Abstract Passiflora cincinnata is a species of wild passion fruit whose fruit has potential for use by the food industry. In this context, an anatomical study of the pericarp may help in understanding the changes which occur during the postharvest period. The objective of this work was to anatomically characterize the P. cincinnata pericarp, focusing on the structural changes which occur during refrigerated storage. The selected fruits were kept in net-like packaging at 5°C and evaluated every 15 days for a period of 90 days. Pericarp samples were hand cut on these dates for structural description and to detect starch, phenolic compounds, alkaloids, polysaccharides, proteins, lipids and lignin through histochemical tests. Other samples were analyzed by... |

ABSTRACT Color hue is a variable frequently used postharvest to assess the physiological maturity of various fruits. In general, mean color hue is quantified by visual techniques, but this method, based on human grading, is tedious and may be erroneous. The color of fruit peel is frequently determined at four points randomly distributed on the equatorial region of a fruit, but this practice can lead to biased results because these points represent the equatorial region only and not the total area of the fruit peel. Consequently, this bias is not due to equipment measurement errors, but to the bias in the sampling process of the points on the fruit epidermis. An alternative to such methods is the digital image which provides information about all regions... |

Harvest time is one of the main factors related to guava fruit postharvest losses. It is subjectively determined by fruit size and skin color, without any consensual standardization among the growers. The use of maturity indexes enables growers to know the ideal harvest time according to each market situation. The objective of this work was to determine the maturity indexes to identify the harvest time for guava fruit cv. Kumagai and Paluma. Skin color, fruit firmness, soluble solids, titratable acidity, ratio and ascorbic acid were analyzed. The most adequate maturity indexes for 'Kumagai' guava fruit were skin color and pulp firmness, while for 'Paluma' guava fruit, the best indexes were skin color, pulp firmness, titratable acidity and ratio. |

Resumo A significant portion of papaya production in the state of Minas Gerais originates from irrigated crops, and irrigation management using the partial root zone drying technique (PRD) is a fundamental alternative to reduce water waste. This study aimed to evaluate the quality of ‘Tainung 1’ papaya produced under PRD in semi-arid conditions of northern state of Minas Gerais. PRD treatments were composed of reduction of the calculated irrigation water (CIW) by 50%, applied on one side of the irrigation line, with alternation of 7, 14 and 21 days or without alternation and full irrigation, applying 100 % CIW in both lateral plant rows. Each experimental plot consisted of ten plants, and from six plants, fruits were harvested for evaluations at harvest... |

Abstract Pereskia aculeata Miller is a native cactaceae found from the Northeast to the South of Brazil. This plant is recognized by the high nutritional value of their leaves, which are the most used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of the ora-pro-nobis fruits are scarce. Therefore, the aim of this study was to determine the best harvest point of the ora-pro-nobis fruits to optimize the content of bioactive compounds and their antioxidant capacity. The fruits were manually harvested, defined by their peel colors in three maturity stages: unripe (green), intermediate (yellowish green), and ripe (yellow) stages. The following attributes were evaluated: soluble solids (SS), titratable... |

ABSTRACT The northern semiarid region of Minas Gerais is an important producer of irrigated Prata-Anã banana variety, which is highly susceptible to fusarium wilt. The organic cultivation of resistant varieties may be an phytosanitary alternative, also adding value to fruits. This study aimed to characterize banana varieties produced in organic system based on chemical and physical assessments at post-harvest. Prata-Anã, BRS Platina, Fhia-18, BRS Conquista and BRS Tropical varieties were characterized at the point of harvest (green) and mature (stage six of maturation), by chemical and physical assessments. At the point of harvest, BRS Conquista and BRS Tropical banana varieties had more intense green skin color. ‘BRS Conquista’ presented lower fresh... |

Bananas respond at the physical and physiological level to mechanical damage. Mechanical injuries cause alterations in color and flavor, tissue softening, faster ripening, increased weight loss, increased invasion of microorganisms, and higher enzyme activity in the affected area. The purpose of this study was to verify the physical and metabolic alterations in 'Prata Anã' bananas induced by mechanical stress at room temperature. The experiment was conducted in a completely randomized, split-plot in time design, consisting of one control and four mechanical injury types: cutting, abrasion, impact and compression, sampled over time. The percentage of accumulated and daily fresh weight loss, electrolyte leakage from the injured peel region, total soluble... |

The alcobaça mutation in the Penjar tomato (Solanum lycopersicum L.) variety alters the ripening process and confers a long shelf life (more than four months). Storage of Penjar tomatoes leads to a distinctive sensory profile valued by local consumers, who prefer aged tomatoes to fresh ones. To study chemical changes occurring during storage, we characterized the complete sugar-and-acid profile of 25 accessions at harvest and at 2 and 4 months after harvest. We found considerable variability in the sugar-and-acid profile within the Penjar variety, especially for fructose and glucose. Some accessions presented exceptionally high values for sugars, making them especially interesting for breeding programs. During postharvest, the concentration of glucose,... |

Gray mold of roses (Rosa hibrida) caused by Botrytis cinerea requires many management strategies for its control. The effect of pulsing rose cv. Kiss with solutions of citric acid, salicylic acid, sucrose, calcium sulfate, and silver thiosulfate (STS) on disease severity and vase life of the flowers was evaluated. The solutions were applied to cut stems at different stages of harvest, the variation in the opening stage of harvest did not affect the results. Pulsing with STS reduced the values of area under the disease progress curve (AUDPC) and of severity of disease by 15% and 55%, respectively, and increased the vase life of the flowers by 20%. Calcium sulfate consistently reduced AUDPC by 66% and maximum severity by 88%, and increased vase life of the... |

Bacuri (Platonia insignis, Mart.) is one of the most important among Amazonian fruits. However, little is known about its postharvest physiology, such as maturity stages, changes during ambient storage, and respiratory pattern. Fruits were harvested at three maturity stages based on epicarp colour: dark green, light green, and turning (50% yellow), in order to determine colour modification and respiratory pattern during ambient storage (25.2 ºC, 75.1 % RH). Fruit of all maturity stages showed, after three days of harvest, a non-climacteric respiratory pattern, with turning fruit presenting the highest CO2 production rate until the fourth storage day (177.63 mg.CO2.kg-1.h-1). Yellowing increased throughout storage as related to lightness, chromaticity, and... |

The purpose of this study was to identify the effect of delayed storage on the maintenance of the quality and on the control of pulp browning during cold storage of late peach cultivars. The fruit was harvested at the mature-green stage. All cultivars were exposed to temperatures of 20 ± 0.5ºC and 75 ± 3% of moisture in a cold room for 0.24, or 48 hours. Afterwards, the peaches were kept at 0 ± 0.5ºC and 92 ± 3% of R.H. for 28 days. In the end, the yellow pulp cultivars, regardless of temperature and length of delayed storage, did not present signs of internal browning and were of adequate quality for commercialization. When they were not subjected to delayed storage, the white pulp peaches presented pulp browning after 14 days of cold storage plus two... |

The study was performed to identify the effect of delayed storage on the control of woolliness and leatheriness during cold storage of the late peach cultivars grown in Brazil. The fruits were harvested at the mature-green stage. All of the cultivars were exposed to temperatures of 20 ± 0.5ºC and 75 ± 3% of R.H. in a cold room for 0, 24, or 48 hours. Afterwards, the fruits were kept at 0 ± 0.5ºC and 92 ± 3% of R.H. for 28 days. The yellow pulp peaches, regardless of the length of delayed storage, did not present any symptoms of woolliness or leatheriness. The white pulp peaches not submitted to delayed storage developed either one or more of the other physiological disorders. Due to their lower level of pulp firmness, the control fruits of ‘Chimarrita’ and... |
