ZCastrated heavy pigs of > 160 kg body weight are used for traditional pork specialties (e. g. air-dried sausages) due to the required fat quantity and quality. Today most organic production systems use modern hybrids (Hy) with often insufficient fat features. The use of endangered breeds with high body fat synthesis capacity, e. g. German Saddleback (Sa), could be an alternative with a positive effect on maintaining biodiversity. This study with a total of 132 castrates analysed the effects of 3 different genotypes (Sa, Piétrain*Sa, Hy) and 2 different roughage sources (grass-clover-silage, straw) on performance, carcass-, meat-, fat-, and product-quality. The present paper deals with performance (PF) and carcass quality (CQ). It was found that PF and... |

Fattening of entire male pigs is a useful alternative to piglet castration but the problem of boar taint is still unresolved. The object of the present study was to test the effect of (i) two different terminal sire lines (Danish Duroc, Du vs. Piétrain, Pi) and (ii) two different feeding strategies (without (-) vs. with (+) raw potato starch prior to slaughter) on the prevalence of boar taint in organic pork production. The results show that entire male growing-finishing pigs of Du origin have significantly higher androstenone concentrations in shoulder back fat than those of Pi origin whereas the feeding strategy has no significant effect. Concerning skatole, both genetic origin and feeding strategy significantly affect concentrations in shoulder back... |

Skatole, one of the main causes of boar taint, derives from tryptophan in the large intestine and accumulates in the fat tissue of boars, thus decreasing meat quality. We hypothesize that energy of roughage promotes growth of skatole reducing microbes. Therefore, we compare the two roughages grass-clover-silage and straw, regarding the effect on concentrations of skatole and androstenone in the fat tissue. The experiments are currently ongoing and will help to evaluate special feeding strategies as an alternative to castration, thereby promoting animal welfare and product quality. |

European hare populations have not recovered from their shrinking over the past fifty years in Germany. Most hare habitas are agricultural regions which are farmed according to conventional farming standard. Organic farming is characterized by waiving of pesticides, growth regulators and arificial manure, by longer crop rotations and by wider seed seed-row spacings in some cereal crops. Thus, positive effects of eco-farming on hare populations in agricultural landscape may be assumed. However, eco-farming has not been studied in this regard up to now. |

The aim of the study was assessing lameness prevalence in organic sows as well as identifying potential risk factors for lameness. The project focused on sows in organic farms with access to an outdoor run. Sows have been chosen since they are kept for a longer period of time as compared with fattening pigs and therefore influencing factors from the housing environment may have a greater impact on them. Furthermore, leg health is a prerequisite for productivity and longevity. In the preparatory phase, different gait scoring systems were be identified from the literature and tested with regard to reliability and feasibility in the on-farm context. Also, farms which are willing to cooperate (criteria for inclusion: minimum flock size 20 sows, certified... |

Seven different pig breeds were kept under conventional and under organic feeding and housing conditions on two performance testing stations to analyse genotype-environment interactions for meat quality traits. Genetically controlled physical pork quality traits like pH- and EC-values are unaffected by both housing and feeding systems and no genotype-environment interaction could be found. In contrast, chemical meat characteristics like intramuscular fat content and fatty acid pattern are strongly influenced by genotype and feeding and a significant genotype-environment interaction. But no considerable reranking could be observed. The differences are caused by the differences in energy and amino acid supply between environments and variable lean meat... |

In organic farming, appropriate protein feeding is challenging based on regional or farm-grown resources. Therefore, feeding maize-bean-silage to dairy cows and fattening pigs could be a viable option to increase the protein content in the diet. However, anti-nutritional compounds might impair animal performance. When exchanging maize silage with maize-bean-silage in the diet of dairy cows, no detrimental effects could be detected. Similarly, the on-top feeding of maize-beansilage to pigs revealed no differences in regard to animal performance compared to a grass-clover diet. Thus, the inclusion of a certain amount of maize-bean-silage in the diet of dairy cows and fattening pigs had no negative effects on the animals. Further studies are going to... |

In German organic agriculture, general anaesthesia of male piglets before castration is commonly performed by injection of ketamine and azaperone, plus application of the analgesic meloxicam. Inhalation anaesthesia with isoflurane (plus meloxicam) is an alternative with a shorter recovery phase and widely used in Switzerland, but requires reclassification for pigs on a case to case basis in Germany. In order to provide data on piglets´ behavior after castration and potential long-term effects on growth until weaning, a trial under practical conditions on an experimental farm was conducted. Body weight development until weaning was not affected by the method of anaesthesia. However, piglets anaesthetised with injection showed significantly more motoric... |

Organic agriculture is defined as a low-external-input-system but the piglets’ supposed requirement for high quality diets seems to contradict low-external-input feeding strategies. Hence, a total of 361 piglets was tested from day 14 – 63 post natum concerning performance, health status, and losses by means of four feeding strategies of 100 % organic origin: (i) high-external-input diet, (ii) medium-external-input diet, (iii) low-external-input diet, each with grass-clover-silage as roughage source, and (iv) above mentioned low-external-input diet with straw replacing grass-clover-silage. The high-external-input-diet achieved the significantly highest live weight gain; all other strategies were similar at a lower level. There were no differences in health... |
