Sustainability in the Food Sector: A Consumer Behaviour Perspective AgEcon

Consumers have, through their food choices, a major role in bringing about more sustainable food production. However, this presupposes that differences in sustainability are communicated to consumers. Even if food products are eco-labelled and consumers are motivated to support sustainability, a number of potential barriers may prevent consumers from using the information to make sustainable choices. Six such barriers are discussed in this paper.

Household-level Canadian meat purchases from 2002-2008 and the Food Opinion Survey conducted in 2008 were used to explore consumer responses to Bovine Spongiform Encephalopathy (BSE) at the national level in Canada. Three measures of beef purchased were used to understand consumers‟ reaction under food risk. A random effects Logit model was applied to test whether any beef was purchased during a given month. Several researches evaluated consumers’ Willingness To Pay (WTP) for each meat traceable attribute, generating a great deal of information in this regard, although specific to the conditions of each study. In light of this, WTP estimates for traceability characteristics differ across the literature, leading sometimes to contrasting interpretations. Seeking a full, meaningful statistical description of the findings of a collection of studies, the meta-analysis allows us to analyze consistency across studies and control for factors thought to drive variations in WTP estimates. FRUIT CONSUMPTION: DIETARY HEALTH AND POLICY IMPLICATIONS AgEcon

Health benefits of a diet rich in fruit and vegetables has been emphasized in the U.S. However, consumption of fruits more than for vegetables has remained well below recommended amounts. Efforts to influence eating habits will be enhanced if socio-demographic factors and the nature of their interaction are better understood. This study uses logistic regression to determine the role of age, sex, race and place of residency to investigate this question. The analysis identifies that sex, social class and place of residence influence optimal fruit consumption. Particularly, this study finds that young adult males of modest means living in rural areas are less likely to incorporate the recommended amount of fruit in their diet.

A Latent-Variable Approach to Modelling Multiple and Resurgent Meat Scares in Italy AgEcon

This paper aims to measure the time pattern of multiple and resurgent food scares and their direct and cross-product impacts on consumer response. The Almost Ideal Demand System (AIDS) is augmented by a flexible stochastic framework which has no need for additional explanatory variables such as a media index. Italian aggregate household data on meat demand is used to assess the time-varying impact of a resurgent BSE crisis (1996 and 2000) and the 1999 Dioxin crisis. The impact of the first BSE crisis on preferences seems to be reabsorbed after a few months. A Comparison of U. S. and Canadian Consumers' Willingness to Pay for Red-Meat Traceability AgEcon

Auction experiments at locations in the US and Canada are used to determine consumers' willingness to pay for red-meat traceability and other enhanced food characteristics. Consumers in both countries are found to be willing to pay a positive amount for traceability, but would pay even more if traceability were bundled with other characteristics such as animal welfare or enhanced food safety. The results suggest a larger Canadian market for traceability, on a percentage basis, for beef than in the US.

New Evidence on Overweight Children in Urban China and the Role of Socioeconomic Factors AgEcon

Problems of overweight and obesity among children have increased in China and pose a problem both for individuals as well as for public social and health care systems. This study explores factors contributing to weight problems among children age 6 to 18 years old in urban China. Data come from the 2004 China Health and Nutrition Survey. Results from a binary probit model show that parents' being overweight, some patterns of TV use, and more frequent eating in fast food restaurants influence children being overweight. Among younger children, parent's dietary knowledge was a significant factor. For adolescents, TV habits and concern about being liked by friends were significant. Stakeholder Analysis of Agroparks AgEcon

An agropark is a cluster in which several primary producers and processors cooperate to enhance sustainable agro-food production. Because agroparks represent complex system innovations, this article studies their realisation trajectories from the stakeholder management perspective. By using the case study method, the research confirms that agroparks are system innovations involving many participants, most of them being key stakeholders. The different stakes and power positions, and their impact have been assessed. and managed in line with the realisation process of the agropark. The paper provides first learnings on stakeholder management in agropark projects, which may promote their realisation.

Does Knowledge-Based Economy Speaks to Consumers? A French Case Study with Respect to Food Products AgEcon

The paradigm of knowledge-based economy states that information asymmetry between consumers and producers will be reduced thanks to information availability and dissemination through the Internet or other media channels. Conversely to this statement, some published articles shown that knowledge-based economy reinforces the information asymmetry between experts and novices among the consumers (Hogg et al., 2007; Gregan-Paxton & Roedder-John, 1997; Alba & Hutchinson, 1987). Accordingly, we will consider the non homogeneity of consumers and will try to identify and qualify the differences between several groups of respondents regarding two food items by means of a k-means clustering applied to a knowledge-oriented questionnaire.
