EXPLORING INFLUENCING FACTORS ON MEAT CONSUMPTION DECISIONS THROUGH PROBIT ANALYSIS: THE CASE OF FRESH MEAT DEMAND IN BELGIUM AgEcon
Verbeke, Wim; Ward, Ronald W.; Viaene, Jacques.
Meat demand in Belgium has shown significant changes, especially with recent concerns about meat safety. Probit models are estimated to measure factors influencing consumer decision-making toward fresh meat. The probability of decreasing fresh meat consumption increases with greater attention to mass media stories. Demographics have a major impact, with age and presence of young children being particularly important.

Food consumption patterns and nutrition in urban Java households: the discriminatory power of some socioeconomic variables AgEcon
Rae, Allan N..
Food consumption patterns are undergoing substantial change in many countries as economic development proceeds. The trend is a move away from traditional cereals towards higher‐value and higher‐protein foods. Explaining such changes only in terms of traditional economic variables can lead to biased estimates of income effects and perhaps biased projections of food demand. Household survey data from Indonesia are used to measure the importance of several socioeconomic variables in explaining differences in household food consumption patterns and nutrition. Household expenditure and the level of women’s education are shown to be the most influential in this explanation.

FOOD SAFETY AND FEAR: FACTORS AFFECTING CONSUMER RESPONSE TO FOOD SAFETY RISK AgEcon
Baker, Gregory A..
The objective of this research was to explore the factors that affect consumers' responses to low probability food safety risks. A survey of two thousand consumers was conducted in mid-2003, yielding a response rate of 32.0%. The analysis indicated a family-oriented response to food safety risks. Primary meal planners, women, and members of households with young children were the most likely to have an extreme risk avoidance response.

Heterogeneity of Members’ Characteristics and Cooperation within Producer Groups Regulating Geographical Indications: The Case of the “Prosciutto di Parma” Consortium AgEcon
Dentoni, Domenico; Menozzi, Davide; Capelli, Maria Giacinta.
Several studies have analyzed the conditions under which geographical indications (GIs), such as the European Protected Designations of Origin (PDOs) and Protected Geographical Indications (PGIs), can represent a profitable market opportunity for agri-food producers. The development of a common set of rules by a group of producers and the governance of the collective brand are key issues to jointly exploit market opportunities through GIs. This paper explores whether heterogeneous characteristics, resources and strategies of individual producers within a PDO Consortium influence their level of agreement on the future of the collective regulation and governance of GIs. We conduct an in-depth study on a representative sample of firms member of the...

INFORMATION POLICY AND GENETICALLY MODIFIED FOOD: WEIGHING THE BENEFITS AND COSTS AgEcon
Teisl, Mario F.; Caswell, Julie A..
The labeling of genetically modified foods (GMFs) is the topic of a debate that could dramatically alter the structure of the U.S. and international food industry. The current lack of harmonization of policy across countries makes GMF labeling an international trade issue. The U.S. and Canada do not require GMFs to be labeled unless the GMF is significantly different than the conventional food or the GMF presents a health concern. However, many other countries are requiring GMFs to be labeled. This paper discusses empirical work on the sources and magnitude of benefits and costs from labeling programs, with particular emphasis on the impact of the design of the labeling program on benefits and costs.

NONPARAMETRIC ANALYSIS OF ATTITUDES TOWARD RISKY CROPS: A PLANT MOLECULAR FARMING CASE STUDY AgEcon
Veeman, Michele M.; Volinskiy, Dmitriy; Adamowicz, Wiktor L..
Research on plant molecular farming (PMF) is supported by public and private sectors in Canada. This may lead to benefits of new or cheaper medicines, industrial products and foods, but also be the source of appreciable risks to food safety from contamination by PMF materials, as well as potential environmental risks and costs. This study uses data from a 2005 nation-wide Canadian survey to gain insights into citizens’ perceptions of PMF benefits and risks. A series of nonparametric tests are conducted on ordinal survey data on risk and benefit assessments of respondents. PMF is not seen as a major threat to food safety or the environment, but as a moderate indirect risk. The use of PMF to produce better and cheaper medical drugs appears to have the best...

Innovation in Traditional Food Networks AgEcon
Gellynck, Xavier; Kuhne, Bianka.
In an increasingly globalising market, innovation is an important strategic tool for micro, small, and medium sized enterprises (SMEs) to achieve competitive advantage (Avermaete et al., 2004a; Gellynck et al., 2007; Murphy, 2002). Innovation can be defined as an ongoing process of learning, searching and exploring resulting in new products, new techniques, new forms of organization and new markets (Lundvall, 1995). Innovation is a continuous process characterised by three steps: efforts, activities and results. Efforts are all resources, such as human and financial resources, a firm is investing in activities for the development of innovations. Results are the effects of these innovation activities on tangible (e.g. growth of market share, profit) as well...

Where Will Demographics Take the Asia-Pacific Food System? AgEcon
Armbruster, Walter J.; Coyle, William T.; Gilmour, Brad.
Demographic changes in the Asia-Pacific region - expanded urban concentration, variability in population growth within the region, and an aging population base - will drive significant food system change. Costs associated with urban congestion will test the capacity of the region's food system to deliver a continuous flow of safe, reasonably priced, fresh and processed foods. Pressure to better connect urban areas to rural hinterlands and for trade liberalization will intensify to meet food needs of these growing urban areas. Differential rates of population growth and population aging among economies will affect the quantity and composition of foods demanded, hence private sector strategies and public policies.

Would Subsidizing a Food Pathogen Vaccine Upset the Food Policy Applecart AgEcon
Marette, Stephan; Roe, Brian E.; Teisl, Mario F..
Vaccines against several common foodborne pathogens are being developed and could substantially alter the policy tools available to address foodborne illness. However, little analysis is available to suggest how social welfare would be affected by these new vaccines. To address this void, we use stated preference data to estimate consumer willingness to pay (WTP) for food safety vaccines and then simulate the welfare impacts on related commodity markets of subsidizing consumer purchases of the vaccine within a partial equilibrium framework. To obtain consumer demand for the vaccine from the stated preference data, we simultaneously estimate model parameters in an econometrically coherent manner that recognizes the recursive nature of responses to...

YOUNG CONSUMERS’ DEMAND FOR NATURAL SWEETENERS AgEcon
Krutkramele, Katrina; Ehmke, Mariah D..
Health conscious consumers are increasingly concerned about the caloric content and glycemic index of sweeteners added to food. Currently, the average American consumes 22 teaspoons of added sugar in processed foods per day. Young people typically consume higher amounts of sweeteners via candy, sports drinks, and soda (Smed, Jensen et al. 2007). Recently, the American Heart Association issued a statement recommending no more than six teaspoons for women and nine teaspoons for men of added sugar in processed foods per day (Winslow and Wang 2009). Of particular concern is the glycemic index of sweeteners—or how quickly sweeteners raise one’s blood sugar level after consumption. While much of recent concern about added sugar focuses on high fructose corn...

When Consumers Diet, Should Producers Care? An Examination of Low-Carb Dieting and U.S. Orange Juice Consumption AgEcon
Love, Leigh Ann; Sterns, James A.; Spreen, Thomas H.; Wysocki, Allen F..
From 2000 through 2004, per-capita orange juice purchases decreased by 12.3 percent in the United States, while the popularity and media coverage of low-carbohydrate dieting exploded. Content analysis was used to count selected newspaper articles topically related to low-carbohydrate dieting, the Atkins diet, and the South Beach diet. These data were included in a national orange juice demand model, where purchase data served as the independent variable and proxy for consumer demand of orange juice. Results indicate that media coverage of low-carbohydrate diets and dieting was negatively and significantly related to demand for orange juice in the United States.

The Effects of Relative Price and Health Information on Derived Demand for Sweeteners in the U.S. Food Processing Industry AgEcon
Hailu, Getu; Thangaraj, Rawlin; Cranfield, John A.L..
The purpose of the study is to examine the differential effects of relative prices and diet-health link information on the degree of substitution between corn and cane sugar in the U.S. food processing sector. Our results suggest that the nature of the relationship between cane and corn sugar is complementary and time-varying; and the elasticity of substitution is more responsive to changes in relative prices than to changes in health information.

MURGO FARMS INC.: HACCP, ISO 9000, AND ISO 14000 AgEcon
Sparling, David; Lee, Jonathon; Howard, Wayne H..
Murgo Farms Inc., addresses the challenges of choosing between the Hazard Analysis Critical Control Point (HACCP), International Organization of Standardization (ISO) 9000, and ISO 14000 systems for a business with grain farming, elevator and spraying enterprises. Murgo has recently entered markets that are more quality oriented and wishes to expand its activities in those markets. The President wonders whether HACCP or ISO 9000 might help that expansion. However, the company is also faced with significant environmental risks due to its spraying and manure spreading activities and its proximity to a local municipal water source. There are good reasons for Murgo to consider each of the systems, but there is also the question of whether the benefits for...

EXPORTS FROM DEVELOPING COUNTRIES AND FOOD SAFETY CONCERNS AgEcon
Muhammad, Safdar; Singh, Surendra P.; Ekanem, Enefiok P.; Tegegne, Fisseha; Akuley-Amenyenu, Anonya.
Food safety issues are becoming more important in international trade. Fresh food products are more likely to carry food risks and to encounter Sanitary and Physiosanitary Measures (SPS) as barriers to market access. Developing countries (DC) need to overcome barriers and develop capability to guarantee the safety of food product exports in order to maximize benefits from international trade. The paper examines the importance of agro-food processing sector for developing countries and explores the private and public actions required to address food safety risks in fresh food product exports from developing countries. Thus DC exporters must learn to supply safe products and to defend their interest in transparent, science-based standards. Successful...

Global Adoption of Convenience Foods AgEcon
Sheely, Megan.
Trends in the types of foods Americans purchase are evident just by looking around the grocery store. Foods stuffs requiring extensive preparation are being replaced by convenience products that require little time, energy, or preparation. Food companies constantly invest in research and development of new convenience foods to make daily life easier for consumers. The objective of this study is to determine whether the demand for convenience foods is growing around the globe, and if so, to identify the various drivers responsible for the increase in demand. Secondary data were collected for 67 different countries on the quantity and value for four different food types of convenience food: frozen processed foods, chilled processed foods, meal replacement...

Heterogeneous Demand for Food Diversity: A Quantile Regression Analysis AgEcon
Drescher, Larissa S.; Goddard, Ellen W..
Poverty and inequality studies frequently use the quantile regression approach to provide results on the impact of determinants at different points of the distribution of a dependent variable. To innovate diversity research this paper uses quantile regressions to identify determinants at different points of the food diversity distribution. Regional and household level differences in demand for food diversity are analysed based on a pooled sample of Canadian data of the Family Food Expenditure Surveys of Statistics Canada. Simple OLS regressions show that the determinants of Canadian diversity demand are similar to those of other developed countries. However, with quantile regressions significantly different effects of independent variables on diversity...

Valuing Consumer Preferences with the CUB Model: A Case Study of Fair Trade Coffee AgEcon
Cicia, Gianni; Corduas, Marcella; Del Giudice, Teresa; Piccolo, Domenico.
D'Elia and Piccolo (2005) have recently proposed a mixture distribution, named CUB, for ordinal data. The use of such a mixture distribution for modelling ratings is justified by the following consideration: the judgment that a subject expresses is the result of two components, uncertainty and selectiveness. The possibility of relating the parameters of CUB models to covariates makes the formulation interesting for practical applications In this case study, a sample of 224 fair‐trade coffee consumers were interviewed at stores. With this data‐set, CUB model split consumers, according to their preferences, in two different segments: one showing high price elasticity, and one with a low price elasticity. As regards the potential of the CUB model, it showed a...
