Dairy Food Consumption, Production, and Policy in Japan AgEcon

We explore and investigate Japanese dairy markets. We first provide an overview of consumer demand and how it evolved after World War II. Using historical data and econometric estimates of Japanese dairy demand, we identify economic, cultural, and demographic forces that have been shaping consumption patterns. Then we summarize the characteristics of Japanese milk production and dairy processing and policies affecting them. We next describe the import regime and trade flows in dairy products. The analysis of the regulatory system of the dairy sector shows how its incentive structure affects the long-term prospects of various segments of the industry. The paper concludes with policy recommendations of how to reform the Japanese dairy sector.

The Interplay of Regulation and Marketing Incentives in Providing Food Safety AgEcon

This report examines the impact of process regulations mandated under the Pathogen Reduction/Hazard Analysis and Critical Control Point (PR/HACCP) rule by the Food Safety and Inspection Service of USDA on food safety process control. The current level of food safety found in U.S. meat and poultry food products is a result of process and performance regulations and management-determined actions brought about by market incentives. Analysis of Consumer Attitudes and Consumers’ Willingness to Pay for Functional Foods AgEcon

The objective of this study is to analyze consumer behaviour in relation to functional foods by a direct survey. To this end, the proposal is an analysis of the reasons for choosing to consume this type of food or not, accompanied by a supplementary investigation, mostly to assess the relationship between consumption patterns and willingness to pay (WTP) for the most common categories of functional foods, such as milk fortified with CLA (conjugated linoleic acid). AN EMPIRICAL INVESTIGATION OF IMPORTANCE RATINGS OF MEAT ATTRIBUTES BY LOUISIANA AND TEXAS CONSUMERS AgEcon

This study provides an empirical investigation of how consumers rate meat attributes. Results show an importance order for 12 selected meat attributes and reveal some relationships between the importance ratings and consumer's demographic or socioeconomic characteristics. The findings suggest that (1) the meat marketing strategy should focus on freshness, taste, and appearance; (2) nutritional attributes have become important factors in the meat purchasing decision of female, educated, and married consumers; (3) older, married, low-income, or non-white consumers still remain price conscious; and (4) USDA label has become an important symbol of meat quality and safety to older, female, Baptist, and high-income consumers.

Are Consumers Willing to Pay More for Biodegradable Containers Than for Plastic Ones? Evidence from Hypothetical Conjoint Analysis and Nonhypothetical Experimental Auctions AgEcon

This study used and compared hypothetical conjoint analysis and nonhypothetical experimental auctions to elicit floral customers’ willingness to pay for biodegradable plant containers. The results of the study show that participants were willing to pay a price premium for biodegradable containers, but the premium is not the same for different types of containers. This article also shows the mixed ordered probit model generates more accurate results when analyzing the conjoint analysis Internet survey data than the ordered probit model.

CHARACTERISTICS OF CONSUMERS DEMANDING AND THEIR WILLINGNESS TO PAY FOR CERTIFIED SAFER PORK AgEcon

A telephone survey of 609 Illinois households was conducted in spring 1999. Most consumers surveyed have concerns about pork safety. Concerns were greatest among households with children, lower incomes, older consumers, and Blacks. Lower consumption of pork was associated with higher concern. Consumers had more confidence in USDA certification of enhanced pork safety than in industry certification. Most consumers were willing to pay some price premium for a certified safer product. Those willing to pay more were more likely women, older consumers with incomes less than $70,000, who live in an urban household, and have concern about pork safety.

This study is a part of a comprehensive study which attempts to create a baseline of global warming impact (expressed in total greenhouse gas emission and measured in terms of carbon equivalent) associated with the production and consumption of a gallon of orange juice available in the form of NFC (Not from Concentrate) and FCOJ (Frozen Concentrated Orange Juice) in Florida. Food safety shocks can threaten the health of consumers, create havoc within an industry and result in severe losses to producers. Governments often attempt to enhance food safety by mandating standards and inspection of food products to supplement the voluntary efforts by private firms. This paper assesses a form of collective action that falls between typical government mandates and purely private action. The Potential Effects on United States Agriculture of an Avian Influenza Outbreak AgEcon

The U.S. poultry industry has spent considerable resources to date preparing for an outbreak of avian influenza in this country. This research quantifies the potential effects of two alternative avian influenza scenarios on the poultry industry. In addition, this research looks at effects on other agriculture sectors including the loss of feed demand from an outbreak and the impacts on aggregate measures like farm income and consumer food expenditures. The economic sector model maintained by the Food and Agricultural Policy Research Institute (FAPRI) is employed for these scenarios.

Effects of Price and Quality Differences in Source Differentiated Beef on Market Demand AgEcon

In order to estimate demand elasticities of source differentiated beef in South Korea, this study used the quantity of an endogenous demand system derived through maximizing the economic welfare of market participants including local beef consumers and local and foreign beef suppliers. The demand system is then weighted with respect to quality adjustment parameters to identify the effects of quality differences in source differentiated beef on market demand. As implied by the high relative price of locally produced ‘‘Hanwoo’’ beef, substitutability between local and imported beef is shown to be very weak and the own price elasticity of South Korean beef is shown to be inelastic. Geographic Differences in the Relative Price of Healthy Foods AgEcon

Although healthy foods can be affordable, if less healthy foods are cheaper, individuals may have an economic incentive to consume a less healthful diet. Using the Quarterly Food-at-Home Price Database, we explore whether a select set of healthy foods (whole grains, dark green vegetables, orange vegetables, whole fruit, skim and 1% milk, fruit juice, and bottled water) are more expensive than less healthy alternatives. We find that not all healthy foods are more expensive than less healthy alternatives; skim and 1% milk are less expensive than whole and 2% milk and bottled water is generally less expensive than carbonated nonalcoholic drinks. DEMAND FOR NUTRIENTS: THE HOUSEHOLD PRODUCTION APPROACH AgEcon

The household production approach is used to characterize the household's preference toward nutrients in food consumption. Elasticities of substitution and Hicksian price elasticities are estimated, price- and expenditure-nutrient elasticities are calculated. Results show that protein is the most expensive nutrient, and that nutrients played an important role in determining households' food consumption.
