We explore and investigate Japanese dairy markets. We first provide an overview of consumer demand and how it evolved after World War II. Using historical data and econometric estimates of Japanese dairy demand, we identify economic, cultural, and demographic forces that have been shaping consumption patterns. Then we summarize the characteristics of Japanese milk production and dairy processing and policies affecting them. We next describe the import regime and trade flows in dairy products. The analysis of the regulatory system of the dairy sector shows how its incentive structure affects the long-term prospects of various segments of the industry. The paper concludes with policy recommendations of how to reform the Japanese dairy sector. |

The objective of this study is to analyze consumer behaviour in relation to functional foods by a direct survey. To this end, the proposal is an analysis of the reasons for choosing to consume this type of food or not, accompanied by a supplementary investigation, mostly to assess the relationship between consumption patterns and willingness to pay (WTP) for the most common categories of functional foods, such as milk fortified with CLA (conjugated linoleic acid). This study provides an empirical investigation of how consumers rate meat attributes. Results show an importance order for 12 selected meat attributes and reveal some relationships between the importance ratings and consumer's demographic or socioeconomic characteristics. The findings suggest that (1) the meat marketing strategy should focus on freshness, taste, and appearance; (2) nutritional attributes have become important factors in the meat purchasing decision of female, educated, and married consumers; (3) older, married, low-income, or non-white consumers still remain price conscious; and (4) USDA label has become an important symbol of meat quality and safety to older, female, Baptist, and high-income consumers. |

Although healthy foods can be affordable, if less healthy foods are cheaper, individuals may have an economic incentive to consume a less healthful diet. Using the Quarterly Food-at-Home Price Database, we explore whether a select set of healthy foods (whole grains, dark green vegetables, orange vegetables, whole fruit, skim and 1% milk, fruit juice, and bottled water) are more expensive than less healthy alternatives. We find that not all healthy foods are more expensive than less healthy alternatives; skim and 1% milk are less expensive than whole and 2% milk and bottled water is generally less expensive than carbonated nonalcoholic drinks.
