The following represents a summary of tools applied in a working group (WP5) of the EU‐project SUPURBFOOD (“Towards sustainable modes of urban and peri‐urban food provisioning”, www.supurbfood.eu). Within WP5, three research partners, three SME’s of short food supply chains and one food consultancy from Italy, the Netherlands, Switzerland and the UK commonly explored logistical strategies that aim to make regional food delivery systems more sustainable while remaining economically viable, including addressing issues of scale. The following reports a consultation of organic farming research priorities in the UK in 2001. Value is a key concept for understanding how organic food networks function because values are the foundation of the organic production practice, thus value must be given a significant role in assessing and balancing the effects of organic food networks. At the same time value is a loose concept, widely used and with various meanings in different scientific perspectives, in which ontological difference produces different perceptions of what values are. There has been a long interest in the relation between science and other ways of knowing, and in paradigm shifts in the history of single disciplines. This presentation will discuss the role of different perspectives and ‘ways of knowing’ within science, across different disciplines and schools of thought. It will focus on the problematic aspects of crossdisciplinary research that are non-trivial, in that they are not about power or conflicts of interests, but about deeper differences in our means of observing and learning – about the structure of scientific perspectives. A new phenomenological modelling framework is proposed to correlate the extrudate expansion and extrusion process parameters through dimensional analysis methodology. As dimensional analysis is independent of system or equipment structure, the proposed equation may provide a general expression for the extrudate expansion behaviours and process operation conditions. This work includes extrusion cooking trials, model development and data analysis. |

Detta ramprogram är tänkt att ligga som grund för forskningssatsningar inom området ekologiskt lantbruk under den kommande femårsperioden (2000-2005). Ramprogrammet är utarbetat i dialog mellan forskare, rådgivare, lantbrukare, konsumenter och andra aktörer inom det ekologiska lantbruket. Arbetet har skett i en öppen process inom ramen för Centrum för uthålligt lantbruks (CUL) verksamhet. Ett hundratal personer har varit involverade i arbetet med att göra en omfattande inventering av kunskapsluckor och kunskapsbehov. Økologien har vokseværk, sagde Fødevareministeren i sin tale på Landsforeningens generalforsamling. Sikkert er det at der er grøde i økologien igen, og den øgede efterspørgsel betyder at der er mangel på økologisk kød, mangel på foderkorn og mangel på omlæggere. I den forstand er der altså vokseværk i fødevarekæden. Men der er forskellige synsvinkler på hvad der skal gøres ved det. Nogle mener at der skal gives dispensation til at bruge en vis del konventionelt foderkorn, lige som det (stadig) er praksis i en del andre europæiske lande.
