Milk and açaí berry pulp improve sensorial acceptability of kefir-fermented milk beverage Acta Amazonica

ABSTRACT Kefir grains are a symbiotic biomass (yeast and bacteria) commonly used to produce milk probiotic fermented beverages. The aim of this study was to produce a mixed beverage of whole milk and açaí (Euterpe oleracea) berry pulp fermented by two different kefir cultures: one specific for milk and one specific for sugared water, adapted to milk. Based on the fermentation yield, pH and sensory analysis, the culture adapted to milk obtained the best results in a composition (g 100 g-1) of 70 of whole milk and 30 of açaí berry pulp, at room temperature (~25°C), without agitation and fermented for 24 h. No presente estudo, objetivou-se avaliar os efeitos do tempo de aeração sobre as características nutricionais e fermentativas da silagem de cana-de-açúcar. Utilizou-se o delineamento inteiramente casualizado com três tratamentos e quatro repetições. A cana-de-açúcar recém-picada foi exposta à aeração por 0, 4 ou 8 horas, sendo ensilada somente após cada tempo de espera. Após a exposição, o material foi ensilado em 12 silos experimentais confeccionados de baldes plásticos. A abertura dos silos ocorreu 85 dias após a ensilagem. Phenolic acids and ruminal parameters of different varieties of sugarcane in natura or ensiled Animal Sciences

This study aimed to determine and measure the phenolic acids in four varieties of sugarcane (RB 855536, RB 765418, SP 80-1842 and SP 80-1816) as fresh and ensiled, and assess the influence of these acids on in situ degradability of dry matter and neutral detergent fiber. The experimental design was completely randomized in a factorial design. For the fraction of dry matter (DM), varieties RB 855536 and SP 80-1842 had average 17.80% higher compared to others. The aim of this study was to evaluate the fermentative losses and nutritional value of elephant grass silages with the increasing of inclusion levels of dehydrated banana peel. The experiment was conducted in a completely randomized design, with six treatments and four replications, being the silage exclusively from elephant grass, and five levels of inclusion of banana peel to the elephant grass silage, as the following - 5; 10; 15; 20 and 25%, being added based on natural matter. O presente trabalho teve como objetivo determinar degradabilidades in situ da matéria seca (MS), fibra em detergente neutro (FDN) e ácido (FDA) da cana-de-açúcar in natura (CF) ou ensilada (SC) e da silagem de milho (SM) em diferentes ambientes ruminais, utilizando a técnica in situ macro-bag. Agroindustrial co-products are a viable alternative for use in animal nutrition. Quality of sorghum silage with leucaena Animal Sciences

 This study evaluated the effect of increasing levels of leucaena forage in sorghum: forage. In addition to pure sorghum, it was evaluated different levels of inclusion of leucaena (15, 30 and 50%) at the time of ensiling. Forage was ensiled in PVC tubes (100 mm diameter, 500 mm length) under the density of 500 – 600 kg m-3, a total of 20 silos were prepared, which were opened 35 days after ensiling. There was no effect (p > 0.05) of leucaena inclusion levels for pH, water activity (Aw) and total ammonia nitrogen (total NH3-N). This study aimed to evaluate the effects of inclusion of crambe bran concentrations (Crambe abyssinica Hochst.) with different specific masses in elephant grass silage (Penninsetum purpureum Schum.). For that, the bromatological and microbiological compositions of the experimental silages were determined. We used 48 mini silos distributed in a completely randomized design, arranged in a factorial 4 × 3, four levels of inclusion of crambe bran (0; 10; 20 and 30%) and three specific masses (400; 500 and 600 kg MN m-3), with four replications. Optimized acid hydrolysis of the polysaccharides from the seaweed Solieria filiformis (Kützing) P.W. Gabrielson for bioethanol production Biological Sciences

 The seaweeds are bio-resource rich in sulfated and neutral polysaccharides. The tropical seaweed species used in this study (Solieria filiformis), after dried, shows 65.8% (w/w) carbohydrate, 9.6% (w/w) protein, 1.7% (w/w) lipid, 7.0% (w/w) moisture and 15.9% (w/w) ash. The dried seaweed was easily hydrolyzed under mild conditions (0.5 M sulfuric acid, 20 min.), generating fermentable monosaccharides with a maximum hydrolysis efficiency of 63.21%. Galactose and glucose present in the hydrolyzed were simultaneously fermented by Saccharomyces cerevisiae when the yeast was acclimated to galactose and cultivated in broth containing only galactose. The effect of the variables pantothenic acid, yeast extract and sodium chloride, as well as the cell permeabilization technique, were investigated on the formation of levan, ethanol, sorbitol and biomass of Zymomonas mobilis, using a 24-1 fraction factorial design. Cell growth was determined by turbidimetry at 605 nm, relating it to a biomass with a dry weight calibration curve. Reducing sugars were quantified according to Somogyi and Nelson. Total sugars were quantified by the phenol-sulfuric acid method, sorbitol by HPLC and ethanol. In this study, the hypolipidemic effect of exopolysaccharides (EPS) fromPleurotus geesteranus 5# fermenting liquor by the optimal culture conditions in a 5-L stirred-tank reactor was investigated. The hypolipidemic effect of the polysaccharide, investigated in streptozotocin induced diabetic mice, decreased plasma glucose, total cholesterol and triacylglycerol concentrations by 17.1 %, 18.8 % and 12.0 %, respectively. The results of the present investigation strongly demonstrate the potential of this polysaccharide to prevent hyperglycemia in the experimental animals. ABSTRACT Fermentation profile and microbial population were assessed in soybean silages without any additive (control), with inoculant (I), with I + powdered molasses (I+M), and with powdered molasses only (M). Soybean plants were harvested at the R6 stage and ensiled in 2kg-capacity laboratory silos. The additives were added to the natural matter base of silages. Abstract Streptokinase (SK) is an enzyme that is used for the treatment of cardiovascular diseases. The current study focused on the enhanced production of SK by inducing mutation in Streptococcus agalactiae EBL-20 and optimization of medium components and culture conditions for the maximum growth of mutant derived strain. S. agalactiae EBL-32 was selected as a potent mutant after exposure of S. agalactiae EBL-20 to EMS for 180 minutes. SK activity obtained from mutant derived strain was found to be 1.6 fold higher as compared to the activity achieved by wild strain. ABSTRACT: Blackberry vinegar was produced in successive acetification cycles and content of total phenolics, anthocyanins and antioxidant activity were evaluated along the production. Firstly, blackberry wine was obtained in bench-scale bioreactor, being verified 0.39 g/g ethanol yield, 1.78 g/L.h volumetric productivity and 76% efficiency. After, three successive acetification cycles were conducted efficiently in grapia barrel with average acetic acid production of 51.6 g/L, 72.2 % acetic acid yield and 0.4 g/L.h volumetric productivity.
