Consumers' Perception of Milk Safety AgEcon

Several times during the last decade consumers have been warned about different incidents concerning food safety, like, salmonella in eggs, cheese and poultry, and pesticides residues in tomatoes. The problem of food safety is still to be a largely latent concern for consumers. The main research goal of this paper is to investigate consumers' risk attitudes and risk perceptions concerning milk safety and to estimate their willingness to pay for extra-safe milk. The data was collected in the Netherlands using a mail survey. 211 usable questionnaires (26%) were returned. Results show that, in general, consumers are not concerned about the safety of milk. Der folgende Beitrag befasst sich mit der Nachfrage nach Fair-Trade-Produkten in Deutschland unter besonderer Betrachtung der Mehrzahlungsbereitschaft für Produkte mit dem Fair-Trade-Logo. Empirisch untersucht wurde dies unter Anwendung eines Experiments im Rahmen einer Konsumentenbefragung, in dem das Wahlverhalten und die Zahlungsbereitschaft für Schokolade mit unterschiedlichen Herstellungsstandards erfasst wurden. However, sauerkraut sold in the market nowadays is not much different from sauerkraut made in the past. Food intake is greatly influenced by economic factors. Consequently, neuroeconomics has been identified as a new and important area for understanding the interaction between genotypes and phenotypes related to food intake. A Censored Demand System Analysis of Fruits and Vegetables by Different Income Groups Using Micro Data AgEcon

This study examines demand for fruits and vegetables segmented by income levels in a complete demand system framework using the Consumer Expenditure Survey (CEX) from 2002 to 2006. Results show that disparities are found between high-income households and low-income households. Seasonal effects and demographic variables, such as household heads’ race and gender, region, household size and household composition, play an important role in fruit and vegetable consumption for both categories of household. In contrast, urban status, household heads’ educational level and age are not found to have a statistically significant impact for low-income households. Obesity is a growing concern. New World Health Organization (WHO) figures indicate that obesity is spreading around the world as a "global epidemic." According to the WHO, there are more people suffering overweight related problems than malnutrition. Globally there are more than 1 billion adults who are overweight and at least 300 million of them are clinically obese, while 800 million suffer malnutrition (WHO 2004). Does trust influence consumer behaviour? AgEcon

Against the background of diverse food scandals this article investigates the role of trust as a determinant of consumer behaviour in Germany. As empirical analyses indicate, the impact of trust on consumer behaviour in a quotidian and presumably safe setting is to be neglected. In the environment of a food scandal, however, trust proves to be a crucial element with regard to a more in-depth understanding of consumer behaviour under uncertainty. Moreover, it is analysed whether different values of trust allow for deriving coherent population segments and whether these can likewise be identified on the basis of consumers’ socio-economic features.

The paper is focused on formulation of demand relations in the commodity chain. Created model respects interdependence and interconnection of particular stages within the food commodity chain – it takes into account the fact that secondary demand function is formed not only by particular prices but also by level of demand on vertical previous market. Improving the Nutrient Content of Food through Genetic Modification: Evidence from Experimental Auctions on Consumer Acceptance AgEcon

This paper assesses consumers’ acceptance of nutritionally enhanced vegetables using a series of auction experiments administered to a random sample of adult consumers. Evidence suggests that consumers are willing to pay significantly more for fresh produce with labels signaling enhanced levels of antioxidants and vitamin C achieved by moving genes from within the species, as opposed to across species. However, this premium is significantly affected by diverse information treatments injected into the experiments.
