Abstract Honey must supplementation is necessary for mead production due to the deficiency in nitrogen materials in this feedstock, despite its high fermentative sugar content. The nitrogen limitation can halt or slow fermentation and lead to the production of unpleasant sensorial compounds, such as sulfur derivatives. The yeast JP14, a Saccharomyces cerevisiae isolated from Jataí bee’s pollen, was inoculated in 25 °Brix honey must with – 0 (control); 0,3; 0,7 and 1,0 g∙L-1 – of di-ammonium phosphate (DAP) and ammonium sulfate (AS). The addition of both supplements resulted in increased cell viability in the first 5 days of fermentation at 20 °C, but did not affect the final acidity of the produced meads. Supplementation also leads to increased sugar... |

ABSTRACT: Cat food formulation should not only meet the animal's nutritional needs, but also take into account food attractiveness. Our aim was to assess the palatability of food coated with sodium pyrophosphate and yeast extract, alone or in combination, and 20 adult cats were used in a two-bowl preference test. The preference for the experimental foods was tested by external application of sodium pyrophosphate (0.3%), yeast extract (0.2%), and a blend (0.5%) containing pyrophosphate and yeast extract in a same basal diet. In the present study, the cats showed preference for the blend (0.5%) containing sodium pyrophosphate and yeast extract. |

Chemical additives are used extensively in the offshore oil industry. For secondary oil recovery, the biopolymer xanthan has been recommended as a viscosifying agent but its use may provoke microbial problems. The effect of adding xanthan to marine sediments on the growth and metabolic activity of sulphate-reducing bacteria (SRB) was studied. In all instances, its addition resulted in an increasing in SRB numbers of up to 250-fold. This was accompanied by a marked increase in the electron transport activity of the sediments when these were incubated under either aerobic or anaerobic conditions. The products formed as a result of the biodegradation of the polymer by indigenous heterotrophic bacteria in these sediments appear to have acted as suitable... |

ABSTRACT The objective of this study was to develop formulations of myrtle pulp with emulsifier/stabilizer (Emustab® and Super Liga Neutra®) in different proportions; characterize the best foam, based on density and over-run; and determine drying kinetics at temperatures of 50, 60, 70, 80 and 90 oC and thicknesses of 0.5, 1.0 and 1.5 cm. Incorporation of 1.5% Emustab® and 0.5% Super Liga Neutra® to the myrtle pulp (F1) proved to be effective for foam-mat drying. The addition of additives influenced the physicochemical parameters of the whole myrtle pulp. The Midilli et al. model showed the best fit to the experimental data. |
