Abstract The aim of this study was to investigate the effect of acid pretreatment, temperature and enzyme concentration on the acid-enzymatic extraction of soluble collagen from chicken keel bone cartilage. A chemical composition analysis and protein profile characterization of this slaughter by-product were also conducted. The cartilages were extracted with 0.5 mol/L of acetic, lactic and citric acids for 24, 48 and 72 hours. Abstract This study aimed to evaluate the color and sensorial characteristics of a cake made with different amounts of flour made with peach palm peel flour. The flour was added at different concentrations, 2.5, 5.0, 7.5, and 10% (w/w), including a control (tartrazine). Physiochemical analyses were carried out on the cakes, including total carotenoids, CIE-L*a*b* color coordinates, and sensorial attributes. The results demonstrated that the peach palm peel flour substitution increased the total carotenoid content of the cakes. The color test showed that high levels of peach palm peel flour resulted in a decrease in the values of lightness (L*) and hue angle (h°), while the values of browning index (BI) and color change (ΔE*) increased significantly. Abstract Cupuassu is a fruitful species from the Amazon basin with great economical potential, due to the multiple uses of its pulp and seeds in the food and cosmetic industries. This fruit generates large amounts of solid waste, which, despite of its high content of bioactive compounds, is discarded in the environment. Therefore, with the aim of reusing these wastes and adding economic value, we investigated the nutritional potential of the seed by-product resulting from industrial cupuassu oil extraction. Abstract Different proportions of sugar cane juice, toasted baru nut and extruded rice bran were used in the formulation of sugar cane candies (“rapaduras”), and the effect on color, hardness and proximate composition determined. The best formulation was selected on the basis of composition, hardness and luminosity, and evaluated for sensory acceptance and purchase intent. Simplex design was used to plan the experiment and the limits of the different ingredients. Sugar cane juice has lower values for ash, protein, lipids and total fiber compared to the other ingredients, but it is the ingredient that characterizes the product. Os caroços do pequi, resíduos do processamento da polpa, possuem em seu interior uma amêndoa que pode ser utilizada para obtenção de óleo, resultando em um subproduto, a farinha desengordurada. Com o objetivo de se obter um concentrado proteico a partir dessa farinha desengordurada, foi avaliada a precipitação ácida das proteínas em diferentes valores de pH (3,0; 3,5; 4,0; 4,5 e 5,0). A precipitação ácida produziu concentrados de amêndoa de pequi com teores de proteína variando de 83,9% (pH 3,0) a 88,9% (pH 5,0). Abstract: The objective of this work was to evaluate the use of crude glycerol as an energy source to replace corn, in diets for Nile tilapia (Oreochromis niloticus) in the fattening stage. Two hundred Nile tilapia (190±4.5 g) were distributed in 20 tanks, in a completely randomized design. The treatments consisted of crude glycerol at 0, 60, 120, 180, and 240 g kg-1, to replace the dietary levels of corn, in order to maintain a constant digestible energy. Fish productive performance and the chemical composition of the fillet were evaluated. Histological analyses of the hepatopancreas, intestine, and visceral fat were also carried out. Zusammenfassung: In den Diskussionen über die Gemeinsame Agrarpolitik nach 2013 nimmt die Honorierung nicht marktgängiger gesellschaftlicher Leistungen der Landwirtschaft eine zentrale Rolle ein. Unterschiedliche Ansichten bestehen darüber, was unter diesen Leistungen genau zu verstehen ist und wie sie quantifiziert und monetarisiert werden können. ABSTRACT Sunflower is among the major oil seeds crop grown in the world and the by-products generated during the seeds processing represent an attractive source of lignocellulosic biomass for bioprocesses. The conversion of lignocellulosic fibers into fermentable sugars has been considered as a promising alternative to increase the demand for ethanol. The present study aimed to establish the fermentation conditions for ethanol production by Scheffersomyces stipitis ATCC 58376 in sunflower meal hemicellulosic hydrolysate, through a 23 CCRD (Central Composite Rotational Design) factorial design. Alternative sources of protein for lactating cows were evaluated in this study with respect to intake, digestibility, milk yield and milk composition. Eight multiparous Holstein/Gyr cows were simultaneously distributed in two 4 × 4 latin squares. Each experimental period lasted 21 days (14 days for adaptation and seven days to collect data and samples). Three protein sources, cottonseed meal, semi-integral soybean meal and corn steep liquor were evaluated and soybean meal was used as a control. The objective was to study the kinetics of transit and degradation of the fiber from guinea grass and the waste from soybean pre-cleaning (WSPC), ensiled with different proportions of mass (0, 100, 150, and 200 g WSPC/kg total mass).
