There are two ways of assessing the costs of environmental degradation: as the costs associated with the loss of benefits resulting from the degradation of natural capital, and as the maintenance costs required to compensate for the actual or potential degradation of natural capital. The first of these methods is based on the Total Economic Value (TEV) of benefits forgone because of the depletion of ecosystem services delivered by marine biodiversity. The second method is based on the costs required to maintain a good state of marine biodiversity, one which makes it possible to deliver ecosystem services. Developed at the end of the last century, oyster farming and mussel farming are the two main components of shellfish farming in France. Recent advances in hatchery and farming techniques of species such as the clam and scallop open up new growth potential for new farming. This is already the case for the former, because clam farming produced 560 tonnes of clams in 1987. The volume of shellfish production, 170,000 tonnes in 1987, puts France among the foremost producing countries out of a world production of shellfish greater than 1.5 million tonnes.
