Organic supply chain collaboration: a case study in eight EU countries Organic Eprints
Naspetti, Simona; Lampkin, Nicolas; Nicolas, Philippa; Stolze, Matthias; Zanoli, Raffaele.
This study aims at contributing to a better understanding of the linkage between supply chain performance and possible performance improvement with respect to food quality and safety. Therefore, the paper addresses the question whether the level of collaborative planning and close supply chain relationships could help improve quality and safety of organic supply chains. The study was conducted as a part of the multi-disciplinary EU-wide survey of organic supply chains, carried out in 8 European countries. In this paper we report the results of the study regarding the structures and performance of six different organic supply chains in these eight European countries: milk (CH, UK), apples (DE, CH), pork (UK, NL), eggs (DE, UK), wheat (HU, IT, FR) and...

Industrialised chicken production is far from organic agriculture prinicples. Still of interest is a more sustainable utilisation of by-products, e.g. hydrolysation of feathers for proteins, or extraction of food grade oil from chicken bones. Such approaches were studied in the bioeconomy-project "CYCLE" (2013-2017).

Scope and precision of sustainability assessment approaches to food systems Organic Eprints
Schader, C.; Grenz, J.; Meier, M. S.; Stolze, M..
With sustainability within food systems becoming an increasingly important issue, several approaches that claim to assess the sustainability of farms, farming systems, and supply chains have been developed. Looking more closely at these sustainability impact assessment approaches, we discerned considerable differences between them in terms of scope, the level of assessment, and the precision of indicators used for impact assessment. Our aim was to classify and analyze a range of available sustainability impact assessment approaches with respect to scope and precision. From a total of 35 sustainability assessment approaches, we selected 6 for a detailed comparison. From our analysis, we concluded that there are 3 different types of trade-offs in these...

Main constraints in developing public organic procurement Organic Eprints
Spigarolo, Roberto; Sarti, Valerio; Bocchi, Stefano; Giorgi, Giulio.
The present study investigates how to increase and improve school catering supply chains, to understand hindering factors and their perception in order to reveal drivers and constraints for POP. These include policy implementation instruments, changed values and attitudes, healthy nutrition policies, supply chain bottle necks, premium prices (to producers), successful procurement strategies and certification procedures. This work is based on a two-step survey concerning the Italian school food service system. Initially questionnaires were submitted to a qualified group of 50 producers and 50 caterers (managers of national and international companies of food service for school, local administrators who manage food services for the schools). The results of...

From ‘Additive’ to ‘Multiplicative’ Patterns of Growth. Organic Eprints
Schermer, Markus.
Growth processes are often problematic for small-scale farms as they may disturb their delicate balance of basic internal resources, like labor, buildings, machinery, land and animals. Most of these resources cannot be increased in linear processes and the smaller the unit the more problematic the task of realignment of resources becomes. Thus small-scale farmers often feel growth as enforced upon them by outside factors, e.g. a market partners. Growing enterprises in processing and trading need more supply and obviously are not eager to deal with more small suppliers, as this tends to mean higher transaction costs and varying qualities. However, there are examples where dedicated supply chain actors actively engage in preserving small scale structures and...

Strengthening organic food value chains in Germany - first results of the EU-project HalthyGrowth – From niche to volume with integrity and trust Organic Eprints
Schulz, Kristin; Münchhausen, von, Susanne; Häring, Anna Maria.
Our presentation starts with a short overview of the diversity of organic food chains in Germany. We show that several different supply chains coexist. Smaller businesses tend to focus on market niches and particular consumer groups and values. The in-depth analysis identifies the strengths and weaknesses of different types of organic food chains. Exemplarily, we highlight factors that can strengthen value chains for organic food.

Fruits and Vegetable environmental impacts - Life Cycle Assessment Organic Eprints
Organic and conventional public food procurement for youth in Italy Organic Eprints
Spigarolo, Roberto; Sarti, Valerio; Giorgi, Giulio.
This report describes the political organisation and policies about public organic procurement in Italy, especially within school catering, and how organic products are utilized in this sector. The report is produced within the project “innovative Public Organic food Procurement for Youth”, iPOPY, and is a revised version of a preliminary report published in the same report series in 2008. Organic and otherwise typical and certified food is supported by several Italian regions by regulations and guidelines demanding that municipalities must prioritize such food in their calls for tenders. This has contributed to make Italy a leading public consumer of organic food, serving about 1 million dishes of school food per day with at least some organic...

Fairness - Zentraler Baustein des Ökologischen Landbaus oder Marketingstrategie einzelner Initiativen? Organic Eprints
Thomas, Frieder.

Promoting organic growth through model farms – use of the Leader Approach in Ukraine Organic Eprints
Eisenring, Tobias.
Interesting growth potential starts developing through the presence of few actors that spearhead most commercial activities in a sector. Such actors are very innovative but do not necessarily have all the necessary know-how. The Leader approach has a strong business development focus with the objective to strengthen such pioneers and spread the experience among small- and medium enterprises in order to enter the sector and contribute to growth.

Is it easy for producers to market organic beef meat ? The case of Biobourgogne Viande (France). Organic Eprints
SANS, Pierre; de FONTGUYON, Guy; SYLVANDER, Bertil; LE FLOC'H, Aude; AUERSALMI, M.; SCHMID, Otto.
This contribution aims to present the results of a French case-study analysis - BioBourgogne Viande - carried up by members of three research teams in the framework of the European Program OMIaRD (Organic Marketing Initiatives and Rural Development) . In a first part, after a brief description of the region where the O.M.I is located, we present the main features of the development of BioBourgogne Viande, from its origins to the present day. In a second part, the motivations, cohesion and competencies are analysed in the structure of a SWOT (opportunities, threats, strengths and weaknesses), identifying organisational learning processes through the past ten years

Heterogeneity in pursed business strategies in local (organic) food value chains – Empirical evidence from Denmark Organic Eprints
Teuber, Ramona; Jensen, Jørgen Dejgård.
The study provides a typology of different business strategies employed by Danish agricultural producers and processors in local food value chains comprising both organic and non-organic food producers and processors, and investigates how Danish agricultural producers and processors define and perceive local food and whether definitions and perceptions differ across stakeholders groups. Furthermore, the study analyses which factors determine the decision to become involved in local value chains and whether these determinants differ significantly across producers and processors. The analyses are based on empirical data from a quantitative stakeholder survey carried out in the spring of 2017. Overall, the results highlight that local (organic) food value...
