Consumption of organic products: Challenge for performance of supply chain. Organic Eprints
Kottila, Marja-Riitta; Rönni, Päivi.
Lengths of organic supply chains have been increased by the emergence of intermediaries between consumers and organic farmers. The involvement of supermarkets forces the organic chain to merge into the conventional food chain. The small segment of organic products and consumers creates a challenge for the performance of the organic chain. The case-studies described here were conducted to learn more about the performance of the chain. For this purpose, actors along the chain (from farmers to consumers) were interviewed. Three dimensions affecting performance were found, as well as three different levels of commitment to organics.

The OrganiST Project - Recommendations for small and medium organic shops to compete better in the organic market Organic Eprints
Maisenbacher, Gregor; Hung, Man-Tzu; Kuhl, Isabell; Lauvie, Pierre; Eichert, Christian.
The paper is based on the OrganiST (Organic Shops in Tübingen) project. Its aim is to develop and discuss marketing strategies for smaller and regionally orientated organic shops in order to stay attractive for their customers. The researched shops are located in Tübingen (South Germany), where we found different categories of small and medium organic shops. The competition on the market for organic food has dramatically increased. In the investigated town, the competition will increase further, because an organic supermarket of a big chain (Alnatura) is going to open soon. Some of the small and medium sized organic shops have come into troubles. They have problems to hold their regular customers and strategies to gain new customers are often lacking....

Wie wächst der Bio-Bereich gesund? Organic Eprints
Schermer, Markus.

Was heißt hier „regional“? Verbrauchererwartungen an Öko-Lebensmittel aus tierischer Erzeugung Organic Eprints
Wägeli, Salome; Hamm, Ulrich.
Organic consumers have a high preference for local origin and it can be assumed that they prefer whole local supply chains. However, it is unknown if consumers include the whole supply chain in their definition of local origin. In the study organic consumers’ perception of local supply chains and feed origin in organic farming was analysed. A qualitative approach was chosen and three focus group discussions with in total 31 organic consumers were conducted in three cities in Germany. The discussions were analysed with the content analysis of Mayring. The results showed that organic consumers consider particularly the origin of the animals and the place of food processing as important in the definition of local origin. Feed origin did not play a role so...

Understanding ‘healthy’ growth processes in organic food businesses and values-based chains Organic Eprints
Münchhausen, von, Susanne; Häring, Anna Maria; Kvam, Gunn-Turid.
Food businesses face specific challenges when they are expanding, and when volumes and turnover start growing significantly. Higher value food chains, such as organic food chains, tend to converge either towards rather narrow market segments and niches or towards conventionalisation and loss in added value. In addition many entrepreneurs in the organic food sector do not possess a formal training in business economics and/or management. However, as businesses grow, increasing management competences are required and this tends to become a constraint. Aiming to better understand different development pathways with their particular challenges, business strategies and management instruments, this paper presents an analysis of 19 case studies in Europe and...

Organic consumption: a form of hybrid communication Organic Eprints
Laursen, Klaus Brønd.
This paper discusses how the consumption of organic food can be understood as a form of hybrid communication. By describing the consumption of organic food as a form of hybridity the paper shows how different codes such as health, aesthetics and morality can be reproduced by re-entering the economic code. This process of hybridizations allows the communication to handle more complexity than had it only been coded economically. But on the other hand the hybridization also creates an increased amount of social complexity. The paper argues that in order to better understand how consumption functions systems theory provides an analytical perspective that is well attuned into the entanglement of the different logics.

Strategies to improve quality and safety and reduce costs along the food supply chain Organic Eprints
Stolze, Matthias; Bahrdt, Katja; Bteich, Marie-Reine; Lampkin, Nicolas; Naspetti, Simona; Nicholas, Phillipa; Zanoli, Raffaele.
The paper aims at contributing to a better understanding of the linkage between supply chain performance and possible performance improvement with respect to food quality and safety. Therefore, the paper addresses the question whether the level of collaborative planning and close supply chain relationships could help improve quality and safety of organic supply chains. The three main weaknesses in the performance of European organic supply chains identified are high logistic and transport costs, the level of input costs and low expenditure on research and product development. While we found a high level of collaboration for information sharing, there is almost no collaboration with respect to joint decisions on optimal order quantity and inventory...

SUPURBFOOD project report of the case study Zurich: Agri-food dynamics and governance of the urban food system Organic Eprints
Schmid, Otto; Jahrl, Ingrid.
Conclusion The analysis of the Zurich city region has shown interesting developments but also several blockages (problems or challenges), opportunities and priorities. There are an impressive number of initiatives and organisations in the city dealing with agriculture, sustainable food provisioning, and closing nutrient cycles. However an overall sustainable food strategy for the City of Zurich is missing. The three themes (i) food provisioning, (ii) multifunctional land use, and (iii) recycling of nutrients and waste are not really linked to each other. A major difficulty is that different departments of the city administration and different elected politicians are responsible for these themes. Nevertheless, the overall goals of the...

Thareau, Bertille; Le Guen, Roger; Lambert, Annie; Schieb-Bienfait, Nathalie.

Strategies to valorise agrobiodiversity Organic Eprints
Oehen, B.; Meier, C.; Holzherr, P.; Förtser, I..
The current food value chain is characterised by a highly standardised offer produced in an increasingly monotonous agricultural system. In parallel, there is a growing interest among consumers for traditional or regional crop varieties. The conservation of these crops is often done by civil society organisations like Arche Noah, Pro Specie Rara, Rete Semi Rurali, Réseau Semence Paysanne or Red Andaluza de Semillas. Some networks sell their food products in local niche markets, specialised stores and supermarkets. To increase their visibility, some producer groups in the networks are interested in developing or improving a label to valorise agrobiodiversity to the consumer. Based on a representative consumer survey in four European countries, we show that...

Promoting rural competitiveness – how can "organic" and "regional" accelerate development in poorer areas? Organic Eprints
Bernet, Thomas; Kazazi, Iris S.; Eisenring, Tobias; Van den Berge, Paul.
As consumers’ interest for quality food grows, new opportunities arise for both organic and regional products. This is especially appealing for rural areas with a strong agricultural tradition. Yet, to be successful, such initiatives require a sound methodological approach to analyse well the context and opportunities together with different stakeholders and develop a marketing strategy that overcomes both market- and supply-oriented constraints.
