The performance and the morphology of intestinal mucosa of broilers fed mannan-oligosaccharides (MOS) and enzymes (E) from one to 21-day-old were evaluated using 750 one-day-old chicks, assigned to a 2 x 2 + 1 factorial design - two levels of MOS (0 and 0.1%), two levels of E (0 and 0.05%) plus an antibiotic positive control diet - performing five treatments of five replications each one. MOS x E interaction was significant for both duodenal (P<0.002 and P<0.002) and ileal (P<0.04 and P<0.05) perimeters and heights of villi, being the values lower in the mucosa of birds fed non-supplemented diets. ABSTRACT Corn husks are the major wastes of corn industries with meagre economic significance. The present study was planned for value addition of corn husk through extraction of xylan, followed by its enzymatic hydrolysis into xylooligosaccharides, a pentose based prebiotic. Compositional analysis of corn husks revealed neutral detergent fibre 68.87%, acid detergent fibre 31.48%, hemicelluloses 37.39%, cellulose 29.07% and crude protein 2.68%. Irrespective of the extraction conditions, sodium hydroxide was found to be more effective in maximizing the yield of xylan from corn husks than potassium hydroxide (84% vs. 66%). Abstract Soymilk was produced from vegetable soybean and fermented by probiotics (Lactobacillus acidophilus La-5, Bifidobacterium animalis Bb-12) in co-culture with Streptococcus thermophilus. The composition of the fermented beverage and oligosaccharides content were determined. The effect of fructooligosaccharides and inulin on the fermentation time and viability of probiotic microorganisms throughout 28 days of storage at 5 °C were evaluated. The soymilk from vegetable soybeans was fermented in just 3.2 h, when pH reached 4.8. Fermentation reduced the contents of stachyose and raffinose in soymilk. The loss of this important nutrient during blanching is caused mainly by diffusion or leaching, which might be diminished if blanching temperature - time conditions are correctly employed.
