The Demand for Food Away from Home: Do Other Preferences Compete with Our Desire to Eat Healthfully? AgEcon

Health-oriented government agencies have had limited success at encouraging Americans to eat a healthful diet. One reason may be that other preferences compete with our desire to eat healthfully. We explore the effect of consumer preferences on the demand for food away from home, including frequency of eating out and choice of outlet type. Preferences for convenience and ambience are found to influence behavior. Furthermore, omitting these variables from econometric models can bias the estimated effect of preferences for a healthful diet.

EFFECTS OF EBT CUSTOMER SERVICE WAIVERS ON FOOD STAMP RECIPIENTS: EXECUTIVE SUMMARY AgEcon

Most State agencies are now using electronic benefits transfer (EBT) systems to issue food stamp benefits. To promote operational efficiency, some States have received waivers of certain rules governing EBT use. An exploratory study was conducted to ascertain the effects of these waivers on food stamp recipients. The results show that two of the waivers-those allowing recipients to select their own personal identification numbers and to receive EBT training by mail rather than in person-cause new food stamp recipients in waiver States to have more difficulties in using the electronic system than new recipients in nonwaiver States. Empirical models are used to measure sales losses experienced by frankfurter brands following a recall for a foodborne pathogen. Recalled brands experience a 22 to 27 percent sales decline after a recall. Brand recovery occurs within 4 to 5 months after a recall. Non-recalled brands do not experience sales losses.

Rice Consumption in the United States: New Evidence from Food Consumption Surveys AgEcon

Evidence from recent U.S. food consumption surveys provides new information on the distribution of rice consumption, the characteristics of rice consumers, and the diets of people who consume rice. Recently available data from nationally representative surveys of food consumed by individuals in the United States allowed comparison of consumption today (2001-02) with consumption in the mid-1990s. Data come from the Continuing Survey of Food Intakes by Individuals (1994-96) and the National Health and Nutrition Examination Survey (2001-02). Rice is consumed by a significant portion of the U.S. adult population. Cereal Marketing and Household Market Participation in Ethiopia: The Case of Teff, Wheat and Rice AgEcon

Teff, wheat and rice are becoming important market oriented crops in Ethiopia. This study aims at analyzing the market participation of farm households, market actors, market channels and determinants of household market participation for these crops. Results are based on analysis of data collected from community and household surveys in three districts in three regional states of the country in 2005. Analysis of descriptive information and econometric analysis are used. About 65 - 77% of households produce these market oriented commodities, on about 27 – 44% of the total cultivated area. As food is an experience good, the market for restaurant meals is a market where the cost of acquiring information regarding quality is relatively high. In such markets consumers often turn to reputation measures to guide purchase decisions. Hedonic Pricing Evaluation on Agritourism Activity in Italy: Local Culture-based or Facility-based? AgEcon

This paper focused on how and what diversified activities influence the price level of agritourism. A hypothesis that contrasts two directions was examined: facility-based and local culture-based activities. First, from the conceptual consideration, we defined that agritourism based on local cultural resources can internalize positive externalities, which are accompanied by local cultural resources, into income, unlike facility-based activity that has no connection with local cultural resources. Whereas a large number of empirical studies have been devoted to analyzing consumer demand for dietary energy (or dietary quantity), much less attention has been paid to the demand for dietary quality, an equally important aspect of food security. To address this gap in the literature, this paper uses data from a nationally representative household expenditure survey conducted in Bangladesh in 2000 on the food acquisition behavior of 7,440 households over a two week period. Relationship Quality and Innovation Capacity of Chains: The Case of the Traditional Food Sector in the EU AgEcon

The purpose of the paper is to explore how the perceived relationship quality is related to the innovation capacity in chains of the traditional food sector. Based on suggestions from theory and previous studies, empirical evidence is drawn from a survey of 90 traditional food chains including 270 chain partners from three European countries in four traditional food product categories. Heterogeneity across these chains is first examined based on cluster analysis that identifies three distinct clusters interpreted as reflecting three levels of intensity in innovation capacity: high, medium, and low. Trust in Food-Safety Information Sources: Examining Differences in Respondents’ Opinions from a Three-State Survey AgEcon

This paper analyzes data from a telephone survey of 1,000 home-meal preparers from Alabama, North Carolina, and Tennessee. We evaluate the level of trust assigned by survey respondents to twelve sources used in gathering food safety information and provide guidance on effective ways of communicating food-safety information. Data collected were analyzed using the Statistical Package for the Social Sciences (SPSS). Health professionals, nutrition counselors, and food labels were highly trusted sources of food-safety information while the Internet, radio, and television were the least trusted.

Estimating the Market Effect of a Food Scare: The Case of Genetically Modified StarLink Corn AgEcon

Genetic modification of crops has revolutionized food production, but it remains controversial due to food safety and environmental concerns. A recent food safety scare provides a natural experiment on the corn market's willingness to accept unapproved genetically modified organisms. In 2000, a genetically modified corn variety called StarLink was discovered in the food-corn supply, even though it was not approved for human consumption. To estimate the price impact of this event, we develop the relative price of a substitute method, which applies not only to the StarLink event but also to rare events in other markets. Lack of consumer trust in governmental food safety regulators hinders the promotion of consumer confidence in the safety of their food supply. One possible way to boost consumer trust is to allow nongovernmental agencies to participate in monitoring and enforcing food safety regulations. This study identifies factors affecting consumer desire for the participation of nongovernmental agencies. The information obtained from this study can be used in further valuation of the feasibility of the participation of nongovernmental agencies.
