Adaptative response of Listeria monocylogenes to osmotic and chill stress: consequences on food safety. ArchiMer

Listeria monocytogenes is it psychrotrophic food-borne pathogen. This organism is problematic for food production industry due to its ubiquitous distribution ill nature and its tolerance to condition of osmotic and chill stress. One common strategy employed by many bacteria and by L. monocytogenes for adaptation to osmotic stress is by the intracellular accumulation of compatible solutes. Two different types of adaptative reponses to low temperature have undertaken by L. monocytogenes. Stakeholders' perceptions, attitudes and practices towards risk prevention in the food chain ArchiMer

An online survey was conducted to describe stakeholders' perceptions, attitudes and practices towards risk prevention in the food chain and to explore if common features could be extracted from different fields of competency or groups of stakeholders. Out of 80 participants, 60% believed that pathogenic microorganisms were the main hazard to prevent. Twenty-four percent perceived climate change as the main risk factor. Seventy-three percent believed that hazards in the food chain are preventable and they often showed a positive attitude towards risk prevention measures. Marine decapod crustaceans are macrobenthic opportunist species, of great commercial interest, and can accumulate pollutants. Worrying about consumers' safety, polychlorobiphenyls (PCBs), polybromodiphenyl Ethers (PBDEs) and dioxins (PCDD/Fs) were analyzed in four crustacean species from the coastal waters of Brittany and Normandy. As regards to regulations, the consumption of crustacean muscle doesn't raise any health problems. The purpose of this paper was to verify the stability of consumers’ evaluations of food safety by conducting the identical choice experiments questionnaire survey at the same site two different times. The two surveys, measuring the consumers’ evaluations of beef derived from cattle fed in accordance with improved food safety measures were conducted in January 2003 (n = 83) and March 2004 (n = 369) in Kiyota ward of Sapporo city in Hokkaido, Japan. Radioactive Contamination of a Pig Raised at a Farm within 20 km of the Fukushima Daiichi Nuclear Power Plant OAK

福島第一原子力発電所から20km圏内で飼育されていた交雑種豚が,事故17日後に清浄区域へ移動し,移動41日後に試料が採材された。Ge半導体検出器を用いて,バラ,モモ,ロース及び心臓のγ線スペクトルを測定したところ,放射性セシウムの存在が確認された。被検豚は移動前後ともに豚舎で飼育され,生涯汚染のない輸入飼料で飼養されていた。牛肉の放射能汚染の原因は汚染された稲藁と報道されているが,稲藁だけが汚染の原因ではない可能性がある。次世代のために,食の安全の観点から牛肉のみならず他の畜産物についても監視が必要である。

Effects of nitrogen fertilization on heavy metal content of corn grains Phyton

Nitrogen fertilization has played a significant role in increasing crop yield, and solving problems of hunger and malnutrition worldwide. However, excessive nitrogen inputs do not significantly increase crop yields but may lead to many serious environmental problems. The effects of nitrogen fertilization rate were studied on heavy metal content of corn grains. Our results show that nitrogen fertilization management is beneficial for reducing production costs, protecting the environment, and improving the quality of farm products.

CHARACTERISTICS OF CONSUMERS DEMANDING AND THEIR WILLINGNESS TO PAY FOR CERTIFIED SAFER PORK AgEcon

A telephone survey of 609 Illinois households was conducted in spring 1999. Most consumers surveyed have concerns about pork safety. Concerns were greatest among households with children, lower incomes, older consumers, and Blacks. Lower consumption of pork was associated with higher concern. Consumers had more confidence in USDA certification of enhanced pork safety than in industry certification. Most consumers were willing to pay some price premium for a certified safer product. Those willing to pay more were more likely women, older consumers with incomes less than $70,000, who live in an urban household, and have concern about pork safety.

This study analyzes public perceptions on food safety using a national survey conducted soon after the nationwide spinach recall (November 2006). We explore relationships between peoples' perceived risks of food contamination (spinach in this case) and their trust in the institutions in charge of safeguarding/ensuring safety. Finally, we explore relationships between individual observance of basic good food handling practices and food safety. Trust in institutions through which food passes and regulatory agencies were shown to be critical in determining food safety perceptions. China’s melamine milk adulteration crisis highlights the challenges that arise as large well-capitalized companies procure raw materials from a diffused supply chain of scattered small farmers and milk collection stations. As milk prices climbed sharply in 2007 and companies branched out into new territories, intense competition for raw milk supplies strengthened incentives to water down and adulterate milk. Effective food safety measures must account for incentives, the distribution of market power in the supply chain and market dynamics.

MANAGING FOR SAFER FOOD: THE ECONOMICS OF SANITATION AND PROCESS CONTROLS IN MEAT AND POULTRY PLANTS AgEcon

Sanitation and process control costs increased the costs of producing meat and poultry by about 0.5 percent in the period preceding the promulgation of the Pathogen Reduction/Hazard Analysis and Critical Control Point (PR/HACCP) rule of 1996. However, there was no benefit in trying to avoid these costs. Large slaughter plants and all further-processing plants with poor performance of sanitation and food safety process controls were more likely to exit their industries than other plants. Moreover, the fraction of costs required for sanitation and process control was about the same for large plants as for small plants, suggesting that larger plants were no better able than small plants to absorb sanitation and process control costs.
