa fresca (Solanum tuberosum L.) sostienen que un aumento en el consumo per cápita sería la solución a los problemas relacionados con el mercado del tubérculo. Con la finalidad de conocer la tendencia del consumo de papa fresca en el largo plazo, se formuló y estimó un modelo de ecuaciones simultáneas compuesto de dos ecuaciones de oferta, una de demanda, cuatro ecuaciones de precios y dos identidades; el modelo fue estimado por el método de mínimos cuadrados ordinarios en dos etapas usando datos nacionales anuales en el periodo 1960-2006. Los resultados indican que en el periodo 2000-2007 el consumo per cápita anual de papa fresca fue de 16 kg por habitante, y que los factores que explican el comportamiento de esta variable son: el precio al consumidor de la papa (PCRP), el precio de la tortilla (PTR), el precio al consumidor del huevo (PCHR), el precio al consumidor del arroz (PCAR), el precio al consumidor de la carne de cerdo (PCCCR), el precio al consumidor de la carne de pollo (PCCPR), el presupuesto para el consumo real per cápita (PCRP) y la cantidad demandada de papa con un año de retraso (QDPt-1), con elasticidades de -0.2, 0.2, -0.1, -0.2, -0.004, -0.3, 0.2 y 0.13, respectivamente. La tendencia de los factores que afectan el consumo de papa fresca indica que en el largo plazo el consumo per cápita anual será de 20 kg por habitante, cifra muy inferior a los más de 80 kg por habitante consumidos en la actualidad por los europeos; por lo tanto, los productores nacionales deben buscar dar valor agregado a la papa fresca, a través del procesamiento del producto. _______________ ANALYSIS OF THE COMSUMPTION TENDENCY OF FRESH POTATO (Solanum tuberosum L.)IN MEXICO. ABSTRACT: Currently, the Mexican producers of fresh potato (Solanum tuberosum L.) argue that an increase in the per capita consumption would be the solution to the problems related with the potato market. With the objective of knowing the consumption tendency of fresh potato in the long-run, a simultaneous equations model comprising two supply equations, one demand equation, four equations of prices transmission, and two identities, was formulated and estimated; the model was estimated by the method of minimum ordinary squares in two steps using annual national data from the period 1960-2006. The results indicate that in the period 2000-2007, the per capita annual consumption of fresh potato was of 16 kg per inhabitant, and the factors that explain the tendency of this variable were: the price to the potato consumer (PCRP), the price of tortilla (PTR), the price to the egg consumer (PCHR), the price to the rice consumer (PCAR), the price to the pork meat consumer (PCCCR), the price to the poultry consumer (PCCPR), the income for per capita consumption (PCRP) and the demanded quantity of potato from the previous year (QDPt-1), with elasticities of -0.2, 0.2, -0.1, -0.2, -0.004, -0.3, 0.2 and 0.13, respectively. The tendency of the factors that affect the fresh potato consumption indicates that in the long-run the per capita annual consumption will be 20 kg per inhabitant, level that is very low compared to the 80 or more kilograms per inhabitant in Europe nowadays; therefore, the national producers should look to giving added value to the fresh potato through the processing of the product.
