Estimating Willingness to Pay Using a Polychotomous Choice Function: An Application to Pork Products with Environmental Attributes AgEcon

Bid data from a Vickrey auction for pork chops with embedded environmental attributes were analyzed. It was found that approximately 62% of the participants had a positive WTP for the most "environmentally friendly" package of pork. Thirty percent of the participants had no WTP, and 8% had a negative WTP. A polychotomous choice model was used to accommodate data having an anchoring point within the distribution of the data. Standard variables found in the WTP literature coupled with this model were used to predict participants who were premium payers and non-premium payers using an estimated ordered probit equation.

WHOLESALE DEMAND FOR USDA QUALITY GRADED BOXED BEEF AND EFFECTS OF SEASONALITY AgEcon

This study quantifies the differential in demand between different USDA quality grades of beef and the interaction between quality graded beef and other meats. We provide estimates of meat retailer own and cross price demand elasticities for USDA Choice and Select boxed beef. Results indicate that meat retailers have more elastic demand for lower quality graded beef. Seasonal analysis indicates demand for both beef quality grades becomes highly price inelastic during the summer “"cook-out"” months. The two beef quality grades are strong substitutes during the fall and winter. However, Select beef is not a substitute for Choice beef in the spring and summer.

This report examines the restructuring of the livestock sectors in five countries: Russia, Ukraine, Poland, Hungary, and Romania. All five countries experienced a decline in both animal inventories and meat output during the early years of transition away from a centrally planned economy. ERS, in cooperation with Purdue University, developed five general equilibrium models depicting the economies of each nation. A comparison of hypothetical survey rankings with consumer shopping behavior and product knowledge AgEcon

Hypothetical surveys are commonly used to elicit consumer behavior to guide product development, marketing, and labeling strategies. However, despite the prevalence of surveys in consumer food studies, previous work has not assessed the relationship between hypothetical responses and actual consumer behavior in real-world purchase situations.We explore whether attributes cited by consumers in surveys as being important to them when making decisions indeed factor into their product decision process in real-world markets. Evidence from a point of sale study of 702 pork purchasers indicates that there is a strong correspondence between hypothetical survey ratings and actual shopping behavior.

A Sectoral Model for Analyzing Alternative Technologies in Pig Farming AgEcon

This paper develops a demand-augmented positive mathematical programming model to analyze the relationship between environmental pollution from animal manure, manure policies and different pork production systems in the Netherlands. The model features substitution of conventional and alternative pork from the demand side and endogenous manure prices. It is found that policies that put restrictions on environmental pollution from manure decreases the conventional pork production systems, but increases organic pork production systems. The latter is considered an improved system from both an animal welfare and environmental point of view.

Old model, new problem: when should you update a model and what happens when you do? AgEcon

This paper is a summary of some of the considerations involved in applying an existing model to a new problem, in particular in deciding whether to update or not, and some of the issues involved in interpreting the output from the new application. Thus where you start from does influence where you end up. Both change in total surplus and to a lesser extent the distribution of this change in total surplus across sectors, depends on the price and quantity data which is used to define the initial equilibrium, even if elasticity values are the same. This research tests for causality between indexed retail pork revenues and pork advertising. Evidence was found of feedback between revenues and total pork advertising, but not between revenues and generic advertising. The Impact of Foot and Mouth Disease Outbreaks in Taiwan and South Korea on the Red Meat Industries in Canada and the United States AgEcon

In addition to trade liberalization, other factors have contributed to the strong growth of red meat production in Canada since the end of the 1980s. In particular, the outbreaks of foot and mouth disease (FMD) in Taiwan and in South Korea eliminated two competitors in the Japanese market. This reduction in supply caused an increase in the price of hogs in the United States and Canada of 2.5% and 3% respectively during the 1997 to 2007 period. The higher price stimulated Canadian production by an average of 5%, and by 2% in the United States. Annual agricultural farm receipts from the hog market were greater by an average of $CD 276 million (9%) for a grand total of $CD 3 billion over the 11 years. Welfare Implications of Selected Supply and Demand Shocks on Producers and Marketers of U.S. Meats AgEcon

An equilibrium displacement model is developed and used to estimate the welfare impacts of government and industry-funded promotion programs, country of origin labeling (COOL), and the disease-driven, international bans on U.S. beef. The model goes beyond past studies by including the U.S. domestic market and both U.S. meat imports and exports, with meats differentiated by source of origin. The results indicate that while the benefits from beef and pork promotions are higher, the negative impacts of COOL are lower in a model with international trade than in a model without trade. International bans on U.S. beef decrease the welfare of producers and marketers of U.S. beef.

The objectives of this study were to determined the variation of quality and shelf life color of pork carcass as affected by leg shackling. Six Largewhite barrows (130 kg) were slaugtered and one side of hind leg was shackled before exsanguination. The carcasses were splitted to two sides (shackled vs non-shackled) and carcass pH at loin and ham were recorded every 1 h for 4 h postmortem. Pork carcasses were aged for 9 days and loin samples were collected to determine for shear force and shelf life color everyday for 7 days. The result showed that pH at loin (Longissimus dorsi muscle) and Ham (Gluteus medius muscle) were similar between shackled and non-shackled side (P>0.05). Detection of Salmonella sp. from porcine origin: a comparison between a PCR method and standard microbiological techniques BJM

The aim of this study was to compare a polymerase chain reaction (PCR) method combined with selective enrichment in Rappaport-Vassiliadis broth (PCR-RVB) with standard microbiological techniques (SMT) for the generic detection of Salmonella in samples of porcine origin. Two hundred sixty eight field samples consisting of 42 sets of pooled porcine mandibular lymph nodes and tonsils, 44 samples of intestinal content, 38 pork sausage meat samples and 144 samples of feed collected from swine farms were submitted to the PCR-RVB and SMT protocols.
