No presente trabalho foram determinados o perfil isoenzimático diferencial de esterase e peroxidase, a proteína total solúvel e os sólidos solúveis (sacarose) em graus brix, de 10 cultivares de cana-de-açúcar (Saccharum spp.) atualmente cultivados no Brasil. Os cultivares estudados foram: NA 56-79, IAC 52-150, IAC 64-257, SP 70-1143, SP 71-3146, SP 71-3149, SP 71-1406, SP 71-6163, SP 71-61-68 e SP 71-799. O trabalho foi desenvolvido com o objetivo de se verificar a influência de Saccharomyces cerevisiae na forma de produto comercial, fermento biológico fresco para panificação, na atividade e no padrão eletroforético da peroxidase em folhas de milho e sorgo. As preparações de Saccharomyces utilizadas foram representadas por suspensões de células e seus respectivos filtrados, autoclavados ou não. A análise dos extratos obtidos dessas gramíneas mostrou que suspensões de células e os filtrados dessas suspensões, tratadas termicamente ou não, foram efetivos em ocasionar alterações na atividade e padrão eletroforético da peroxidase em milho e sorgo. Com o objetivo de conhecer as alterações metabólicas promovidas pelo Soil-borne wheat mosaic virus (SBWMV), um dos vírus economicamente mais importantes da cultura do trigo (Triticum aestivum), foram analisados os níveis de proteínas solúveis e determinadas as atividades da peroxidase e da protease em quatro cultivares (BRS Guabiju, BRS 194, BRS 179, BR 23) e uma linhagem (PF 980524) de trigo com diferentes níveis de resistência ao vírus. O efeito da indução de resistência promovido por acibenzolar-S-methyl foi avaliado em três cultivares de feijoeiro (Phaseolus vulgaris), com diferentes níveis de resistência à murcha-de-Curtobacterium, em dois ensaios distintos, sob condições de casa de vegetação. O primeiro ensaio visou avaliar a ação do acibenzolar-S-methyl na indução de resistência à murcha-de-Curtobacterium e o segundo, objetivou avaliar a ação deste produto na atividade das enzimas peroxidase e polifenoloxidase e no nível de proteínas totais solúveis, em amostras de folhas e caule, sem inoculação do patógeno. Abstract: Colletotrichum is considered one of the fungal genera with the greatest diversity of species of phytopathogenic fungi and with a wide range of hosts including tropical fruits. In this study, the concentration of chitosan applied was a key factor in the in vitro inhibition of the three Colletotrichum isolates with the most sensitive being the one from banana. Germination was the development stage most affected by the application of this polymer. We studied the effects of storage temperature on the activities of phenylalanine ammonia-lyase (PAL), peroxidase (POD) and polyphenol oxidase (PPO) in minimally processed kale (Brassica oleracea var. acephala) that was stored for 15 and 9 days at 5 ± 1ºC and 10 ± 1ºC, respectively. The main visual evidence for quality loss in whole leaves was yellowing and loss of turgescence. Minimally processed leaves presented significant browning, indicating increased POD and PPO activities. The PAL activity in minimally processed leaves stored at 5ºC was fourfold higher than that of whole leaves after two days of storage. O objetivo deste trabalho foi o de comparar o efeito do calor, do SO2 e do ácido ascorbico, visando determinar qual o método mais eficiente para controlar o escurecimento enzímico de cada uma das frutas e hortaliças estudadas. Os resultados mostraram que para a banana, pêssego, maça, cenoura, couve-flor e palmito, o calor foi o melhor agente inativador do sistema enzímico responsável pelo escurecimento. O SO2 foi mais eficiente para a pera, e para o figo e batata, o melhor agente inibidor foi o ácido ascórbico. |

The influence of the allelochemicals ferulic (FA) and vanillic (VA) acids on peroxidase (POD, EC 1.11.1.7) and phenylalanine ammonia-lyase (PAL, EC 4.3.1.5) activities and their relationships with phenolic acid (PhAs) contents and root growth of soybean (Glycine max (L.) Merr.) were examined. Three-day-old seedlings were cultivated in nutrient solution containing FA or VA (0.1 to 1 mM) for 48 h. Cassava bacterial blight (CBB), caused by Xanthomonas axonopodis pv. manihotis, is considered one of the most important bacterial diseases of cassava (Manihot esculenta Crantz). In order to characterize the cassava genes involved in resistance to this disease, a genomic clone of a cationic peroxidase gene, MEPX1, was isolated by PCR from cassava cultivar MCOL 22. The DNA sequence of MEPX1 showed high homology with other plant peroxidase genes and contained a large intron typical of peroxidase genes. The predicted translation product showed a heme-ligand motif, also a characteristic of peroxidases, as well as phosphorylation, myristoylation and glycosylation sites. The purpose of the present study was to evaluate the effect of different potato cultivars and storage temperatures on the specific activity of phenylalanine ammonia-lyase (PAL), polyphenol oxidase (PPO) and peroxidase (POD) in minimally processed potatoes. Potato cultivars Agata, Asterix and Monalisa were selected, washed, peeled, diced, sanitized, centrifuged, vacuum- packed and stored at 5 and 15°C for 9 and 5 days, respectively. ABSTRACT The inactivation of peroxidase and polyphenol oxidase and the degradation of phenolic compounds, anthocyanins, and antioxidant activity in blackberry were investigated during blanching in water at 80-90 °C, and in steam, from 0 to 10 minutes. The enzyme kinetics indicated the presence of two isoenzymes with different thermal stability, following two-phase model, in which the reaction rate constant increased with increasing temperature for both the heat labile and heat resistant component. The flavanone naringenin, an intermediate in flavonoid biosynthesis, was tested for its effect on root growth, phenylalanine ammonia-lyase (PAL) and peroxidase (POD) activities, as well as phenolic compounds and lignin contents in soybean (Glycine max L. Merrill) seedlings. Fourteen strains of Grifola frondosa (Dicks.) S. F. Gray, originating from different regions (Asia, Europe and North America) were tested for lignin degradation, ligninolytic enzyme activities, protein accumulation and exopolysaccharide production during 55 days of cultivation on oak sawdust. Lignin degradation varied from 2.6 to7.1 % of dry weight of the oak sawdust substrate among tested strains. The loss of dry matter in all screened fungi varied between 11.7 and 33.0%, and the amount of crude protein in the dry substrate varied between 0.94 to 2.55%. The shiitake mushroom (Lentinula edodes) has been used in research involving the prevention and the control of human and plant diseases. In cucumber plants, treated with aqueous extracts from mushroom basidiocarps, there was a reduction in anthracnose severity caused by Colletotrichum lagenarium, and an increase in peroxidase activity in the leaves.
