Water quality trends and input loads to Lake Nakuru OceanDocs
Kulecho, Andrew; Muhandiki, Victor.
Water quality trends of Lake Nakuru, Kenya and its feeder streams were monitored in 2001-2004. Water samples were obtained from eleven stations in the lake and five points on inflowing streams. The items monitored were physico-chemical and biological components. The drainage basin was characterized by recurrence of dry spells throughout the period with water losses in the lake exceeding the amount received to cause a fall in water volume. The lake water salts content rose – conductivity and alkalinity reached 58 ms/cm and 5,200 mg/l respectively. PH was more or less constant (10.00 – 10.36). Daytime oxygen concentration in the mid-lake system rose (to greater than 20 mg/l) while remaining low in the inflow portions of the lake. On one occasion, the lake...

Abstract: The objective of this work was to evaluate the reuse of sucrose syrup in pineapple (Ananas comosus) osmotic dehydration and the application of the spent solution in fruit dragée formulation. Osmotic dehydration trials were performed in five cycles (65° Brix/45°C/3 hours), directly reusing the osmotic solution, with only one intermediate reconditioning step. Variations in osmotic solution properties and in dehydration parameters were observed, as well as a low microbial load in the system. The spent solution was rich in vitamin C (30 mg 100 g-1). Pineapple dragée covered with red fruits and acai powders were obtained with the reconditioned spent solution used as an adhesion solution. The dragée presented high levels of vitamin C (176 mg 100 g-1),...

Rosero-Chasoy,Gilver; Serna-Cock,Liliana.
Abstract Agroindustrial residues such as plantain (Musa paradisiaca L. cv. Dominico Harton) peel have functional properties, which made them suitable for use as a food ingredient. The aim of this research was to evaluate plantain peel flour (PPF) as a binder in the production of frankfurter- type sausage. Five formulations were prepared in which wheat flour (WF) was replaced by PPF as follows: 25%, 50%, 70% and 100%, respectively. Once the sausages are obtained, water retention capacity (WRC), emulsifying stability (ES), and pH, were evaluated. When comparing treatments with the control sample, it was found that replacing up to 50% of WF by PPF, significantly increased WRC by 7.5%. When replacing 25%, Es, there were no statistically significant changes...
