| For some years now the number of all-day schools providing school meals in the federal state of Lower Saxony, Germany, has increased continuously. This paper aims at analysing the political determinants and the organization of the provision of school meals in Lower Saxony with a special focus on the provision of organic food and sustainability. As to methods, literature was researched and internet sources were evaluated. In addition, interviews with experts in the field contributed to the findings. The results show heterogeneous approaches to and different forms of the organization of school meal supply. | This study was conducted to compare the meat quality and selected fatty acids profile of two different slow-growing broiler genotypes (Hubbard S757; S757 and Hubbard Grey Barred JA; GB-JA) fed diets supplemented with dry oregano (Origanum vulgare L., OV; 10 g/kg basal diets) or lemon balm leaves (Melissa officinalis L., MO; 10 g/kg basal diets) under organic housing system. It is concluded that slow-growing genotypes had no effect on L* parameter of the breast, thigh and abdominal fat meat quality. Two hundred and forty chicks were allocated randomly into 4 experimental groups according to a 2x2 factorial arrange-ment. | Das Vorhaben hat zum Ziel, die Produktionstechnik von ökologischen Fertig- und Convenienceprodukten weiter zu entwickeln und die Qualität der Produkte zu verbessern. Der Fokus liegt auf heiß abzufüllenden Cook-and-Chill-Fertiggerichten sowie auf Fertigsoßen und -suppen im Klein- und Großgebinde, außerdem auf der Konservierungsmöglichkeit von Frischgemüse und Salaten unter modifizierter Atmosphäre. | Auf Basis der Daten der Nationalen Verzehrsstudie II wurde das Ernährungs- und Gesundheitsverhalten von Biokäufern und Nicht-Biokäufern analysiert. Hierfür wurde der Verzehr zehn relevanter Lebensmittelgruppen mit den Empfehlungen der Deutschen Gesellschaft für Ernährung verglichen, über den ‚NVS-Healthy-Eating-Index’ (NVS-HEI) bewertet und mit gesundheitsrelevanten Faktoren verknüpft. Biokäufer ernähren sich gesünder als Nicht-Biokäufer, was sich in einer höheren HEI-NVS-HEI Summe zeigt. | Im Vergleich zum konventionellen Landbau müssen die regionalen Unterschiede von Klima und Bodenbeschaffenheit im ökologischen Landbau mehr berücksichtigt werden. Eine eigene Züchtung für diese Vielfalt der Anbaubedingungen war nicht nur notwendig, weil der Züchtungsfortschritt im konventionellen Landbau immer weniger den Bedürfnissen im ökologischen Landbau entspricht, sondern auch, weil die neueren Züchtungsmethoden – bis hin zur Gentechnik – nicht mit dessen Prinzipien vereinbar sind. | The present work studied the effect of the year of harvest, the genotype and the cultivation method on the nutritional quality and the allergen content of three plum cultivars. The common quality parameters and the phytochemical content strongly varied with the year and the cultivar, while the system of cultivation had a minor influence. In particular, ascorbic acid greatly decreased in 2016 compared to 2015, while polyphenols were higher in 2016. The health-promoting compounds, and particularly phenolics, were significantly correlated with the antioxidant capacity. Finally, the allergen content was strongly dependent on the content of flavan-3-ols, suggesting that this class of phenolics is determinant in influencing the allergen content in plums.... |
